Verfahren zur möglichst vollständigen Entbitterung von Lupinen mittels warmen Wassers und einer. Kochsalzlösung. Zur Entbitterung von Lupinen wurden bisher die verschiedensten Lösungsmittel wie Wasser, wäßrige Alkalikarbonatlösung, verdünnte Natronlauge, Ammoniak, Chlorkalium-und Chlornatriumlösungen, verdünnte Säuren und schließlich auch organische Lösungsmittel angewendet. In allen diesen Lösungsmitteln ist der Bitterstoff löslich. Es ist aber schwierig und bedarf langer und wiederholter Extraktionen, bis die unzerkleinerte Lupine völlig bitterstofffrei ist. Manches jener Lösungsmittel, besonders die alkalischen und auch die sauren, verändern die Lupinen im Geschmack und Aussehen nachteilig, da die Eiweißstoffe dadurch denaturiert werden.Process for the most complete debittering of lupins by means of warm water and one. Hierbei tritt jedoch eine ausreichende Entbitterung durch Osmose nicht ein; wie sie nach dem vorliegenden Verfahren bei wiederholtem, wechselndem Behandeln mit Wasser und mindestens zweiprozentiger Kochsalzlösung ausreichend vor sich geht. Zudem bringt das Kochen eine Koagulierung und somit Denaturierung des Eiweißes mit sich, was bei denn neuen Verfahren, das bei 55 bis 6o° C arbeitet, vermieden wird, wodurch die Lupine auch für menschlische. Nahrungs- und Genußmittelzwecke geeignet wird. Bei dem erwähnten, in Potts Handbuch beschriebenen Verfahren wird der Bitterstoff der Hauptsache nach durch sehr viel heißes Wasser, das lange Zeit einwirkt, ausgelaugt und durch Kochen eine völlige Koagulation vorgenommen, um Verluste zu vermeiden. Nach dem neuen Verfahren gelingt die Extraktion schneller und gründlicher durch den starken osmotischen Strom, der in der Frucht erzeugt wird.
