Výživový význam syrovátky je všeobecně znám. Sladká syrovátka vzniká při výrobě sýrů srážením bílkovin pomocí enzymového syřidla při hodnotě pH 5 až 6. Složení syrovátky značně kolísá v závislosti na složení mléka a především na použitých podmínkách výrobního procesu. Veškeré průměrné hodnoty uváděné v literárních zdrojích, týkající se složení, jsou spíše orientační. V syrovátce je obsaženo asi 50 % hmotn. sušiny mléka. Sušina se pohybuje mezi 4,0 až 6,5 % hmotn., z čehož největší podíl tvoří laktóza (70 až 80 % hmotn. sušiny) a dále bílkoviny (cca 10 % hmotn. sušiny). Zbývající podíl je tvořen minerálními látkami a nebílkovinnými dusíkatými látkami (cca 11 % hmotn. sušiny), tuky (cca 1 % hmotn.), kyselinami a vitaminy. Bílkoviny syrovátky se zásadně liší od převážného podílu bílkovin mléka, který tvoří kasein.The nutritional significance of whey is well known. Neméně důležitá je i snaha o ochranu životního prostředí snížením zatížení odpadních vod a snaha o maximální ekonomiku výroby snížením nákladů na přepravu a energie nebo hledáním speciálních syrovátkových produktů, které se vyznačují vysokou výživovou hodnotou. Sladká syrovátka odchází z provozu mlékárenského průmyslu v podobě málo koncentrovaných roztoků, které je nutno bezprostředně zpracovat zahuštěním na odparce a následně usušit. Vzhledem k zvyšující se ceně sušené sladké syrovátky na trhu se pro pouhé zkrmování stává syrovátka málo cenově výhodná a je účelnější ji dále zhodnotit, tzn. na místo přímého sušení na sprejové sušárně je výhodnější ji fermentačně zpracovat na finální produkty, a sice na etanol, popř. na různé alkoholické nápoje a vysoce proteinové potraviny, kterých je na trhu stále málo. Tekutá fáze, která vznikne po separaci proteinové složky syrovátky, obsahuje významné množství zkvasitelných látek (zejména 70 až 75 % hmotn. laktózy), které je možno vhodným mikrobiálním kmenem fermentačně přetransformovat na etanol. Literární zdroje uvádějí, že přídavky některých látek zlepšují ekonomiku fermentačního procesu. Janssen a kol., 1983, popisuje přídavek 0,5 % hmotn. peptonu, přídavek kvasničného extraktu uvádí ve své práci Rossenberg a kol., 1955, dále Grba a kol., 2002, a Ghaly a kol., 1997 a přídavek 1 % hmotn. melasy zmiňuje ve své práci Kourkoutas a kol., 2001. Sweet whey leaves the dairy industry in the form of low-concentration solutions, which must be processed immediately by concentration on an evaporator and then dried. Due to the increasing price of dried sweet whey on the market, whey for mere feeding becomes less cost-effective and it is more efficient to further evaluate it, ie. instead of direct drying in a spray dryer, it is more advantageous to ferment it into final products, namely ethanol or to various alcoholic beverages and high-protein foods, which are still few on the market. The liquid phase, which is formed after the separation of the whey protein component, contains a significant amount of fermentable substances (especially 70 to 75% by weight of lactose), which can be fermentatively transformed into ethanol by a suitable microbial strain. Literature sources state that the addition of some substances improves the economics of the fermentation process. Janssen et al., 1983, describe the addition of 0.5 wt. peptone, the addition of yeast extract is reported in Rossenberg et al., 1955, Grba et al., 2002, and Ghaly et al., 1997, and the addition of 1 wt. molasses is mentioned in Kourkoutas et al., 2001. Způsob stacionární fermentace roztoků sladké syrovátky nebo jejích deproteinovaných roztoků po oddělení proteinových látek ze sladké syrovátky, což je tekutá sacharidická část, obsahující převážně laktózu, je zkvašována na etanol. Přídavkem výše uvedených látek se produkce etanolu v médiu zrychluje, tím je dosahováno lepších bilančních ukazatelů a dochází k ekonomičtějšímu využití fermentačního zařízení. Jedná se o novou fermentaci živné pudy, která obsahuje sladkou syrovátku se zemědělskými a potravinářskými meziprodukty.The method of stationary fermentation of sweet whey solutions or their deproteinized solutions after separation of proteinaceous substances from sweet whey, which is a liquid saccharide part containing predominantly lactose, is fermented to ethanol. The addition of the above-mentioned substances accelerates the production of ethanol in the medium, thus achieving better balance indicators and a more economical use of the fermentation equipment. It is a new fermentation of nutrient soil, which contains sweet whey with agricultural and food intermediates.
