Verfahren zur Herstellung eines Sojahydrolysats als Substratbestandteil bei der Kultivierung von Mikroorganismen zur Fimbrienausbildung, dadurch gekennzeichnet, daß mit den Streptomyces-Stämmen ZIMET-Nr. 43770 oder 43919, der kein Streptomycin mehr produziert, ein sojamehlhaltiges Submersmedium beimpft, unter Belüftung 72 bis 96h fermentiert wird und nach Abbruch der Fermentation das Kulturfiltrat bzw. Zur Herstellung von Eiweißpartialhydrolysaten für bakteriologische Zwecke werden isolierte Proteasen tierischer, bakterieller oder pflanzlicher Herkunft verwendet. Dazu sollte das Protein in möglichst konzentrierter und/oder reiner Form vorliegen. Fette und/oder Zellulosen selten oder gar nicht zu spalten vermögen. Zur Gewinnung von hydrolytischen Enzymen werden deshalb auch Streptomyceten und andere Actinomyceten eingesetzt. Dazu werden diese Mikroorganismen beispielsweise auf Sojasubstrat gezüchtet und aus dem Kulturfiltrat die Enzyme durch Reinigungs- und Konzentrierungsschritte hergestellt. Mit dieser Reinigung sind stets umfangreiche und kostenaufwendige Manipulationen verbunden. In der Anwendung dieser Enzyme sind dann für die einzelnen, speziellen Enzyme oft unterschiedliche Temperaturen und pH-Werte optimal, so daß entweder Proteine oder Polysaccharide optimal abgebaut werden. Es ist ferner bekannt, daß einige Bakterienstämme, z. B. Aufgabe der Erfindung ist, ohne den üblichen Isolierungsvorgang von Enzymen aus dem Kulturfiltrat, ein Hydrolysat zu gewinnen, daß Aminosäuren, Peptide und gut lösliche Polysaccharide (Zyklodextrine) enthält. Die Aufgabe wird erfindungsgemäß dadurch gelöst, in dem die ausgewählten und im ZIMET Jena hinterlegten Stämme, Streptomyces globisporus, ZIMET-Nr. 43770 oder Streptomyces griseus, ZIMET-Nr. 43919, der kein Streptomycin mehr produziert, unter Belüftung auf einem Substrat mit Sojamehl gezüchtet werden. Das gewonnene Kulturfiltrat wird zur Abtötung der Sporen auf 11O0C für 60 min erhitzt. Anschließend wird das Kulturfiltrat sprüh-oder anderweitig getrocknet. Das gewonnene Sojahydrolysat enthält durchschnittlich 3% freie Aminosäuren, 13% Peptide, 67% Polysaccharide, 11 % Aschebestandteile und 6% Wasser. Durch den hohen Gehalt an Polysacchariden, der zum größten Teil aus Zyklodextrin besteht, ist das Kulturfiltrat besonders dann einzusetzen, wenn durch diese Stoffgruppe die Fimbrienbildung bei Bakterien angeregt werden soll. Der Vorteil des Verfahrens besteht darin, daß die Polysaccharide ohne Isolierung, gemeinsam mit den Aminosäuren und Peptiden im Nährboden, z. B. bei Bordeteilen, Moraxellen u.a.
