Description
Method of making a jelly-forming mixture The invention refers to the production of pectin-containing, jelly-forming mixtures with improved Properties.
As is known in the art, pectin can be obtained from apple pomace, for example or citrus peel are produced by a process in which, if appropriate unwanted, soluble components are first removed by leaching with water. The moist material leached out in this way is then acidified at a higher temperature treated, the duration and pH of the treatment depending on each other. While This acid treatment makes the pectin soluble and finally the dated neutral fiber material separated, aqueous extract by precipitation in a drier Form won.
The pectin obtained in this way can easily be used to make jellies by combining it with all kinds of fruits and fruit juices. In particular the pectin can usually be in the form of a mixture of about standard weight be sold, which in addition to 1 to 4 g of pectin is a considerable addition to one Dispersant or filler, usually a carbohydrate, such as. B. glucose or Dextrose, in an amount of e.g. 5 to 80 g of carbohydrate per 1 to 4 g Contains pectin. Obviously, the pectin content in the product depends on the pectin quality, z. B. its gelling ability. This mixture also usually contains still enough acid to produce a jelly product of the desired pH and desired Sharpness can be obtained. Usually citric acid is used in an amount of about 5 to 12 g applied to 1 to 4 g of pectin and then gives a pH value of about 2.6 to 3.6 in the jelly.
You can now make jellies by adding this mixture Adding fruits or fruit juices. You can also have them with a fruit flavor instead and color combine, thereby making a jelly by combining with water alone. Such a jelly is usually called an artificial one or water jelly. Of course, those must be made with water or fruit juices Jellies can be mixed with sugar.
Characteristically, however, are the jelly-forming mixtures that are used in In contrast to those that are added to fruits or fruit juices through Adding to water alone can be converted into jellies, owing to its absence comparatively unbuffered by fruit buffer salts. The best sharpness and therefore the best Palatability is usually achieved by adding acids, usually citric acid, tartaric acid or fumaric acid. The pH values of such products lie deep and may go down to around 2.0.
Such a mixture may be useful in terms of sharpness, however, the low pH does not allow the full gelling effect to be used of pectin. So, in other words, you have to get the same jelly firmness a jelly with a pH value of 2.0 has significantly more pectin than a jelly Apply with a pH of 3.0.
In addition, fruits and fruit juices contain depending on the type, variety or Ripe different amounts of fruit acids and buffer salts that adjust the pH value in the finished product Affect jelly, whereby in many cases the resulting pH value does not make maximum use of it of pectin.
One has therefore with unbuffered jellies that instead of fruit juices can be prepared with water alone, attempts to eliminate this error by that one added pH-increasing buffer salts.
For example, citric acid has a pH of 2.1 results, tried the addition of sodium citrate, sodium phosphate, etc., but had to determine that the amount of buffer salt in the acid Buffer combination must be at least 15%, so that the necessary for maximum utilization of the pectin pH is achieved. Under these conditions, however, the salt concentration is like that high that it has a deleterious effect on the jelly product and its taste. In particular, the high buffer salt concentration has an undesirable softening effect on the finished jelly, changes the taste character of the acid and does that Product unsuitable for low-sodium diets.
Attempts have also been made to use other acids that increase the pH raise significantly. For example, adipic acid has been used; the to achieve However, the amount of adipic acid required for the best acid taste gives a pH value of 3.2. Such a pH value can be useful under certain special conditions if, for example, the pectin used has a high methoxyl content, z. B. 73 DM, or if the pectin is fresh enough or the solid jelly ingredients make up more than 63 percent by weight.
However, when the mix deviates from these ideal conditions, when For example, the pectin used has a DM below 73 or the Pectin DM changes during storage or the mixture used is less than 63% Has solid constituents, then one does not achieve the most effective utilization of the Pectins.
The expression DM used above for the methoxyl content of the pectin is explained in more detail at the end of the description.
A buffer addition of z. B. sodium citrate to adipic acid would contribute optimal sharpness can achieve an unusually high pH value of 3.8, the is outside the practical range of jelly production.
As a result, the production of a pectin mixture has not yet been successful. this with the addition of water and sugar and, in many cases, of fruits or fruit juices a jelly with a reasonable acidic taste and the desired pH value with the most effective Pectin utilization resulted.
Also the suggestion according to US Pat. No. 2,063,143, the acid taste by adding heat-decomposing derivatives of individual acids, which allow the desired degree of acidity to be achieved in a subsequent cooking process, not satisfactory because the suitable acid derivatives are not easily accessible and im the rest are also not without an undesirable aftertaste.
In contrast, the subject matter of the invention consists in a method for Preparation of a jelly-forming mixture. from pectin, a dispersing agent, a fruit acid and a pH-controlling substance that is characterized by is that the mixture adipic acid in an amount of about 40 to about 90 percent by weight, calculated on the total amount of fruit acid and adipic acid, is added.
This jelly-forming mixture excels in terms of taste of the jelly prepared from it thanks to its optimal sharpness and lack of it undesirable aftertaste, with a view to the most effective use of pectin Compliance with the most favorable pH value for this and with regard to the material properties due to their easy accessibility.
