Abstract
The invention provides a liquor making system, a liquor beating system, a liquor making method and a liquor beating method. The manufacturing system includes: the device comprises a fermentation device, a refrigeration device, a control device, an air source device and a wine outlet device; wherein, the fermentation device is pre-filled with wine making raw materials or finished wine; the refrigerating device is directly or indirectly connected with the fermentation device and is also electrically connected with the control device; the air source device is connected with the fermentation device to adjust the pressure in the fermentation device and also provide the pressure of wine for the fermentation device; the wine outlet device is connected with the fermentation device to guide out the wine made in the fermentation device to finish wine outlet. According to the invention, the fermentation device with the wine making raw materials is preset, so that the problems that the fermentation tank in the existing household brewing equipment needs to be cleaned, the operation is troublesome, the wine is easily infected by bacteria due to incomplete cleaning, the design is complex, and the cost is high are solved.

Technical Field

Background
With the development of science and technology and the improvement of the consumption level of people, more and more people like brewing at home, the making process of beer is complex, the used raw materials are barley malt, hop and yeast, the preparation process of wort is divided into saccharification, filtration, spent grain washing, wort collection, boiling, rotary precipitation and cooling, the fermentation control generally lasts for about 7-30 days, and the temperature control requirement is strict.
At present, some household beer brewing equipment is provided, but the design of some products needs to clean a fermentation tank, which brings troubles to users, and can not ensure that the users clean and disinfect the fermentation tank, which can cause beer bacterial contamination. The operation process has more control points and is complicated to operate. Microbial management and control in multiple links may be risky and can only be manually used by professional users. Still other products are complex in design and very costly.
Disclosure of Invention
The invention provides a wine making system, a wine beating system, a wine making method and a wine beating method, and aims to solve the problems that fermentation tanks in existing household brewing equipment need to be cleaned, operation is troublesome, wine is easy to contaminate due to incomplete cleaning, design is complex, and cost is high.

the gas source device is connected with the fermentation device to adjust the pressure in the fermentation device and provide the pressure of wine for the fermentation device;
the wine outlet device is connected with the fermentation device so as to lead out the wine after the wine is made in the fermentation device, and the wine outlet is completed.

Preferably, the fermentation apparatus further comprises: the heat preservation module is directly or indirectly wrapped on the outer wall of the fermentation barrel.
Preferably, the fermentation barrel is a disposable fermentation barrel; and/or the fermentation barrel cover is a disposable fermentation barrel cover.
Preferably, the gas source device comprises: the gas cylinder, the pressure reducing regulating valve and the safety valve; wherein,
the gas cylinder is connected with the fermentation device to provide the fermentation device with the pressure for wine output;

According to a third aspect of the present invention, there is provided an alcoholic beverage producing method in which an alcoholic beverage producing raw juice is placed in a fermentation apparatus, the method including:
confirming the variety of the raw material juice for preparing the alcoholic beverages in the fermentation device, the strain required by the fermentation and the fermentation temperature;
opening the fermentation device, adding the strain into the fermentation device, covering the fermentation device by a fermentation barrel cover connected with an air source device, and shaking the fermentation device;
starting fermentation, wherein in the fermentation process, the fermentation temperature of the fermentation device is controlled according to the fermentation temperature, and the pressure in the fermentation device is regulated through the air source device;
and (5) completing fermentation.
According to a fourth aspect of the present invention, there is provided another method of producing alcoholic beverages, in which an alcoholic beverage-producing concentrated raw juice is placed in a fermenter in advance, the method including:
confirming the variety of the raw material juice for making the alcoholic drinks in the fermentation device, the pure water amount required by fermentation, the strain and the fermentation temperature;
opening the fermentation device, adding purified water into the fermentation device according to the pure water amount, closing the fermentation device, and shaking the fermentation device;
opening the fermentation device, adding a strain into the fermentation device, covering the fermentation device through a fermentation barrel cover connected with an air source device, and shaking the fermentation device;
starting fermentation, wherein in the fermentation process, the fermentation temperature of the fermentation device is controlled according to the fermentation temperature, and the pressure in the fermentation device is regulated through the air source device;
and (5) completing fermentation.
According to a fifth aspect of the present invention, there is provided a liquor dispensing method in which an alcoholic liquor is placed in a liquor storage device, the method comprising:
opening the wine storage device, and covering the fermentation device through a fermentation barrel cover connected with a gas source device and a wine outlet device;
controlling the temperature in the wine storage device until the wine storage temperature is reached;
and under the pressure action of the air source device, the wine is ejected from the wine outlet device.
According to the wine making system, the wine beating system, the wine making method and the wine beating method, wine making raw materials are preset in the fermentation device, and the wine making raw materials are already arranged in the fermentation device which is directly bought by a user, so that the process that the fermentation tank needs to be cleaned and sterilized in the traditional household brewing equipment is omitted, the probability that bacteria contamination and fermentation failure are caused due to the fact that the fermentation tank is not completely sterilized by manual cleaning and sterilization is greatly reduced, and the operation of the user is very simple and convenient.
According to the wine making system, the wine beating system, the wine making method and the wine beating method, the wine is pre-arranged in the wine storage device, the wine is already arranged in the wine storage device which is directly bought by a user, and the wine is discharged after the wine storage device is cooled by the refrigerating device and is used as the household wine beating machine.
In one alternative of the invention, the disposable fermentation barrel cover and the wine feeding pipe are adopted, so that the step of cleaning the machine pipeline is omitted, and the probability of bacteria contamination and fermentation failure caused by the fact that manual cleaning and disinfection are not carried out cleanly is further reduced.

