Description
Verfahren zum Vitaminisieren von. Nahrungsmitteln und ähnlichen Stoffen durch Ultraviolettbestrahlung Man hat bereits festgestellt, daß bei der Bestrahlung von Nahrungsmitteln, Heilstoffen u. dgl. mit ultxaviolettem Licht zum Zwecke der Vitaminisierung oder Herbeiführung sonstiger chemischer Reaktionen die gleichzeitig stattfindende Ozonbildung vielfach schädlich wirkt. Daher hat man schon vorgeschlagen, bei der Ultraviolettbestrahlung von Nahrungsmitteln u. dgl. die Luft aus dem Behandlungsraum entweder zu entfernen oder durch ein neutrales Gas, wie Kohlensäure, zu ersetzen. Abgesehen davon, daß hierdurch eine wesentliche Komplizierung der Apparatur und ;des Arbeitsverfahrens bedingt wird, ist die Füllung des Behandlungsraums mit Kohlensäure oder anderen Gasen .deswegen bedenklich, weil dadurch unter Umständen eine anderweitige Veränderung der zu behandelnden Nahrungsmittel o. dgl. bewirkt werden kann. So ist gegen die Bestrahlung von Milch in einer Kohlensäureatmosphäre das Bedenken geäußert worden (Zeitschrift für angewandte Chemie 1928, S. 785, linke Spalte, Abs. ¢), daß die bei Anwendung dieses Verfahrens in der Milch zurückbleibende Kohlensäure zu Blähungen im Säuglingsdarm Veranlassung geben könnte. Die Anwendung von Stickstoff zur Füllung des Behandlungsraums kommt aber deswegen nicht in Frage, weil es praktisch nicht möglich ist, den Stickstoff so sauerstofffrei zu erhalten, daß dadurch eine Ozonbildung mit Sicherheit vermieden werden könnte. Bei bloßer Evakuierung des Behandlungsraums gelingt es im allgemeinen ebenfalls nicht, den Sauerstoff in genügender Weise auszuschließen, und andererseits würde, selbst wenn das ohne Anwendung besonderer Vorsichtsmaßregeln möglich wäre, die Giefahr vorhanden sein, daßdurch die Evakuierung aus den behandelten Nahrungsmitteln o. dgl. wichtige flüchtige Bestandteile enti fernt werden.Method of vitaminizing.
