Verfahren zur Gewinnung von Zucker Die Gewinnung von Zucker aus Zuckerrüben
und Zuckerrohr wird heute in der Weise vorgenommen, daß man die zuckerhaltigen Güter
zerkleinert oder zerquetscht und sodann mit heißem Wasser auslaugt, aus dem darauf
der Zucker durch Eindicken nach einem gewissen Reinigungsprozeß zum Auskristallisieren
gebracht wird. Dieses Verfahren ist trotz aller N"erfeitterungen, die es im Laufe
der Jahrzehnte erhalten 'hat, immer noch ziemlich umständlich und wärmeaufwendig.
Versuche, zu einer einfachen Zuckergewinnung zu kommen, führten bis jetzt zu keinem

Extraktes pendelt dabei ständig zwischen einer Temperatur, die dem Siedepunkt des
Alkohols nahe liegt, und Temperaturen, die möglichst tief liegen, zweckmäßigerweise
aber nicht unter o° C oder wesentlich unter o° C gehen. je nach der eingehaltenen
Temperatur ist die Extraktion nach 6- lies 8maligem Umlauf beendet. Praktisch wird
man nicht restlos extrahieren, sondern so viel in tlen Schnitzeln lassen, daß diese
im Gehalt etwa den Steffenschnitzeln entsprechen, d. h. ein Restgut mit etwa 15"/o

der Basis der zu verdampfenden Wassermenge durchführt. Bei dem Extraktionsverfahren
mit Alkohol müssen die Rübenschnitzel zunächst getrocknet werden. Der sich anschließende
Extraktionsprozeß mit Alkohol ist wegen der niedrigen spezifischen Wärme des Alkohols
(o,6) wärmetechnisch günstig. Bei sechsmaligem Umlauf werden für die Gewinnung von
i kg Zucker (Aufheizen zum Lösen und Auskühlen zum Kristallisieren) rund i ioo Kalorien
benötigt. Zusammen mit der Gewinnung der Trocken-
Schnitzel (Aufwand auf kg Zucker berechnet) ergibt
sich ein Gesamtbedarf von ruild 53oo Kalorien.
Nach dem alten Verfahren wcrdeti also rund
9ooo Kalorien, nach deni neuen rund 53oo Kalorien
für je i kg Zucker Ilenötigt unter \l itgewinnung
der Schnitzel.

Das geschilderte Verfahren ist sell>stN-erständ-
lich nicht auf Zuckerrüben beschr;inkt. 1?s kann mit
dem gleichen Erfolg für Zuckerrohr und Trocken-
früchte abgewendet werden.
