Description
KAISERLICHESIMPERIAL
PATENTAMT.PATENT OFFICE.
.It is already known that pyruvic acid salts can serve as catalysts for alcoholic fermentation. . The same phenomenon is caused by the salts of all physiologically important keto acids. The pyruvic acid homologous keto acids and the α-ketodicarboxylic acids, such as 5 z. B. the a-ketobutyric acid, a-ketocaproic acid, oxypyruvic acid, oxaloacetic acid, a-ketoglutaric acid, phenylglyoxalic acid, phenylpyruvic acid and oxyphenylpyruvic acid, activate at least as strongly as the pyruvic acid itself. .
It has now been found that by alcoholic extracts from germ (embryo) parts of plant seeds as well as all resulting from the processing of seeds and fruits germ (embryo) containing products, e.g. B. germ bran, an enhancing effect on fermentation, especially of carbohydrates by yeast, can be exercised to a far greater extent than by those listed above organic acids. Alcoholic extracts have the same effect low mushrooms, especially yeast, and from ' . embryonic animal organs, such as yolks from bird eggs, too. Under the influence of such extracts, the development of carbonic acid reaches at. of alcoholic fermentation by yeast many times that of normal in the same time. The effect seems to come from a nitrogen-containing body, and all of these extracts are likely to be closely related, if not identical, act effective substances.
Die ersteren werden als Enzymbildner bezeichnet, indem Preßsäfte aus Hefen, die mit den genannten Stoffen behandelt waren, sich als gärkräftiger erwiesen, während dieselben Stoffe ohne jedeAlthough it is 906 already known from British Patent Specification 28695 from the year ■ i, to produce an extract of cereal germ with water at 130 to 140 0 C (under 3 atm.) And add the evaporated extract to the mash. This preparation should be a nutrient or irritant for the yeast and accelerate fermentation and yeast effects; however, the substances that are active in the present process do not come into consideration because they are destroyed in such a treatment. / On page 485 of Mä, rcke r-Del. In this reference, oatmeal and yeast extract are contrasted with lecithin. The former are referred to as enzyme formers, in that pressed juices from yeast, which were treated with the substances mentioned, turned out to be more fermentative, while the same substances without any
They remain effective if they are added to the pressed juices. Phosphates and lecithin on the other hand; express an effect as additives the Pfgsafts, so that a · preserving Influence 'on the zymase present in the press juice; it is assumed that one thereby increases tries to explain this by the present / of phosphorus compounds can be protected from. From this • The comparison clearly shows that the yeast extract used for the experiments ; it was not an alcoholic extract, as it would have contained considerable amounts of lecithin and therefore, as an addition to the pressed juices, the preservative observed with lecithin Effect should also have expressed.
The knowledge on which the present method is based is that by the extraction of germinal parts of the plant seeds, low fungi, preferably yeast, and embryonic animal organs with alcohol to separate the effective Components of the proteins and carbohydrates in the simplest way, highly active extracts can be made. The active substances in these extracts are not Lecithin, since the influence on fermentation is not eliminated by removing all lipoids, yes is not even weakened. They are soluble in alcohol and water at the same time, what was previously unknown. Extraction with water becomes just one weak, ineffective solution obtained because the lipoid cell membranes are passing through prevent the active substances in the extract.
The new process is of particular importance when applied to dry yeast to, because by extracting the same with cold or warm alcohol on the one hand the highly effective extract and on the other hand an extraction residue is obtained, which can be used excellently as a nutrient and animal feed is.
