Detailed Description
An automated control method for food processing is disclosed. The method is based on an intelligent frying oven and comprises a frying oven body and a control center, wherein the control center can be a control chip and has communication and data processing functions, the frying oven body receives signals output by the control center, the control center sends the output signals to the frying oven body to control the frying oven, the frying oven can be provided with a display screen, signal transmission can be carried out between the display screen and the control center, and a user can directly input operation on the display screen of the frying oven.
In one embodiment, as shown in FIG. 1, there is provided an automated control method for food processing, the method comprising the steps of:
and S10, acquiring oil level information sent by the liquid level detection terminal.
Specifically, the frying oven comprises an oil pan for frying food, and the liquid level detection terminal can be a liquid level detector which is arranged above the oil pan and used for detecting the oil level in the oil pan. The liquid level detection terminal sends the detected oil level information to the control center, and the control center acquires the oil level information, wherein the oil level information comprises the height of the oil level in the oil pan.
And S11, when the oil level is lower than the oil level corresponding to the preset oil supplementing oil level, calculating the residual oil amount corresponding to the oil level.
Specifically, the control center compares the received oil level height with an oil level height corresponding to a preset oil supplementing oil level, and when the received oil level height is lower than the oil level height corresponding to the oil supplementing oil level, it is indicated that the oil pan needs oil supplementing. And the control center calculates the residual oil quantity corresponding to the oil level height according to the oil level height, the oil level height of the standard oil level and the oil quantity corresponding to the standard oil level.
And S12, calculating the oil supplementing amount needed to be supplemented from the oil level height to the standard oil level.
Specifically, the control center calculates the oil compensation amount to be supplemented from the oil level to the standard oil level according to the remaining oil amount and the oil amount corresponding to the standard oil level.
And S13, obtaining oil supplementing time according to the oil supplementing quantity and the preset oil supplementing speed.
Specifically, when oil is replenished, the oil outlet rate is constant, and the control center calculates the oil replenishing time according to the oil replenishing quantity and the oil replenishing rate required to be replenished.
And S14, outputting oil supplementing information.
Specifically, the control center outputs oil supplementing information, wherein the oil supplementing information comprises calculated oil supplementing time, so that oil supplementing is automatically stopped when the oil supplementing time is reached by the frying furnace body, and the oil level reaches a standard oil level after the oil supplementing is stopped, so that automatic oil supplementing is realized. And meanwhile, the frying furnace body is used for supplementing oil according to oil supplementing time, compared with a common oil supplementing method for detecting the liquid level in real time by using a liquid level detection terminal and completing oil supplementing when the liquid level rises to a standard oil level, the oil supplementing method can realize more accurate control on the liquid level of the edible oil according to the time for supplementing oil. Because the oil supplementing port is usually higher than the standard liquid level, when the liquid level rises to the standard oil level, part of the edible oil still flows out of the oil supplementing port but does not reach the liquid level, even if the oil supplementing is stopped at the moment, the oil supplementing is easy to be excessive, and the accuracy of the edible oil liquid level control is reduced.
In one embodiment, the oil temperature is changed when oil is supplemented in the processing process, so that the taste of processed food is influenced. When a user needs to process food, the user can input the name of the food to be processed through the display screen, all the names of the food to be processed form a food processing list, and the control center receives the locally input food processing list. Processing information is stored in a preset food processing database in a manner that each food name is associated with each other, and the processing information comprises processing temperature, processing time and taste information. For example, the taste information may be spicy, five spices, and the like. The control center places the food names with the same taste information together, so that the adjustment of the food processing list is completed according to the taste information.
The control center inquires the processing information corresponding to each food name in the food processing database and adds the processing information into the food processing list. The control center outputs the modified food processing list to the frying oven body, and the frying oven body processes the food according to the received food processing list. After each pot of food is processed by the frying oven body, food discharging information is sent to the control center, the food discharging information is single processing completion information or food processing completion information, the control center receives the food discharging information, the food discharging information comprises corresponding food names, when the food discharging information is received, the control center obtains oil level information placed by the liquid level detection terminal, judges the oil level information and determines whether oil supplement is needed or not. Therefore, the frying oven body can process the food in sequence, and whether oil supplement is needed or not is judged in the gap between every pot of food processing.
If oil is needed to be supplemented, the control center automatically controls the frying oven body to supplement oil, after oil is supplemented, the edible oil is heated according to the processing temperature of the food name corresponding to the currently processed food until the edible oil is heated to the processing temperature, and the processing is continued.
In one embodiment, the phenomenon of taint of taste of foods corresponding to food names with different tastes is considered in the processing process. After the food names with the same taste information are put together by the control center, the food names corresponding to the same taste information are arranged from low to high according to the corresponding processing temperature.
