Die Herstellung erfolgt normalerweise so, daß die Kakaobohnen in mehreren Arbeitsgängen einer feinen Mahlung unterworfen werden, so daß eine dünnflüssige Masse, die sogenannte Kakaomasse, entsteht, die sodann mit dem Süßmittel, das ist in erster Linie Saccharose, gegebenenfalls unter Zusatz weiterer Stoffe, wie Milch- oder Sahnepulver, einer Mahl-, Reib- und Rührbehandlung (Conchieren) unterworfen wird. Dabei wird die Schokoladenmasse auf Temperaturen über 60 bis etwa 100° C erwärmt, um die mit den Kakaobestandteilen und übrigen Zutaten eingebrachte Feuchtigkeit zu entfernen. Bisher war es jedoch technisch nicht möglich, eine Schokolade herzustellen, die an Stelle von Saccharose ausschließlich Dextrosehydrat enthält, weil die bei den üblichen Herstellungsverfahren angewendeten verhältnismäßig hohen Temperaturen zu einer Verringerung des Kristallwassergehaltes der Dextrose und dadurch zu einer Verkrustung der Schokoladenmasse führen. Das neue Verfahren besteht im wesentlichen darin, daß die Herstellung von Schokoladenerzeugnissen vorzugsweise bei alleiniger Verwendung von Dextrose als Süßmittel unter Bedingungen erfolgt, unter denen der Kristallwassergehalt der Dextrose im wesentlichen erhalten bleibt. Dazu wird das erfindungsgemäße Verfahren zur Herstellung von Schokoladenerzeugnissen unter Verwendung von Dextrosehydrat (C" H12 0s ' H2 O) als alleinigem oder fast alleinigem Süßungsmittel dadurch ausgeführt, daß Kakaomasse zunächst für sich ,allein in an sich bekannter Weise unter Anwendung von Temperaturen von 60 bis 120° C conchiert, nach Zugabe von Dextrosehydrat sowie gegebenenfalls Kakaobutter und Lezithin, bei einer 45° C nicht überschreitenden, zwischen 35 und 45° C liegenden Temperatur im Melangeur oder in anderen geeigneten Mischeinrichtungen, sodann unter Aufrechterhaltung dieser Temperatur im Walzwerk und erneut im Melangeur behandelt und dann eingetafelt oder zu anderen Schokoladenerzeugnissen verarbeitet wird.The invention is based on the new finding that the previous with The difficulties associated with the loss of the use of dextrose as a sweetener of the water of hydration during processing. Die auf diese Weise hergestellten Schokoladenerzeugnisse sind in Farbe, Bruch und Festigkeit den üblichen Schokoladen auf Saccharose-Basis durchaus gleichwertig. Außerdem hat sich gezeigt, daß bei den ausschließlich mit Dextrosehydrat hergestellten Schokoladen auch bei erhöhten Lagerungstemperaturen keine Neigung zur Fettreifbildung besteht. Ein weiterer Vorteil ist darin zu erblicken, daß die Dextrosehydratschokoladen in geschmacklicher Hinsicht das Kakaoaroma besonders stark hervortreten lassen und weniger süß sind als die üblichen Schokoladen auf Saccharosebasis. Auch hat eine ausschließlich mit Dextrosehydrat hergestellte Schokolade einen angenehm kühlenden, erfrischenden Geschmack.
