Abstract
Die Erfindung betrifft ein Verfahren zur Herstellung von Bierwuerze und Bier mit einem betonten hopfenaromatischen Geschmack und Geruch. Ziel der Erfindung ist es, durch die direkte Verwendung des beim Wuerzekochen anfallenden Bruedenkondensates im Bierherstellungsprozess anstelle von Wasser die im Brueden noch enthaltenen wertvollen Hopfenaromastoffe zur Ausbildung eines deutlichen hopfenaromatischen Geruches und Geschmackes im Bier auszunutzen sowie damit eine Energie- und Wassereinsparung zu erreichen. Erfindungsgemaess wird durch das reine auf die gewuenschte Temperatur eingestellte Bruedenkondensat in Abhaengigkeit vom gewuenschten Aromatisierungsziel beim Maischen bis zu 60% und beim Laeutern bis zu 40% der verwendeten Brauwassermenge ersetzt. Das zum Verduennen von Wuerze, Jung- und Fertigbier verwendete Verschnittwasser kann je nach Aromatisierungswunsch bis zu 15% des Volumens der zu verduennenden Wuerze- oder Biercharge durch kaltes und gegebenenfalls entgastes und mit Kohlendioxid versetztes Bruedenkondensat ersetzt werden. Das Verfahren ist fuer alle Biersorten, Schuettungsvarianten, Maisch-, Laeuter- und Gaerverfahren anwendbar.The invention relates to a process for the preparation of beer wort and beer with a pronounced hops aromatic taste and odor. Es ist bekannt, daß die Aromatisierung des Bieres zur Erzielung eines deutlichen hopfenaromatischen Geruches und Geschmackes durch Hopfenstopfen oder durch den Zusatz zur Würze oder zum Bier von industriell gewonnenen Hopfenölen, Bitterstoff- oder Hopfenölfraktionen erfolgen kann (z.B. DD-WP 203569, DD-AP 127568, DD-WP 100737). Nachteilig für diese Verfahren sind die Infektionsgefahr und die ungünstige Ausnutzung der Bitterstoffe des Hopfens (z. B. beim Hopfenstopfen im Lagertank) bzw. der Aufwand und die Kosten zur industriellen Gewinnung von Hopfenölen und Hopfenölfraktionen. Weiterhin ist bekannt, daß der Wärmeinhalt des bei einem Würzekochprozeß anfallenden Brüdens für verschiedene Anwärmprozesse indirekt genutzt werden kann (DD-WP 136796, DD-WP 142892, DE-OS 3024809, DE-PS 3147620, DE-OS 3138378, DE-OS u. DE-PS 3012591, DE-OS 2949918, DE-OS 3303671, DE-OS 2635026). Je nach Biertyp und Aromatisierungswunsch kann das gesamte oder ein Teil des aus energetischen Gründen möglichst heißen Brüdenkondensates zum Einmaischen bzw. zum Hochheizen der Teil- oder Gesamtmaische oder zum Auswaschen der Treber verwendet werden, wobei der Brüdenanteil an der gesamten Maischwassermenge (Hauptguß) im Normalfall bis zu 60% oder an der gesamten beim Läutern verwendeten Wassermenge (Überschwänzwasser) bis zu 40% betragen kann. Die Einstellung der Temperatur des Brüdenkondensates erfolgt in bekannter Weise und unter Berücksichtigung der betriebsspezifischen Verfahrensführung. Das zum Verdünnen von Würze, Jung- und Fertigbier verwendete Verschnittwasser kann je nach Aromatisierungswunsch im Normalfall bis zu 15% des Volumens der zu verdünnenden Würze- oder Biercharge durch kaltes, auf die gewünschte Temperatur eingestelltes und bei einem Zusatz zum Bier vorher entgastes und mit Kohlendioxid angereichertes unverdünntes Brüdenkondensat ersetzt werden. Dieses Verfahren ist besonders geeignet zur Herstellung von alkoholarmen oder alkoholfreien Bieren mit einem deutlichen Hopfenaroma bzw. von mehreren unterschiedlichen Biertypen aus einem Grundbier. Damit erübrigt sich der Einsatz von teuren Hopfenölen oder Hopfenölfraktionen zur Aromatisierung des Bieres. Zuvor muß die im Brüdenkondensat enthaltene Wärmemenge rekuperativ zurückgewonnen werden, um dieses Brüdenkondensat auf Anstelltemperatur herunterzukühlen.2. Das auf die Biertemperatur eingestellte reine oder verdünnte Brüdenkondensat kann wie das normale Verschnittwasser entgast und mit CO2 versetzt werden. Bei einer Verdünnung mit gleichzeitiger Aromatisierung von Bieren, die in zylindrokonisc hen Großtanks gären und reifen, kann das auf die Biertemperatur eingestellte Brüdenkondensat am Ende der Hauptgärphase auch ohne Entgasung und ohne CO2-Anreicherung zugesetzt werden. Der Zeitpunkt des Zusatzes ist dann so zu wählen, daß das Jungbier noch einen deutlichen Anteil an Hefe und an vergärbarem Restextrakt, z. B. rund 1 %, besitzt.3. 100 hl young beer, z.
