Abstract
Die Erfindung betrifft ein Verfahren zur Herstellung diaetetischer Gelatine-Zuckerwaren unter Verwendung der traditionellen Mogultechnologie ohne die Verwendung der den Stoffwechsel von Diabetikern in unzulaessiger Weise belastenden Kohlenhydrate Saccharose, Invertzucker, Staerkesirup und Glukose. Die erfindungsgemaesz hergestellten Gelatine-Erzeugnisse koennen in verschiedenartigsten Formen (z. B. Tiere, Fruechte, Gegenstaende) zum Direktverzehr, vorzugsweise fuer Diabetiker, und auch in stueckiger Form, u. a. als Fruchtimitation, fuer Fuellungen von Kakaoerzeugnissen, Frisch- und Dauerbackwaren, Puddings und Desserts verwendet werden. Ziel der Erfindung ist es, ein Verfahren zur Herstellung von Gelatine-Zuckerwaren fuer Diabetiker auf der Basis der dem Lebensmittelrecht der Deutschen Demokratischen Republik entsprechenden Zuckeraustauschstoffe zur Produktion auf herkoemmlichen Ausruestungen der Sueszwarenindustrie anzugeben. Erfindungsgemaesz werden Zuckeraustauschstoffe wie Sorbit und Fruktose in Wasser geloest, auf die geforderte Endfeuchte gekocht (120-125C), mit der vorgequollenen Gelatineloesung vereinigt, mit Farb- und Aromastoffen sowie Genuszsaeuren versetzt und nach Abkuehlung auf 40-45C in Staerkepuder gegossen.{Gelatine; Zuckerware; Diaetetisches Erzeugnis; Diabetiker; Sorbit; Fruktose; Kakaoerzeugnis; Frischbackware; Dauerbackware; Pudding; Dessert; Fruchtimitation}The invention relates to a process for the production of dietetic gelatin sugar confectionery using traditional moulin technology without the use of the carbohydrates sucrose, invert sugar, starch syrup and glucose, which encumbers the metabolism of diabetics in an undue manner. Die bekannten Verfahren zur Herstellung von Gelatine-Zuckerwaren beruhen im Prinzip darauf, daß die Gelatine als Gelbildner mit einer auf einen bestimmten Trockensubstanzgehalt eingestellten Saccharose-Stärkesirup-Lösung vereinigt wird und nach dem Zusatz von Färb- und Aromastoffen sowie Genußsäuren durch Umwandlung des Sols zum Gel übergeht. Während Dextrin und Stärkezusätze aus ökonomischen Gründen erfolgen, ist auch ein Zusatz von Gummi arabicum bekannt, der jedoch nicht im Sinne der Kosteneinsparung erfolgt, sondern einen speziellen Beitrag als Gelbildner leistet und zu Erzeugnissen mit einer festeren, länger kaubaren Konsistenz führt.'Zur Frischhaltung sind dabei auch Zusätze von etwa 20% Invertzucker (Technologie Zuckerwaren, Fachbuchverlag Leipzig, 1983, S. 63-64) oder bis zu 5% Glyzerin oder Sorbit (Lebensmittel-Lexikon, Fachbuchverlag Leipzig, 1979, S.318) bekannt. Zur Einstellung eines für die Weiterverarbeitung, die gewünschte Konsistenz und die erforderliche Haltbarkeit optimalen Trockensubstanzgehaltes, wird die Zucker-Stärkesirup-Lösung so weit gekocht, daß nach Zugabe der weiteren Komponenten (hauptsächlich Gelatinelösung und Invertzucker) ein refraktometrisch bestimmter Trockensubstanzgehalt des zum Gießen bestimmten Ansatzes von 77-80% resultiert. Die Formgebung erfolgt vorwiegend durch Gießen in Formpuder, in den mittels Stempeln die entsprechenden Formen eingedrückt werden. Dieses Verfahren wird auf sogenannten Mogulanlagen praktiziert und erlaubt gegenüber Formen aus Metall oder Plastwerkstoffen eine sehr schnelle Umstellung von einem Dessin auf ein anderes, indem einfach die Stempelleisten gewechselt werden. Zur Gewährleistung der erforderlichen Konsistenz, geringer