Description
The The present invention relates to a novel process for the preparation of flour mixtures for Baking purposes.
B. Z. Lebensmittel Untersuchungen Forschung 191, 104-109, 110-115 (1990).The known process for the preparation of particular wheat flour consist in that one the peeled Grain to the desired Fineness grinds and uses in this form. To improve the Baking properties is the flour z. As ascorbic acid added, which in the Kneading is oxidized by the trapped air. The resulting dehydroascorbic acid withdraws the flour glutathione and protects the proteins thus before a depolymerization, what the rheological Characteristics of the dough improved. Another possibility consists in the addition of proteolytic enzymes containing the adhesive proteins partially degrade, see z. B. Z. Food Examinations Research 191, 104-109, 110-115 (1990).
The The present invention has the opposite of the task, a possibility to create the rheological properties of the dough on others Way to improve, so that basically too can be dispensed with the addition of such tools, or this restricted can be, or for the same additional amount, a further improvement of these properties is achievable.
The solution This object is reflected in the main claim, advantageous Embodiments can be found in the subclaims.
The Invention goes from the surprising fact out that alone by granulation of the highly proteinaceous flour components obtained from the air classification and admixture or recycling in the Flour the dough and baking properties can be improved. The Separation of the flour by wind layers leads in a conventional manner for the fractionation into the three components of calibrated flour, weak and proteinaceous flour and high protein flour.
The air sifting produces about 12 wt .-% highly proteinaceous Flour with 80% particles smaller than 90 μm and 20% low protein flour, z. B. the calibrated Flour mixed back can be. The granulation in the fluidized bed with the help of sprayed Water leads to a very good free flowing Granules that are drier than the starting flour. Mix this granules the flour again, so the water absorption is increased and a higher Preservation achieved. Furthermore the glue is strengthened and the gas holding capacity improves, the doughs are drier and machine-accessible, d. H. The rheological properties are also improved. The Granulation itself is at temperatures between room temperature and 40 ° C carried out, about thermal changes to exclude the protein. The advantage of granulating in the fluidized bed over others The process has the advantage that the distribution of grain sizes very tight, the product is therefore very homogeneous.
The Amount of sprayed Water is about 30 wt .-% based on the heavily protein-containing Flour, the residence time is 20 to 60 minutes, the fluidized bed granulation is therefore preferred multi-level and continuous.
This Granulation can be in an inventive development also use the known or novel to be produced baking bakery additives to mix, wherein the water used for granulating this Additives in the wished Adds quantities. Again, the fluidized bed granulation has a very beneficial effect from, the additives are distributed very evenly on the fine granules.
Thereby, that this very finely divided granules bound these additives to the surface contains, can be thus also the additive or mixtures of such substances The flour is extremely homogeneous distributed, which also has a positive effect on the baked goods. The added to the water ingredients can (depending on their nature and the Granulation temperature in the fluidized bed) also with the protein substrate react.
B. B. Watzl, C. Leitzmann "Bioaktive Substanzen in Lebensmitteln, ISBN 3-773-1301-7.Especially The protein-rich are preferred according to the invention Flour fraction natural substances or secondary plant ingredients such as z. As polyphenols, flavonoids, phytosterols, folic acid and Add chlorophyll to the granulation water. This bioactive Substances can thus over the baked goods enter the human food cycle and used for therapeutic purposes, with type and quantity the needs largely adapted can be. For these substances and their direction of action s. z. B. Watzl, C. Leitzmann "Bioactive Substances in food, ISBN 3-773-1301-7.
From These natural substances have freshly pressed wheatgrass juice especially proven, which were added to the water in amounts of up to 60% by weight. The enzymes contained in baking technology are very positive The vitamins are known to promote good health. Likewise positive effects z. B. onion juice because of the contained Enzymes and cysteines.
The resulting product can be added to normal flour advantageously in 0.5 to 20 wt .-% who which, as stated above, a very homogeneous distribution succeeds. In principle, however, the fractions separated by air classification can be reunited after granulation with the highly protein-containing flour fraction.
Ultimately is proposed over the granulating water lactic acid in amounts less than 1% by weight to further the adhesive structure to improve, making the dough more relaxed and supple and that Loaf, and / or to add less than 1% by weight of acetic acid, to cause a slight pH lowering, resulting in the above advantages contributes a bactericidal effect.
