Wegen der geringen Haltbarkeit der Hefe ist es geboten, sie zu konservieren und ihre Gärkraft zu vernichten; dies kann auf die verschiedenste Weise geschehen, z. B. durch Erhitzen auf hohe Temperaturen oder durch Zusätze konservierender und antiseptisch wirkender Stoffe. Der frischen oder konservierten Hefe läßt sich.durch Vermischen mit geeigneten Flüssigkeiten, wie Wasser, Dextrin oder Stärkelösung, die jeweilig gewünschte Konsistenz geben, so daß sie ohne weiteres als Klebe- und Anstrichmittel tauglich ist.