Puderkruste, Klarheit und Farbfreudigkeit sowie kurzer Abstehzeit werden nach dem Kochprozeß der sofortige Beginn die schnellstmögliche Beendigung des Geliervorganges gefordert. Nachteilig an den genannten Verfahren ist es, daß es diese nicht gestatten, mittels der in der Süßwarenindustrie vorhandenen Einrichtung oder mit einer im Vergleich zum Gesamtwert der Anlage nicht wesentlichen Ergänzung Gelatine-Zuckerwaren auf der Basis der in der Deutschen Demokratischen Republik zugelassenen Zuckeraustauschstoffe in einer akzeptablen Qualität zu produzieren. Die bei einem Austausch der Saccharose gegen Fruktose nach dem üblichen Verfahren erhaltenen Erzeugnisse sind zu weich, zu wenig formstabil und weisen hinsichtlich des Kariesrisikos ähnlich ungünstige Eigenschaften wie Saccharose auf. Die mit Sorbit hergestellten Erzeugnisse werden nach etwa 10 Tagen so hart, daß sie nicht mehr verzehrtauglich sind. Die mit Xylit hergestellten Erzeugnisse sind nach kurzer Zeit durch Kristallisationserscheinungen vermust. Ziel der Erfindung ist es, ein Verfahren zur Herstellung von Gelatine-Zuckerwaren für Diabetiker auf der Basis der dem Lebensmittelrecht der Deutschen Demokratischen Republik entsprechenden Zuckeraustauschstoffe zur Produktion auf herkömmlichen Ausrüstungen der Süßwarenindustrie, vorzugsweise nach der Mogultechnologie, anzugeben. Neben einer optimalen Kombination der möglichen Zuckeraustauschstoffe werden Verarbeitungsparameter angegeben, die sichern, daß die so hergestellten Erzeugnisse in ihrer Qualität insbesondere auch hinsichtich eines geringen Puderansatzes mit den traditionell auf Basis Saccharose hergestellten vergleichbar sind. Erfindungsgemäß erfolgt die Gelbildung auf der Basis von Gelatine die in gelöster Form zu einem Gemisch von Zuckeraustauschstoffen gegeben wird, das durch einen synergistischen Effekt der verwendeten Komponenten die funktionellen Eigenschaften eines Saccharose-Stärkesirup-Gemisches ersetzt. Die beiden Lösungen werden vereinigt und hierzu Färb- und Aromastoffe sowie Genußsäure gegeben. Dieser fertige Ansatz wird wie üblich in Stärkeformpuder gegossen, nachdem entsprechende Stempeleindrücke vorgenommen wurden. Erfindungsgemäß erfolgt zwecks Minimierung des Puderansatzes an den Dessins das Gießen des Ansatzes erste nach Kühlung auf Temperaturen von 40 bis 50 °C, vorzugsweise bei 40°C und somit weit unter den bei der Verarbeitung von Saccharose und Maltit üblichen Temperaturen. Das erhaltene Erzeugnis entspricht den Qualitätsanforderungen des Standards TGL 34114/02 „Elastische Zuckerwaren". Die Dessins weisen eine gleichmäßige ansprechende Färbung, nur ganz geringfügige Formpuderrückstände, eine weiche und gut kaufähige Konsistenz sowie einen aromatischen reinen Geruch und Geschmack auf. Hierzu werden unter Rühren 850 ml Aromakonzentrat „Walderdbeere" (VEB Chemisches Werk Miltitz Nr.533471), 200ml Farbstofflösung Purpur und 9,11 wäßrige Zitronensäurelösung (1:1) untergerührt. In einem doppelwandigen Rührwerksbehälter wird diese Lösung zwischengelagert. Diese so hergestellte Gießmasse wird mit einer beheizbaren Schraubenpumpe durch einen traditionellen Plattenwärmeübertrager gepumpt und dabei auf 45°C abgekühlt. Als Kühlmedium wird Wasser verwendet. Diese gekühlte Gießmasse gießt man auf einer Mogulanlage in Stärkeformpuder. Nach 15 Stunden Abstehzeit wird wie üblich ausgepudert, gefettet und verpackt.
