Description
The object of the present invention is to create a sweet nutrient made from starch-containing flours. It is based on the knowledge that gelatinized starch of carbohydrases, to which e.g. the diastase of malt belongs, is easily broken down into dextrins and maltose in aqueous suspension at optimal temperatures between 35 and 55 ° and this breakdown comes to a standstill when heated increased above about 70 °, thereby causing the colloidal ice-white carrier of the enzyme to coagulate and thus making the catalytically active group ineffective. In contrast to the gelatinized starch, native starch is only attacked slowly and with difficulty by the enzymes.
Die vorliegende Erfindung betrifft einThe present invention relates to a
Process for the production of a sugar-containing nutrient, which is characterized by the fact that carbohydrase-containing goods such as malt flour and digested starch, e.g. swelling starch or swelling flour, are mixed with water or an aqueous liquid, slowly heated over the range of about 35 - 55 °, that the digested starch is largely split into maltose and dextrins and finally heated to over 70 °, preferably to boiling. According to a particular embodiment of the invention, native starch or natural starch-containing flour is added to the mixture of carbohydrase-containing material and digested starch before the dough is made. You can also add dried fruits, fresh fruits or fruit juices to the mixture before the dough is made or after the heat treatment. You can also use flavorings such as cocoa or protein or fat-containing substances such as milk powder, egg powder, soy flakes or the like. to add.
Instead of carbohydrase-containing goods such as malt flour, you can also use pure diastase or amylase, such as Taka diastase, which liquefies the starch and breaks it down into smaller fragments such as dextrins and finally maltrose.
The digested starch is added in the form of dry swelling starch or swelling flour, as is the case, for example, when digesting potato, rice, corn starch etc. or rye, wheat or other starch-containing flours on hot rollers at around 100 -120 ° is obtained in the form of a fine veil, which is ground and sifted. These digested flours are easily broken down by the diastase at 35 - 55 °. It is therefore necessary to keep the flours at this temperature until the starch molecule has sufficiently broken down into dextrins or maltose is. This requires heating times of at least 15 minutes, depending on the amount used. The dough can be in water or a water-containing liquid such as milk, fruit juice or the like. happen.
Bei der Zubereitung der Speise spielen sich dann folgende Vorgänge ab:In order to achieve a thickening of the nutrient in addition to saccharification and dextrination when making dough with cold water and to make it more palatable, a native starch or a natural unchanged flour, semolina or grist can be added. When the food is prepared, the following processes take place:
The flour-like nutrient consisting of malt flour, spring flour and natural flour, which contains only a few soluble carbohydrates, is mixed with cold water and slowly heated to a boil. First, the starch of the swelling flour is dextrinated or saccharified by the diastase of the malt flour, then the protein is coagulated between 70 and 80 °, thus rendering the diastase ineffective. In this temperature range between 60 and 90 ° (83 ° for wheat starch) the added native starch or flour is also gelatinized. With this beginning gelatinization and the simultaneous ineffectiveness of the diastasis, this strength is also attacked to a very slight extent. However, as the temperature increase progresses, this attack ceases and the added native starch produces a normal paste, which can be detected as unaffected starch by blue iodine reaction even after cooking. This gelatinization thickens the product.
Auch können der fertig bereitetenFlavorings, fat or protein-containing substances such as dried fruit, dried fruit powder, milk powder, whole egg powder can be added to the nutrient from the outset or after the heat treatment. You can also use the ready-made
Boiled fruit, cold or warm milk or eggs can be added to food with no added sugar.
Beispiel 1:Example 1:
Die Speise ist nicht nur ohne jeden Zuckerzusatz ausreichend süss, sondern enthält in einem Teller auch etwa die vierfache Menge Nährstoffe, die sonst in einem Teller Grütze enthalten sind (gewöhnlich rechnet man zur Bereitung eines Breies 40 Teile Mehl auf 500 Teile Wasser).15 parts by weight of rye malt flour, 15 parts by weight of digested rye flour, 45 parts by weight of rye meal and 0.2 parts by weight of salt are mixed in 250 parts by weight of cold water and slowly heated to boiling, the time from preparation to reaching 55 ° should be about 30 minutes. The result is a creamy, sweet-tasting rye groats of good taste and great digestibility. The food is not only sufficiently sweet without any added sugar, but also contains about four times the amount of nutrients in a plate that are otherwise contained in a plate of grits (usually 40 parts flour per 500 parts water are used to prepare a porridge).
Cold milk, for example, can be added to the sweet rye groats produced. As already mentioned, you can also mix in fruit. Even with the addition of sour fruits such as unsweetened rhubarb compote, applesauce, sour lilacberry juice, etc., a pleasant, surprisingly sweet taste is achieved.
Beispiel 2:Example 2:
Es ergibt sich eine sämige, stark süsse Suppe von vorzüglichem Geschmack, die allein genossen werden kann, der man aber auch Milch oder Obst zufügen kann.20 parts by weight of wheat malt flour, 15 parts by weight of pregelatinized wheat flour, 45 parts by weight of wheat flour and 0.2 parts by weight of salt are mixed with 250 parts by weight of water and slowly brought to the boil as in embodiment 1. The result is a creamy, very sweet soup with an excellent taste that can be enjoyed alone, but milk or fruit can also be added.
Beispiel 3:Example 3:
Es ergibt sich eine wohlschmeckende süsse Speise, die wegen ihres hohen Fett- und Eiweissgehaltes neben den vorhandenen löslichen Kohlenhydraten und dem geringen Gehalt an Rohfaser besonders als Kindernährmittel geeignet ist.50 parts by weight of pregelatinized rice starch flour, 0.5 parts by weight of taka diastase, 20 parts by weight of whole soy flakes and 10 parts by weight of whole milk powders are mixed in 250 parts by weight of cold water and treated as already described. The result is a tasty, sweet dish which, because of its high fat and protein content, is particularly suitable as a food for children, in addition to the soluble carbohydrates present and the low content of crude fiber.
The mixture according to the present invention can also be broken down in the manner described and the liquid or pulp can be dried and comminuted in a known manner. The natural flour or the native starch can be added before or after this treatment. In this way, a powder is obtained which, without special precautionary measures, can easily be prepared in the usual way by simply boiling with water and which then immediately results in the sweet dish.
The product is ideally suited for overcoming the sugar shortage by making use of the plentiful supply of cereal flours, from which the sugars are formed due to the composition and the special manufacturing process. The product is a handy, durable, easy to dose and easily processable dry powder that does not change its composition and can easily be converted into the sweet product. It is also of particular value that the product contains easily digestible sugars and dextrins in relatively high concentrations, so that it is an excellent and high-quality nutrient at the same time.
