Description
Technical Field
The invention relates to the field of foods, in particular to DHA algae oil pressure tablet candies capable of reducing oxidation and a preparation method thereof.
Background
DHA: docosahexaenoic acid (DHA), commonly known as NAOHUANGJIN, is a major polyunsaturated fatty acid in human organs and tissues such as brain and retina, and DHA algae oil is prepared from marine microalgae by fermenting, separating, and purifying with Schizochytrium sp. The DHA grease is treated by the microcapsule technology and then is sprayed by the dry process to prepare powder, so that the storage stability is improved, and the bad smell of the grease is reduced.
The tablet is one of dry-process forming of candy or tablet, and can be prepared by tabletting one or more substances by special tabletting equipment. Gel candy (soft capsule): is a capsule product prepared by processing and sealing liquid raw materials or liquid solid raw materials in a soft capsule material. The soft capsule wall material is prepared from gelatin, glycerol or other suitable adjuvants alone or in combination.
The major products of DHA on the market are now in the form of gel candies (or soft capsules), and the main disadvantages of these products are: 1. the food is inconvenient to eat, and consumers need to open capsule shells and suck contents when eating the food, and the food is especially inconvenient for children; 2. the algae oil DHA has unpleasant smell such as fishy smell, and is a greasy product when being eaten, so the algae oil DHA tastes greasy and has unpleasant smell; 3. is easy to oxidize, and as the DHA in the algae oil belongs to unsaturated fatty acid, the DHA is easy to oxidize. The gel candy (or soft capsule) product is easy to be oxidized in shelf life. Therefore, it is urgently needed to provide a product which is convenient to carry and has better taste.
Disclosure of Invention
In order to solve the technical problems, the invention provides the DHA algae oil tabletting candy capable of reducing oxidation, which has the advantages of convenience in carrying, good taste, reduction of oxidation and the like.
The technical scheme provided by the invention is as follows:
the DHA algae oil tablet candy capable of reducing oxidation is prepared from the following components in parts by mass: 50-800 parts of DHA algae oil powder (20% of Anhui Kjeldahl DHA algae oil microcrystalline embedding powder), 0-800 parts of white granulated sugar, 100-800 parts of isomaltulose, 100-800 parts of fruit powder, 1-10 parts of sodium carboxymethylcellulose, 0-200 parts of sorbitol, 0-100 parts of magnesium stearate and 0-100 parts of microcrystalline cellulose.
The DHA algae oil powder is DHA algae oil microcrystal embedding powder, wherein the mass ratio of DHA (docosahexaenoic acid) in the total powder is 20%, and the DHA algae oil powder also comprises whey protein powder (whey protein concentrate, whey protein isolate), lactose, sodium citrate, sodium ascorbate, DHA essential oil, mono-diglycerol fatty acid ester, phospholipid, ascorbyl palmitate, vitamin E and tricalcium phosphate.
The invention also provides a preparation method of the DHA algae oil tabletting candies capable of reducing oxidation, which comprises the steps of mechanically pulverizing and sieving granular raw materials, transferring the granular raw materials into a raw material transfer bag, weighing the raw materials according to the formula amount, putting the raw materials into a mixer in sequence, fully mixing to obtain a semi-finished product, sampling and detecting the semi-finished product, putting the semi-finished product into a feed hopper after the semi-finished product meets the standard, tabletting, and packaging to obtain the DHA algae oil tabletting candies capable of reducing oxidation.
Further, the finished product is prepared into granules which can be used for tabletting.
Further, the raw materials were put into a blender in order and mixed thoroughly for 20 minutes.
Further, the semi-finished product detection indexes comprise moisture and microorganisms.
Further, the granular raw materials are mechanically pulverized and then sieved by a 80-mesh sieve.
Further, the preparation method of the DHA algae oil powder comprises the following steps: the raw materials comprise a packaging material, an antioxidant, a pH value regulator, primary water, DHA algae oil and an emulsifier, the raw materials of an oil phase and a water phase are independently blended and dissolved, the raw materials are pasteurized, mixed and sheared at a high speed, then homogenized, the homogenized emulsion is spray-dried to obtain microcapsule powder, and an anticaking agent is added and premixed to obtain algae oil powder.
Furthermore, the mass ratio of the DHA in the DHA algae oil powder in the total powder is 20%,
