Unter Umgehung der Wärme als Austrocknungsmittel (folglich unter Vermeidung der Coagulation) erhält man auf diesem Wege eine feste, trockene Masse, welche im Gegensatz zum flüssigen Brei für die Ansiedelung und Entwicklung von Mikroorganismen ungeeignet ist. Zum Zwecke leichterer Handhabung und Löslichkeit wird die trockene Masse pulverisirt.
