Abstract
The invention discloses vacuum freeze-dried instant health-preserving porridge and a preparation method thereof, and the health-preserving porridge comprises 5-30 parts of staple food grains, 5-30 parts of coarse cereals, 5-10 parts of walnuts, 5-10 parts of soybeans, 3-10 parts of peanuts, 1-10 parts of tremella and 1-10 parts of rock candies. The preparation method comprises cleaning, soaking, steaming, precooling, lyophilizing, and packaging. The vacuum freeze-drying method is adopted, so that water in the porridge can be quickly removed, and the food materials are prevented from deteriorating; can be eaten quickly after being directly brewed by adding water, and has convenient and simple operation. In the dehydration process, the food material is in a low-temperature state, so that the original shape, color and flavor of the food material can be effectively maintained, the nutritional ingredients in the food material are prevented from being damaged by high temperature, the nutrition of the food material is maintained to the maximum extent, and the food material has a good health preserving effect.
