Die vorliegende Erfindung betrifft ein Verfahren zur Entfernung der Samenhäutchen von nativen oder entfetteten Sojabohnen durch enzymatischen Abbau ohne Veränderung der Bohnensubstanz. Da jedoch die Samenhäutchen bei der neuen Arbeitsweise ohne mechanisches Reiben praktisch vollständig entfernt werden können und zur Erzielung eines entsprechenden Effektes bei der mechanischen Methode auch noch eine Stufe angeschlossen werden müßte, in welcher die Bohnen mit Hilfe einer Enzymlösung behandelt werden, bedeutet die Erfindung wegen der einstufigen Behandlungsweise doch einen wesentlichen technischen Fortschritt.
