Das Verhältnis sollte dabei so gewählt werden, daii die benötigten Geliermitteleinheiten unu die benötigte Säuremeiige in mindestens der gleichen Gewichtsmenge Zucker enthalten sind. Das so instantisierte Zucker-Pektin-Wein-und, oder Zitronensäure-Ascorbinsäure-Gemisch ist gut lagerfällig, und eine Mischung des so hergestellten Gemisches mit reinem Kristallzucker entsprechender^ Korngrößenverteilung iä; nur schwer wieder entmischbar, ohne daß dem Produkt V.'asser zugesetzt werden muß.
