unter Druck Beim Sterilisieren von gefüllten Konservendosen o. dgl. ,geschlossenen
Behältern unter Druck entsteht in den Dosen, sobald ihr Inneres :die Sterilisationstemperatur
:erreicht hat, ein Druck, der ,größer ist ,als der Druck im Kochraum. Dieser größere
Druck im Doseninnern kann dünnwandige Dosen deformieren. Um dies zu verhindern,
ist schon bekannt, :den Druck im Kochraum entsprechend dem Innendruck der Dosen
unabhängig von :der Kochtemperatur dadurch zu erhöhen, .daß Preßluft von entsprechendem
Druck während der Kochung in den Kochraum eingeführt wird. Die hierbei notwendige
Preß.-luftanlage wird gemäß. dem Verfahren nach vorliegender Erfindung dadurch entbehrlich
gemacht, daß als druckerhöhendes Mittel das im Anschluß an nie Kochung in den Kochraum
sowieso einzuführende Kühlwasser mit einem dem gewünschten Druck im Kochraum entsprechenden
Überdruck schon während der Sterilisation durch öffnen der Kühlwasserzuleitung zum
Kochraum zur Einwirkung auf das Kochmittel gebracht wird. Außerdem kann in weiterer
Ausbildung des Verfahrens der Druck des Kühlwassers so geregelt werden, daß er bei
der Kühlung vom Anfang bis zum Ende der Kühlung jederzeit etwa dein. durch Erfahrung
leicht zu ermittelnden, während des Kühlvorganges im Innern der Konservengefäße
herrschenden Druck entspricht.

das durch öffnen des Ventils 17 der Leitung 18 entströmt. Soll nun während
der Kochung der Druck im Kochraum über das durch die Temperatur bedingte Maß hinaus
erhöht werden, so wird einfach das Ventil 17 der Leitung i s geöffnet, so daß das
unter höherem Druck als dem Kochdruck stehende Kühltvasser seinen überdruck zur
Wirkung auf den Kochgefäßinhalt bringen kann. Nach beendetem Kochen wird dann das
Ventil 13 bzw. ein Dreiwegehahn 19 geöffnet, so daß nunmehr der Überdruck des Kühlwassers
