Käseformen dieser Art sind insbesondere zur Herstellung gepreßter Käse bekannt, und wenn für die Form ein »äußerer« Deckel benutzt wird, d. h. ein Deckel mit einem Kragen, der während des Preßvorgangs außen um die obere Kante des Wickels herum liegt, wird die Form normalerweise so angewendet, daß der Wickel bei dem Beginn des eigentlichen Pressens nur ein Stück in die Form herunter geführt ist, aber allmählich mit dem Fortschreiten des Fressens mehr und mehr nach unten gepreßt wird. Hieraus folgt, daß man dafür sorgen muß, eine solche Menge Käsemasse anzuwenden, daß der Wickel nicht in den Boden gepreßt ist, bevor ein ausreichendes Pressen der Käsemasse erreicht ist. Es ist selbstverständlich schwierig, die Menge der in Gebrauch zu nehmenden Käsemasse so genau abzupassen, daß ein ausreichendes Pressen erreicht ist, gerade wenn der Wickel den Boden erreicht hat, und man sorgt deshalb dafür, soviel Käsemasse in Gebrauch zu nehmen, daß man ausreichend Sicherheit für das Fertigwerden des Pressens hat, bevor der Wickel den Boden erreicht hat. Die Erfahrung zeigt, daß normalerweise, wenn das Pressen abgeschlossen ist, ein gewisser Abstand, vom Formboden zur unteren Kante des Wickels vorhanden sein wird, ein Abstand, der erfahrungsgemäß recht klein gehalten werden kann und beispielsweise H bis 1 cm und bisweilen vielleicht bis zu 1,5 oder 2 cm als Maximum betragen kann. Unter den angeführten Umständen wird unter der unteren Kante des Wickels eine »Ausbeulung« der Käsemasse entstehen, die am fertiggepreßten, der Form entnommenen Käse als ein verunzierender und in vielen Fällen sehr lästiger Rand auftritt, der weggeschnitten werden muß. Wenn es sich z. B. um die Herstellung der sogenannten rindenlosen Käse handelt, ist das Wegschneiden des genannten Randes eine Notwendigkeit, um beim späteren Evakuieren (Luftleermachen) der Hüllen aus Kunststoffolien, worin die Käse eingepackt werden, zu erreichen, daß sich das Folienmaterial glatt an den Käse anlegt.
