Isomaltulose (α-D-Glucopyranosyl-1,6-Fruktose, auch Palatinose®) ist ein Zuckeraustauschstoff, der aus Saccharose gewonnen wird. Isomaltulose ist ein nicht kariogenes Süßungsmittel, welches genau wie Saccharose voll verstoffwechselt wird und somit denselben kalorischen Wert aufweist. Da die Verstoffwechselung von Isomaltulose im menschlichen Körper langsamer verläuft als von Saccharose, ist die glykämische Wirkung der Isomaltulose niedrig und die in ihr enthaltene Energie steht dem Körper über einen längeren Zeitraum zur Verfügung. Isomaltulose wird aufgrund dieser Eigenschaften in verschiedenen Anwendungen als Saccharose-Ersatz eingesetzt, die diese Vorteile gezielt herausstellen, so etwa in zahnfreundlichen Süßigkeiten wie zahnfreundliche Schokolade und zahnfreundliche Hartkaramellen, aber auch in den sogenannten Energy-Drinks oder etwa in aromatisierten Mineralwässern sowie Tee.Isomaltulose is a non-cariogenic sweetener which, like sucrose, is fully metabolised and thus has the same caloric value.
