Mittelst des nachfolgend beschriebenen Apparates wird eine gleichmäfsige, intensive und
dabei schnelle Kühlung von Maische und anderen Flüssigkeiten dadurch bewirkt, dafs
dieselben in durch Schleuderwirkung fein zertheilter Form mit gekühlten Flächen in Berührung
treten, und zwar im Gegenstrom zu dem Kühlmittel, so dafs alle Theilchen der Maische einer Kühlung unterworfen werden.
Der zur Ausführung des Verfahrens dienende Kühlapparat besteht aus mehreren mit einander
in Verbindung stehenden Räumen r1 bis r6, welche innen mit Kupferwänden k bekleidet
sind, um Zwischenräume w für das Kühlmittel zu schaffen. An der durch die Mitte aller
Kühlräume führenden Welle α sind unterhalb der die einzelnen Kühlräume verbindenden
Stutzen b die Schalen c1 bis ce befestigt, welche
an der Rotation der Welle theilnehmen. Die Zuführung der Maische erfolgt mittelst Rohres d
in die oberste der Schalen c1, der Abflufs der
gekühlten Maische erfolgt unten durch Stutzen e aus dem letzten Kühlraum r6. Das Kühlmittel
tritt unten bei f ein und verläfst den Apparat oben bei g. Zum gleichzeitigen Vermischen
der Maische während des Abkühlens mit Hefe, ohne letztere einer ihr schädlichen höheren
Temperatur auszusetzen, wird an einer Stelle, wo die Maische schon zum gröfsten Theil
abgekühlt ist, in der Zeichnung im Raum r5, ein Zuflufsrohr h angeordnet, welches die Hefe
direct in die ausgeschleuderte Maische führt, so dafs eine innige Vermengung beider erfolgt

For simultaneous mixing of the mash with yeast during cooling, without exposing the latter to a higher temperature, which is harmful to it, an inlet pipe h is arranged in the drawing in space r 5 at a point where the mash has already largely cooled down, which the Brings yeast directly into the centrifuged mash, so that the two are intimately mixed and the cooling process is not impaired.
Der continuirliche Betrieb mit diesem Apparat ist folgender: Nachdem der Kühlmittelzuflufs
eingestellt ist, wird die Welle a in Umdrehung versetzt und die Maische in ununterbrochenem
Strome durch Rohr d zugeführt. Letztere gelangt in die oberste Schale c1 und wird aus dieser
vermöge der Centrifugalwirkung gegen die gekühlten Wandungen geschleudert, so dafs alle
ihre Theile eine Abkühlung erleiden. Beim Herabfliefsen auf dem geneigten Boden findet eine
weitere Abkühlung statt und die Maische tritt dann durch Stutzen b in die zweite Schale c'2.
Aus dieser findet wiederum die Ausschleuderung in gleicher Weise statt u. s. w., bis die gekühlte
Maische bei e zum Austritt gelangt. Die bei h zugeleitete Hefe mischt sich im Raum r5 mit
der schon zum gröfsten Theil abgekühlten Maische und wird mit dieser zusammen von
der Schale c° ausgeschleudert, so dafs sie eine innige Mischung mit derselben eingehen kann
und eine Vermengung von Maische und Hefe in besonderen Gefäfsen nicht mehr nöthig ist.
Da das Kühlmittel im Gegenstrom zur Maische circulirt und da vermöge der Ausschleuderung
alle Theile der Maische mit den Kühlflächen in Berührung gebracht werden, so ist die Kühlung eine intensive und schnell
