In dieser Patentschrift wird festgestellt, daß der Verlust der natürlichen Farbe bei geräuchertem, rotem Fleisch wie Schinken usw. durch Verwendung gewisser Phosphate in der Salzlake verhindert werden kann. Auch aus anderen Veröffentlichungen ist es bekannt, daß nach dem Pökeln mit einem aus Nitrit und/oder Nitrat und Phosphaten bestehenden Salzgemisch oder durch Behandeln mit chlorid-, nitrit- und/oder nitrat- und phosphorhaltigen Salzlaken, die Farbe von rotem Fleisch (d. h. gleichzeitig die Ausbreitung von Bakterien und den Verderb durch Bakterienbefall
während des Kühlhaltens. Im Verlauf von 6 bis 7 Tagen wurde die Exudatmenge von
17 bis 19 ml auf 1 bis 4 ml je Geflügelhälfte herabgesetzt. Nach 5tägiger Lagerung
zeigte das mit Phosphat behandelte Fleisch ein wesentlich frischeres Aussehen, frischeren
Geruch und Geschmack als das mit reinem Wasser getränkte Fleisch. Ebenso bewirkt
die erfindungsgemäße Behandlung eine Verminderung des Flüssigkeitsverlustes beim
Auftauen von gefrorenem Geflügel.
Die Durchführung des erfindungsgemäßen Verfahrens, so weit das danach hergestellte Erzeugnis nicht zur Lieferung in Gebiete außerhalb des Geltungsbereiches des Lebensmittelgesetzes bestimmt ist, ist zur Zeit auf Grund der »Verordnung über Fleisch und Fleischerzeugnisse (Fleischverordnung)« vom 19. Dezember 1959 (Bundesgesetzblatt Teil I, Nr. 52 vom 22.