If the food discharging information sent to the control center by the frying oven body is the food processing completion information, the food processing completion information comprises the name of the added food. And after the control center receives the food processing completion information and indicates that food corresponding to one food name is processed, the control center inquires the next food name in the food processing list according to the processed food name. The control center judges whether the taste information corresponding to the inquired food name is the same as the taste information of the processed food name or not, if so, the oil level information sent by the liquid level detection terminal is obtained, and oil is supplemented according to the oil level information until the standard oil level is reached; otherwise, outputting an oil change instruction, wherein the oil change instruction refers to information that oil in the oil pan is emptied and new oil is changed into the oil pan, so that the oil level of the new oil in the oil pan reaches a standard oil level, and the possibility of tainting odor among foods with different tastes in the processing process is reduced.
It should be noted that if the food discharge information sent by the fryer body is single-process completion information including the name of the food which is completely added, the oil supplement information is output until the oil level reaches the standard oil level.
In still another embodiment, it is considered that when the amount of food corresponding to the name of each taste is small, the oil pan may need to be frequently drained and replaced with new oil, thereby easily causing waste of edible oil. When the control center receives food discharging information, the oil quality information sent by the oil quality detection terminal is obtained, the oil quality information comprises parameter values corresponding to oil quality parameters, the oil quality detection terminal can be an edible oil detector, the oil quality parameters can comprise oil quality parameters including acid value, peroxide value, purity and the like, and the control center compares the parameter values corresponding to the oil quality parameters with preset parameter threshold values corresponding to the oil quality parameters.
If the food discharging information is single-time processing completion information and the parameter values corresponding to all the oil quality parameters are within the parameter threshold value, outputting oil supplementing information; otherwise, outputting an oil change instruction, and changing new oil into the oil pan so that the oil level of the new oil in the oil pan reaches the standard oil level.
If the food discharging information is food processing completion information, the control center determines that the taste information corresponding to the name of the next processed food is different from the taste information of the processed food name, if the parameter values corresponding to all the oil quality parameters do not reach the parameter threshold value, a storage instruction is output to the frying furnace body, the storage instruction comprises the taste information of the processed food name, then an oil changing instruction is output to the frying furnace body, the frying furnace body stores the reused oil in the oil pan, and new oil is added after the oil pan is emptied; otherwise, directly outputting an oil change instruction, directly emptying the oil pot by the frying furnace body, and adding new oil. The frying stove body stores the edible oil according to the storage instruction so as to be convenient for reuse, thereby reducing the waste of the edible oil caused by oil change and ensuring the food safety to a certain extent.
In another embodiment, considering the case that the fryer body needs to be controlled to reuse the stored reused oil at a proper time, after the control center outputs the storage command to the fryer body each time, a reused oil storage record is generated, wherein the reused oil storage record comprises taste information corresponding to the reused oil and the oil supplementing amount of the oil needed for supplementing the oil amount of the reused oil to the standard oil amount. And when the control center determines that the taste information corresponding to the name of the food processed next is different from the taste information of the name of the processed food, the control center inquires the multiplex oil storage record corresponding to the taste information. If the corresponding storage record of the reused oil can be inquired, outputting the used information of the reused oil to the frying oven body; otherwise, directly outputting an oil change instruction. The method comprises the steps of controlling a frying oven body to automatically call out stored multiplexing oil with the same taste information, adding the multiplexing oil into an oil pan, outputting an oil supplementing instruction to the frying oven body, mixing new oil with the multiplexing oil to enable the oil quantity in the oil pan to reach a standard oil quantity, and deleting corresponding multiplexing oil storage records by a controller after the multiplexing oil use information is output to the frying oven body. Whenever grease is stored, a multiplexed oil storage record is generated.
In one embodiment, when the oil quality of the reused oil is considered to be close to the unusable oil quality, if the new oil is added to supplement the standard oil level, the mixed oil is obtained, and the usable time of the mixed oil is short, so that the waste of the added new oil is easily caused. And when the control center acquires and stores the oil quality information of the multiplex oil sent by the oil quality detection terminal, the control center records the acquisition time corresponding to the oil quality information. The control center obtains a preset initial parameter value corresponding to the oil quality parameter of the unused grease.
The control center obtains the parameter value variable quantity of each grease parameter according to the parameter value in the oil quality information of the multiplexing oil and the stored parameter value in the oil quality information of the last multiplexing oil; the control center calculates the time length of the multiplexed oil before the time corresponding to the grease information of the time and the time corresponding to the previous oil information as the parameter change duration of the multiplexed oil; and obtaining the parameter change rate according to the parameter value change quantity and the calculated parameter change duration. And the control center calculates a mixed oil parameter value corresponding to the oil parameter of the mixed oil obtained by mixing the grease with the residual oil quantity and the grease with the oil supplementing quantity according to the initial parameter value, the oil supplementing quantity, the residual oil quantity and the oil parameter value in the oil information. The single mixed oil parameter value may be calculated by the mixed oil parameter value = (initial parameter value x oil supplement amount + oil quality parameter value x mixed oil amount)/(oil supplement amount + remaining oil amount).
