Lösungen gärende und nichtgärende Hefe gewinnen kann. Auch nicht vergärbarer Zucker,
z.13. pentosehaltige Lösungen aus Aufschlüssen von Buchenholz und Stroh können zur
Gewinnung von Hefen dienen. Selbst Lösungen, die andere organische Stoffe, z. B.

zu verwerten. So wird z. B. die Verwendung von Pilzen der Fusariumgruppe zur Fettgewinnung
beschrieben. Auch bei dem sogenannten Biosynverfahren werden Fadenpilze (Fusarium)
zur Ausnutzung kohlenstoffhaltiger Abwässer verwendet.More recently it has been found that not only yeast, but also

Es wurde nun gefunden, daß es eine Gruppe von Mikroorganismen gibt,
die ganz besonders geeignet sind, kohlenstoffhaltige Lösungen technisch zu verwerten
und die bisher noch niemals praktisch verwendet wurden. Es sind dies zur Gruppe
Dematium gehörende Pilze. Dematiumpilze sind in der Natur außerordentlich verbreitet,
in vielen technischen Betrieben verursachen sie durch unerwünschtes Wachstum Störungen
und Schwierigkeiten. Daß eine technische Verwertung dieser Pilze möglich ist, war
nach den Angaben der Literatur nicht zu erwarten, da die überall beschriebene Verschleimung
der Kulturmedien eine technische Verarbeitung ausschließt (vgl. z. B. Dr. F. G.
K o h 1 , Die
Hefepilze, Leipzig 1908, S. 3i3). Es hat sich
nun gezeigt, daß im Gegensatz zu dieser Annahme die Dematiumpilze in vieler Beziehung
den bisher verwendeten Pilzen überlegen sind, vorausgesetzt, daß man nur die Konidien,
nicht dagegen die Pilzfäden kultiviert. Erreicht wird dies dadurch, daß man bei
der Kultur sehr stark belüftet und eine Temperatur von 25° einhält. Während bei
den bisherigen Pilzverfahren die Konidienbildung unterdrückt werden muß, sind bei
Dematium nur die Konidien brauchbar. Diese haben eine sehr große Vermehrungsgeschwindigkeit.
Während eine Hefezelle normalerweise nur eine Sprossung zeigt, entstehen bei den
Dematiumkonidien an einer Zelle mindestens zwei, oft vier oder acht zu gleicher
Zeit, sogar mehr als zehn Sprossungen werden beobachtet. Ein weiterer wesentlicher
Vorteil vor den bisher bekannten Pilzverfahren ist die Tatsache, daß die Auf schwemmungsdichte
in den Nährmedien bedeutend größer sein kann als bei der Kultur von Hefen. Als dritter
großer Vorteil vor den bisher bekannten Hefe- und Pilzverfahren ist die Tatsache
zu bewerten, daß die Membran der Dematiumkonidien wesentlicW dünner ist als die
von Pilzen und Hefe, wodurch die Ausbeute der Inhaltsstoffe erhöht und die technische
Verarbeitung erleichtert wird.It has now been found that there is a group of microorganisms which are particularly suitable for technically utilizing carbon-containing solutions and which have never been used in practice up to now. It has now been shown that, contrary to this assumption, the dematium mushrooms are in many respects superior to the mushrooms used up to now, provided that only the conidia are cultivated and not the fungal threads. This is achieved by ventilating the culture very strongly and maintaining a temperature of 25 °. While the conidia formation has to be suppressed with the previous fungus methods, only the conidia can be used with Dematium. These have a very high speed of reproduction. While a yeast cell normally only shows one sprout, in the dematium conidia at least two, often four or eight sprouts develop at the same time, and even more than ten sprouts are observed. Another major advantage over the previously known fungus method is the fact that the density of floating in the nutrient media can be significantly greater than in the culture of yeasts. The third major advantage over the previously known yeast and fungus processes is the fact that the membrane of dematium conidia is significantly thinner than that of fungi and yeast, which increases the yield of the ingredients and facilitates technical processing.
Die nach der neuen Methode gewonnenen Konidienmassen werden in gleicher
Weise separiert, gewaschen und gepreßt wie Backhefe. Das erhaltene Produkt hat etwa
die Konsistenz von Backhefe und ist je nach der Kultur und angewandten Pilzart von
weißer oder rötlicher Farbe. Während z. B. die nach den bisher beschriebenen Pilzverfahren
gewonnenen Eiweißstoffe wegen der dicken Pilzmembran und der ungünstigen Permeabilitätsverhältnisse
sich nur schlecht zur Extraktgewinnung verwenden lassen, geben die Dematiumkonidien
einen hervorragenden Extrakt, der sehr aromatisch nach Champignons schmeckt und
eine höhere Ausbeute ergibt als auf gleiche Weise hergestellter Extrakt aus gärenden
oder nichtgärenden Hefen. Auch zur Fettgewinnung sind die Dematiumkonidien geeignet.
Beispiel iooo 1 Melasselösung von 1o° Balling werden mit- einer Reinkultur von Dematium
pullulans beimpft und mit den notwendigen Nährsalzen (P. N.) versehen. Nach 24stündiger
Gärdauer bei einer Temperatur von 25° und starker Belüftung werden die gebildeten
Konidien durch Separieren gewonnen. Die Ausbeute beträgt mindestens 12o °/o der
angewendeten Melasse. Die gewonnene Konidienmasse kann wie üblich nach dem Autolyseverfahren
auf Extrakt verarbeitet werden und ergibt einen sehr wohlschmeckenden vitaminhaltigen
Extrakt, der geschmacklich einen in gleicher Weise hergestellten Hefeextrakt weit
