Abstract
Die Erfindung betrifft ein Verfahren zur Herstellung eines Lebensmittels oder einer Lebensmittelzubereitung, bei dem mindestens eine flüssige und/oder viskose, mindestens eine milchoriginäre Zutat umfassende Zusammensetzung mit mindestens einem Stabilisierungsmittel gemischt, diese Mischung auf eine Temperatur zwischen 70°C und 95°C erhitzt und dann auf eine Temperatur zwischen 50°C und 90°C abgekühlt wird. Erfindungsgemäß wird die Mischung nach dem Abkühlen in portioniert und geformt, wobei zumindest ihrer Oberfläche schlagartig Wärme entzogen wird. Auf diese Weise wird erreicht, dass sich auf der Oberfläche eine Art Haut bildet, so dass das erfindungsgemäße Lebensmittel oder die erfindungsgemäße Lebensmittelzubereitung eine sehr stabile Form hat und eine feste Oberfläche aufweist. Ein nach dem erfindungsgemäßen Verfahren hergestelltes Produkt behält seine Form auch bei Raumtemperatur in unterschiedlicher Umgebung und zerfällt nicht in kleinere Bruchstücke. Die Erfindung betrifft ein Verfahren zur Herstellung eines Lebensmittels oder einer Lebensmittelzubereitung, bei dem mindestens eine flüssige und/oder viskose, mindestens eine milchoriginäre Zutat umfassende Zusammensetzung mit mindestens einem Stabilisierungsmittel gemischt, diese Mischung auf eine Temperatur zwischen 70°C und 95°C erhitzt und dann auf eine Temperatur zwischen 50°C und 90°C abgekühlt wird. Bei einem bekannten Verfahren zur Herstellung von Frischkäse wird zunächst Frischkäse-Rohware aus Rohmilch hergestellt. Vor dem Abtrennen der Molke wird die gesäuerte Milch erhitzt und heiß gehalten. Im anschließenden Trenn- bzw. Konzentrationsschritt wird die Molke in einem Separator vom Bruch (Feststoff) getrennt und dann abgekühlt. Alternativ oder zusätzlich kann das Konzentrieren des Quarks auch mittels Ultrafiltration erfolgen. Der entstehende Doppelrahmfrischkäse wird auch als Frischkäse-Rohware bezeichnet. Frischkäse bzw. Frischkäsezubereitungen werden üblicherweise aus dieser Frischkäse-Rohware hergestellt. Anschließend wird der Doppelrahmfrischkäse (41% Trockenmasse, 31,5% Fett) in einem Frischkäseseparator von der Sauermolke getrennt und abgekühlt. - - 0.2% citric acid and
- - 13.2% water.
Die Mischung wird in einen Vakuumbehälter umgepumpt, dort entgast, auf ca. 75°C abgekühlt und anschließend zweistufig homogenisiert (1. Stufe: 50–250 bar, vorzugsweise 200 bar, 2. Der fertige Frischkäse wird dann in einen Misch- und/oder Vorratsbehälter gepumpt und dort bei 50 bis 100°C, vorzugsweise 60 bis 80°C, insbesondere ca. 70 bis 75°C, gelagert. Es ist auch bei höheren Temperaturen (Raumtemperatur) formstabil und zerfällt nicht in Bruchstücke, so dass es beispielsweise auch als Zugabe in Salat oder Ähnliches gegeben werden kann, ohne sich aufzulösen. Das Produkt ist außen bissfest, aber innen cremig-schmelzend. Anschließend wird es direkt in ein Wasserkühlbad gegeben, welches eine Temperatur von 0 bis 20°C, vorzugsweise 5 bis 15°C, aufweist. In dem Wasserbad wird das Produkt weiter abgekühlt, so dass sich weiter verfestigt und für den abschließenden Wiege- und Verpackungsprozess stabil genug ist.The hot or hot product is fed by means of screws a forming drum having defined holes.
