Abstract

El presente desarrollo se refiere a una composición probiótica no láctea en polvo soluble, que comprende jugo o zumo de una fruta con pH entre 3 y 4,5 o una acidez de entre 0,6 y 1,4%, biomasa de un microorganismo probiótico del género Bacillus y 5 sustancias prebióticas. El presente desarrollo, también se refiere al método para producir dicha composición a través secado por aspersión. La composición y método desarrollados permite microencapsular el microorganismo probiótico de tal manera que exhibe una viabilidad celular por encima de las 6 unidades 10 exponenciales y una estabilidad microbiológica y fisicoquímica de aproximadamente 12 meses favoreciendo el efecto estabilizador y protector gastrointestinal.
