Description
Technical Field
The invention relates to the field of wine brewing processes, in particular to a sealing method by using brewing tail water as pit sealing water.
Background
White spirit has a long history and plays an extremely important role in culture and economy. However, it consumes a large amount of water resources from the production to the storage aging and generates a large amount of industrial wastewater. With the continuous development and development of the white spirit industry, the brewing wastewater generated by the white spirit industry is increased on the same scale, the water consumption for brewing the white spirit is reduced, and the resource utilization of the brewing wastewater is realized, so that the inevitable trend of the green development of the industry is reached.
The cellar sealing is an important key control point in the whole white spirit brewing process, creates a good anaerobic environment for brewing microorganisms, and prevents mixed bacteria in the environment from entering a cellar pool, so that the cellar sealing quality directly influences the liquor yield and the liquor quality of base liquor. Along with the upgrading of white spirit trade equipment, a comparatively ripe cellar for storing things pond sealing device has been formed at present, and the device mainly through stainless steel cellar for storing things lid and to the mode that adds the running water around the basin, reaches the sealed effect of cellar for storing things pond. However, as the fermentation progresses, the sealing water in the water tank is continuously reduced, and meanwhile, the sealing water is influenced by the production environment, more flocculent and strip-shaped white suspended matters are easy to appear on the surface of the sealing water, a specially-assigned person needs to change or supplement the sealing water regularly, and pollutants adhered to the wall of the water tank are cleaned, so that the problems of high water consumption and high labor intensity exist.
The brewing tail water is the fraction after the wine tails are picked until the distillation is carried out, contains a small amount of ethanol, more high-boiling organic acids, fusel oil and higher fatty acid esters, has certain acidity, and has turbid surface and a small amount of oil stains through sensory identification. At present, the treatment of tail water in the industry is mainly concentrated on the reforming steaming or curing of pit mud in a bottom returning pot, most of the tail water is directly discharged, so that the waste of water resources is caused, and the discharge capacity and the treatment load of liquor enterprises are increased. Therefore, the brewing tail water is used for replacing pit sealing water, and the method has important significance for reducing water consumption and realizing cyclic utilization of the brewing tail water.
Disclosure of Invention
The invention aims to solve the technical problem of providing a sealing method for using brewing tail water as pit sealing water by using the brewing tail water to replace tap water as pit sealing water, thereby effectively solving the problems of high replacement frequency, large water consumption and high labor intensity of the sealing water in the prior art.
The technical scheme adopted by the invention for solving the technical problem is as follows: the sealing method by using the brewing tail water as the pit sealing water comprises the following steps: a. firstly, discharging sealing water in a sealing water tank at the outer edge of a pit mouth, and cleaning the sealing water tank; b. secondly, after fermented grains are placed in the cellar, the sealed water tank is cleaned, then the sealed cover is covered, the outer edge of the sealed cover is in close fit with the sealed water tank, brewing tail water is added into the sealed water tank, the liquid level of the brewing tail water is guaranteed to be located above the outer edge of the sealed cover, and therefore the sealing of the brewing tail water to the cellar pool is achieved.
Further, in the step b, when the surface of the brew tail water is lower than the outer edge of the sealing cover after the brew tail water is evaporated, the brew tail water is replenished until the surface of the brew tail water is restored to be above the outer edge of the sealing cover.
Further, in step b, the surface level of the added brew tail water reaches at least the level of 2/3 in the sealed water tank.
The beneficial effects of the invention are: the brewing tail water has certain acidity, can inhibit the growth and propagation of mixed bacteria, has a small amount of oil flowers on the surface, reduces the contact area of the sealing water and the air, and reduces the probability of the mixed bacteria in the air invading the sealing water. The result shows that the brewing tail water is used as the sealing water, the water quality of the brewing tail water can not generate flocculent and strip-shaped white suspended matters, the evaporation rate of the sealing water is reduced, the frequency of manual replacement or supplement of the sealing water is reduced, and the labor intensity is reduced. Therefore, the brewing tail water is used as sealing water instead of tap water, so that the using amount of brewing water is reduced; on the other hand, the brewing tail water is recycled, the direct discharge of the tail water is reduced, the treatment pressure of the brewing wastewater is reduced, the treatment cost is reduced, and the utilization rate of water resources is improved. The invention is especially suitable for sealing the wine cellar.

Detailed Description
The sealing method by using the brewing tail water as the pit sealing water comprises the following steps: a. firstly, discharging sealing water in a sealing water tank at the outer edge of a pit mouth, and cleaning the sealing water tank; b. secondly, after fermented grains are placed in the cellar, the sealed water tank is cleaned, then the sealed cover is covered, the outer edge of the sealed cover is in close fit with the sealed water tank, brewing tail water is added into the sealed water tank, the liquid level of the brewing tail water is guaranteed to be located above the outer edge of the sealed cover, and therefore the sealing of the brewing tail water to the cellar pool is achieved.
The invention aims at the problems of obvious white suspended matter, large water consumption and light manual labor when tap water is used as pit sealing water in the prior art, and seeks to reduce the water consumption of enterprises and the load of wastewater treatment and improve the utilization rate of water resources. The invention selects the brewing tail water as the sealing water to reduce the replacement frequency of the sealing water, reduce the wastewater treatment cost and save the water.
In the actual use, the brewing tail water is evaporated, so that the liquid level of the brewing tail water is reduced, and the defect that the pit cannot be sealed is caused. In practice, in order to ensure that the brew tail water is used for a longer period of time and is more resistant to evaporation as much as possible, it is preferable that the surface level of the brew tail water added in step b reaches at least the level of 2/3 in the sealed water tank.
Examples
Example 1
In the original scheme, tap water is used as sealing water, the sealing water is changed for 1 time every 10 days on average by each pit sealing device, and the change frequency is about 36.5 times per year. The method uses the brewing tail water as the sealing water instead, the frequency is reduced from 1 time of replacement every 10 days to 1 time of replacement every two months, and the sealing water of the brewing tail water is replenished for 2 times in the period.
By adopting the method, the frequency of replacing the sealing water is reduced, the labor intensity is reduced, and the cost is saved. If 4 ten thousand pit ponds and 4 ten thousand sealing devices are taken as examples, and tail water is used as sealing water, 11.68 ten thousand tons of water are saved in one year, 10.52 ten thousand tons of wastewater discharge is reduced, the treatment pressure of a wastewater treatment station is reduced, the utilization rate of water resources is improved, and the total annual expenditure is reduced by 216.8 ten thousand yuan.
The frequency of replacement of different sealing water and the economic benefit are compared, see table 1, and see figures 1 and 2 in the attached drawings of the specification.
TABLE 1 comparison of different seal water replacement frequencies
According to the embodiment, the brewing tail water is used as the sealing water instead of tap water, so that the using amount of brewing water is reduced; on the other hand, the brewing tail water is recycled, the direct discharge of the tail water is reduced, the treatment pressure of the brewing wastewater is reduced, the treatment cost is reduced, the utilization rate of water resources is improved, the technical advantages are very obvious, and the market popularization prospect is very wide.
