Claims (3)

1. The preparation method of the spiced sausage is characterized by comprising the following steps of:
s1: preparing materials, namely preparing refined pork leg, pork chop, pork skin, pig blood, white granulated sugar, salt, five-spice powder, cooking wine, white wine, light soy sauce, pepper and ginger powder according to a formula of the sausage;
s2: mincing the pork hind leg lean meat and pork chop lean meat in the step S1 in mincing equipment, pouring the white spirit and cooking wine in the step S1 into the equipment respectively when the equipment is used for mincing the pork chop, wherein the mincing time is 20 minutes, and standing for 15 minutes after the mincing work is completed;

s6: adding pig blood into the crushed pig skin after cooking in the step S5, cooking for 30 minutes, placing the cooked pig blood and pig skin into a mould, standing and cooling for 80 minutes, and cooling and molding;
s7: crushing, namely putting the pig blood and the pig skin which are cooled and molded in the step S6 into a crusher for crushing;
s8: mixing, namely placing the pig blood and the pig skin which are crushed in the step S7 into a pickling barrel, stirring and mixing the pig blood, the pig skin and the pickled meat pieces through stirring equipment, and standing for 15 minutes after stirring and mixing are completed;
s9: performing sausage filling, namely placing the materials subjected to standing in the step S8 into filling equipment for sausage filling;
s10: drying, namely drying the sausage filled in the step S9 through drying equipment, and obtaining spiced sausage after the processing is completed;
