如图所示,厚铸铁板制成环状体1,其外径与锅2的外径相等。环的纵剖面呈直角梯形。环的上表面有几个短柱3与锅底联接。故二者有间隙4。因环在锅边缘,故一般不接触火焰。火焰或热气通过间隙逸出锅底,故环不减少火对锅底的直接加热面积,热气从环表面流过,或以辐射向其传递热量。环吸收的热量在保温筒中释放,以维持温度焖烧食物。
