Ferner kommt die gute physiologische Wirkung der dem Kakao zugesetzten Phosphate im Enderzeugnis in Betracht. Es ist bekannt, daß durch die bisher verwendeten alkalischen Chemikalien beim Aufschluß von Kakao zwei Einflüsse erzielt werden. Einmal werden die Eiweißstoffe des Kakaos teilweise abgebaut, und andererseits wird der Kakao leichter verdaulich und bekömmlicher. Nach beiden Richtungen bin können beim Verfahren nach der Erfindung Fortschritte festgestellt werden; die Löslichkeit der Eiweißstoffe bzw. ihrer Abbauprodukte in den erfindungsgemäß erhaltenen Erzeugnissen nimmt zu, und das schwer verdauliche Kakaofett wird teilweise verseift. Auch auf die Kakaostärkekörner wirkt die Behandlung günstig ein, indem die nuellung größer wird. Bei dem späteren Gebrauch des Kakaos tritt die weitergetriebene Verquellung praktisch in Erscheinung, indem sich ein größerer Teil Stärkekörner in lösliche Form verwandelt Lind dem Getränk die beliebte sahnige Form verleiht.