And respectively calculating the time required by each grease parameter corresponding to the mixed oil to reach the parameter threshold value by the control center according to the obtained parameter value change rate, and selecting the minimum time from the calculated time as the available time of the mixed oil. If the usable time of the mixed oil is longer than a preset time threshold, outputting a storage instruction of the reused oil to the frying furnace body, and then outputting an oil change instruction; otherwise, directly outputting an oil change instruction to the using terminal, automatically emptying the edible oil in the oil pan, and changing the edible oil into new oil.
In another embodiment, the condition that whether the reused oil is not accurately reserved or not is judged according to whether the available time of the mixed oil is greater than the preset time threshold value or not is considered. And recording the time when the oil is output as the oil updating time when the control center outputs an oil change or oil supplement instruction. And the control center calculates the time length between the previous grease updating time of the time distance corresponding to the grease information as the using time length of the multiplexing oil, adds the using time length of the multiplexing oil to the available time length of the mixed oil to obtain the total multiplexing using time length of the multiplexing scheme for storing the multiplexing oil at the moment and reusing the multiplexing oil. The reuse oil is the standard oil mass before using, reaches the residual oil mass after using, adds the oil supply mass when multiplexing and makes and reach the standard oil mass again, therefore the reuse total oil mass of multiplexing scheme is oil supply mass plus standard oil mass. And then the multiplexing total oil quantity is divided by the multiplexing total using time length to obtain the multiplexing unit time oil consumption quantity of the multiplexing scheme.
In the scheme of directly replacing the new oil by discharging the reused oil, because the oil quantity of the newly replaced new oil is the standard oil quantity, the total oil replacement oil quantity is equal to the standard oil quantity plus the standard oil quantity, the control center can respectively calculate the time required by each oil parameter corresponding to the new oil to reach the parameter threshold according to the preset initial parameter value corresponding to the oil quality parameter of the new oil and the change rate of the parameter value, select the minimum time from the calculated time as the available time of the new oil, and then add the available time of the new oil to the use time of the reused oil to obtain the total oil replacement use time of the oil replacement scheme. And finally, dividing the obtained total oil change amount by the total use time of oil change to obtain the oil consumption of the oil change scheme in unit time. Comparing the oil consumption of the reuse unit time with the oil consumption of the oil change unit time, and if the oil consumption of the oil change unit time is larger than the oil consumption of the reuse unit time, indicating that compared with the scheme of directly changing new oil, the scheme of adding part of new oil by using the reuse oil is more oil-saving, outputting a reuse oil storage instruction to the frying furnace body so as to reuse the reuse oil; otherwise, directly outputting an oil change instruction, draining the reused oil and changing the reused oil into new oil.
In another embodiment, considering that some edible oil for processing is in a solid state initially, the edible oil needs to be melted, and the user puts the solid edible oil into the oil pan and then outputs an oil melting request to the control center through the display screen, wherein the oil melting request includes an oil name. And the control center inquires the oil melting temperature corresponding to the name of the oil in the oil melting request in a preset oil information database, and then outputs an oil melting instruction, wherein the oil melting instruction comprises the inquired oil melting temperature. The oil name in the oil information database is stored with the melting temperature, the melting temperature and the boiling temperature in an associated manner.
The control center obtains oil level information sent by the liquid level detection terminal and calls historical oil level information sent by the liquid level detection terminal within a preset time range. And if the oil level in the historical oil level information is in an ascending or descending trend, outputting a prompt in the molten oil through a display screen. When the liquid level detection terminal detects the height of the liquid oil in the oil melting process, the oil level height of the liquid oil is increased along with melting, which indicates that the grease is still molten; if the temperature of the solid oil in the oil melting process is measured according to the position relation of the liquid level detection terminal, the height of the solid oil is reduced along with melting, so that the liquid level detection terminal is suitable for different conditions. And the control center calculates the variance of the oil level obtained within a preset time range, if the obtained variance is within an error threshold, the oil level is stable, namely the grease is completely melted, and the information of oil melting completion is output through the display screen at the moment, so that automatic oil melting is realized.
According to the automatic control method for food processing, each time processing is finished, the control center controls the oil quality detector to detect the oil quality of the oil in the oil pan, unqualified oil is automatically discharged, qualified oil is measured on the liquid level, and oil is automatically supplemented if the liquid level is too low; when the control center detects that the taste information of the next food to be processed is changed, the oil can be automatically changed, if the oil in the oil pan can still be used continuously, the oil is stored, and after the oil in the oil pan is emptied, new edible oil is supplemented; if the oil can not be used continuously, the oil in the oil pan is drained, and the oil is supplemented. When the edible oil in the oil pan can be stored for reuse, the control center can determine a scheme with less oil consumption in two schemes of using the reused oil and using the new oil through calculation, so that the cost is reduced.
