Abstract

Zudem sorgen alkalische Bedingungen dafür, dass die teilweise in Polymerform vorliegenden Inhaltsstoffe wie z.B. Lipide in kleinere Verbindungen gespalten werden. Hierdurch kann die Löslichkeit des aus der Kupferverbindung und dem Heferindenaufschluss gebildeten Kupferkomplexes beeinflusst werden. Zu dieser wird langsam eine Lösung von Kupfercitrat (250-2.000 g, in 1 M Schwefelsäure gelöst) zugegeben und für 10 min gerührt. Zu einem Wein mit den in Tabelle 1 aufgelisteten Konzentrationen von Schwefelverbindungen wurden die in Tabelle 2 dargestellten Mengen von Reagenzien zur Behandlung von Weinfehlern zugegeben. Nach Anwendung der Reagenzien für einen Zeitraum von 3 Stunden wurde die Probe filtriert und die Schwefel- und Kupfergehalte des Filtrats bestimmt. Die Ergebnisse sind in Tabelle 3 dargestellt.
