Das in nachstehendem beschriebene Verfahren hat den Zweck, die gegenwärtig nothwendige lange Lagerungszeit von Weinen, Spirituosen u. dergl. zu vermeiden. Es beruht auf der neuen Thatsache, dafs durch den elektrischen Strom unter gewissen Bedingungen eine grofse Anzahl pflanzlicher, in Wein, Spirituosen und anderen alkoholhaltigen Flüssigkeiten enthaltenen Lebewesen getödtet werden, während zugleich eine durch das Erscheinen von Bouquet angezeigte chemische Veränderung eintritt, indem ein Theil der freien Säure sich mit dem Alkohol zu Estern vereinigt.The purpose of the procedure described below is that which is currently necessary Avoid long storage periods for wines, spirits and the like.
