Das bisher übliche Verfahren zur Erzeugung von Stärke aus Mais besteht darin, dafs der Mais in ganzen Körnern mit oder ohne Zusatz von schwefliger Säure in Wasser behufs Lockerung des Gefüges des Kornes gequellt, hierauf in geeigneten Vorrichtungen zerkleinert und über Siebe geleitet wird, auf welchen der gröfste Theil der Hülsen und Keime zurückbleibt. Die durchpassirte Milch wird abermals mit schwefligsaurem Wasser geweicht und abermals über jedoch feinmaschigere Siebe geführt, um den letzten Rest der Fasertheile-zu entfernen. Die so von Cellulose, OeI und Farbstoff befreite, nur Stärke und Mais-Eiweifsstoffe enthaltende Milch wird in zweckentsprechender Weise concentrirt und über Kinnen oder Fluthen geleitet, in denen sich zuerst die specifisch schwerere Stärke und hierauf die leichteren Mais-Eiweifsstoffe absetzen. Diese Ablagerung geschieht natürlich nicht quantitativ, sondern es enthält die unterste Schicht die reinste und die mittlere schon theilweise mit Eiweifs gemengte Stärke, welche gewöhnlich nochmals gefiuthet wird, um Stärke erster Güte zu erzeugen.