The term “pectin” used here includes all in the trade available pectins for gelling purposes including slow and fast setting Pectins, for example natural or synthetic pectins with extensive different degrees of methylation. The pectin can be ammonium or sodium pectinate, for example be. A special feature of the invention is that the advantages mentioned regardless of the starting material, manufacturing process, degree of methylation, particle size, Solubility, ash content and type and degree of neutralization or gelling achieved can be. Notably, these benefits are more apparent when the The degree of methylation of the pectin is between 60 and 73 DM.
Usually the pectin used has a particle fineness corresponding to 100% passage through a sieve with a mesh size of 0.177 mm and a maximum 62% passage through a sieve with a mesh size of 0.105 mm.
The dispersant or filler which can be used according to the invention serves several purposes Purposes. He gives the product body and thus makes it easy to handle, what otherwise it wouldn't be. In addition, it keeps the various components of the mixture, for example the pectin and the acid, apart and thereby reduce undesirable mutual interaction before use. It can also contain soluble solids and sweeteners included, so that the amount of these substances used by the consumer must be added in the preparation of the jelly is reduced.
The dispersant can. preferably from a soluble sugar and in particular consist of dextrose, but also cane sugar or lactose are usable. Usually the dispersant, e.g. B. Dextrose, in one Amount from 5 to 80 g, e.g. B. 17 to 22 g to 1 to 4, for example 2.5 g of pectin before. A preferred mixture contains 2.5 grams of pectin and 17 to 18 grams of dextrose. the Dextrose can be anhydrous, but is preferably in an aqueous form, for example with 8.8% water corresponding to 1 mol of water of crystallization, applied.
For example, the one used in the mixture prepared according to the invention Dispersant preferably has a particle fineness corresponding to about 100% Passage through a sieve of 0.42 mm mesh size and 65% passage have a sieve of 0.149 mm mesh size, which corresponds to the particle size distribution of the Pectins comes very close.
Obviously, the total amount of acid to be used according to the invention depends including fruit acid and adipic acid of that desired in the finished jelly product pH value and the desired sharpness. The total amount of acid determines the degree of heat, while the proportion between fruit acid and adipic acid determines the pH of the Jellies for sure.
The total acid content is preferably made up of fruit acid and adipic acid about 3.18 to 30 g and usually 8.75 to 12.50 g per 1 to 4 g of pectin.
The single or multiple fruit acids that can be used include for example tartaric acid, fumaric acid and citric acid.
The amount of adipic acid which can be used according to the invention depends on the desired pH. If a pH of 2.7 to 3.0, for example 2.85, is to be achieved, the adipic acid is to be used in an amount of 0.66 to 9.0 g and preferably 5.0 g per 1 g of fruit acid . In other words, the adipic acid is preferably to be added to the mixture in an amount of about 40 to 90010, for example 830 / "of the total acid.
In the method according to the invention, the adipic acid acts in two ways Way. First, together with the fruit acid, it gives the desired degree of spiciness, and secondly, it acts as a substance that controls the pH value, i.e. it represents, for example the pH of the final product to the desired range of 2.7 to 3.0, for example 2.85, and stabilizes it at this value.
Pektin folgenden Gehalt an festen wasserfreien Säuren aufweisen:
It should be noted that the use disclosed by the invention the combination of adipic acid and fruit acid as an additive to pectin-containing jelly Mixtures can unexpectedly achieve all the advantages of using conventional Buffer salts occur without, however, the disadvantages usually observed the addition of these salts occur. These disadvantages usually exist below among other things from the required high concentration, the undesirable influence on taste, the undesirable softening effect on the pectin jelly, the necessary additional pectin requirement for achieving the desired jelly strength, the high cost of the buffer salt and the uselessness of the product on a low-sodium diet.
Für gewöhnlich liegt die mittlere Teilchengröße zwischen 0,10 und 0,33 mm.Usually the acids are fine-grained or finely powdered Crystal form, for example with a particle size corresponding to 100% passage through a sieve of 0.42 mm mesh size and 40% passage through a sieve of 0.149 mm mesh size applied. Usually the mean particle size is between 0.10 and 0.33 mm.
Trockenvermischen folgender Bestandteile hergestellt:
When comparing Examples 1 and 6, it was found that both jellies practically had the same pH value, but differed greatly in taste. The product according to Example 6 had a disgusting taste, was inadequate Sharpness and had inferior jelly firmness. If the product has less buffer substance, for example with only 1.0 g, possessed it because of its low weight pH value has an even lower jelly strength and should therefore be used to create a Normal product still requires the addition of further pectin.
The term DM used in the documents refers to the Degree of methylation of the pectin. As is well known, pectin consists of repetitive Polygalacturonic acid units, with some of the carboxyl groups as free carboxyl groups, others are in the form of metal salts and still others are in the form of methyl esters. The ratio between modified and unmodified carboxyl groups is determined the pectin properties. The number of methyl groups is particularly characteristic, which is usually denoted by the expression DM = degree of methylation, the by the ratio of the number of methyl groups to the sum of methyl and carboxyl groups times 100 is determined. A pectin with a DM of 100 would be such a all carboxyl groups are methylated. A 73 DM pectin, as in example 1 is therefore one in which 73% of the carboxyl groups are methylated are, etc.