Wherein, the fermentation device 1 is pre-filled with wine making raw materials; the refrigerating device 2 is detachably connected with the fermentation device 1 directly or indirectly, and the refrigerating device 2 is also electrically connected with the control device 3; the gas source device 4 is connected with the fermentation device 1 to adjust the pressure in the fermentation device and also provide the pressure of wine for the fermentation device; the wine outlet device is connected with the fermentation device to guide out the wine made in the fermentation device to finish wine outlet.
In the above embodiment, the wine making raw materials are preset in the fermentation device 1 purchased by the user, the process of cleaning and disinfecting the fermentation tank in the traditional household brewing equipment is omitted, the fermentation can be started by directly adding the strains into the fermentation device 1, the probability of bacterial contamination and fermentation failure caused by the fact that the manual cleaning and disinfection are not carried out is greatly reduced, and the operation is simple and convenient.
In a preferred embodiment, the fermentation device 1 comprises: a fermentation barrel 11, a fermentation barrel cover 12, an upper air pipe 13, an upper wine pipe 14, a temperature sensor 15 and a refrigeration medium module 16, please refer to fig. 2. Wherein, the fermentation barrel 11 is pre-filled with wine making raw materials; the fermentation barrel cover 12 is detachably connected to the fermentation barrel to seal the fermentation barrel; an upper air pipe hole and an upper wine pipe hole are formed in the fermentation barrel cover 12, the upper air pipe 13 is inserted into the upper air pipe hole to convey the air of the air source device 4 into the fermentation barrel 11, and the upper wine pipe 14 is inserted into the upper wine pipe hole to convey the wine which is manufactured in the fermentation barrel 11 to the wine outlet device 5. The temperature sensor 15 is used for detecting the temperature in the fermentation barrel, and the temperature sensor 15 is electrically connected with the control device 3. The refrigerating medium module 16 is detachably connected to the fermentation vat 11, and the cooling medium delivered by the refrigerating device 2 can circulate in the refrigerating medium module 16 to cool the fermentation vat 11.
In one embodiment, the temperature sensor 15 can be installed on the outer wall of the fermentation barrel 11, please refer to fig. 2. Temperature sensor 15 easy to assemble like this, and can used repeatedly, can be used for the detection of the temperature of different fermentation vats, can reduce cost.
In one embodiment, the refrigeration media module 16 may be in the form of a refrigeration jacket through which the media delivered from the refrigeration unit 2 may be circulated. The refrigeration jacket can surround the periphery of the outer wall of the fermentation barrel 11, and can also only wrap a part of the outer wall of the fermentation barrel.
In different embodiments, the refrigerant medium module 16 may also take the form of a refrigerant pipe, in which the refrigerant medium supplied from the refrigeration device 2 is circulated. The refrigeration pipe can be annularly wound on the outer wall of the fermentation barrel 11, and can also be distributed on the outer wall of the fermentation barrel 11 in other forms.
In a preferred embodiment, the fermentation apparatus 1 further comprises: the heat preservation module is directly or indirectly wrapped on the outer wall of the fermentation barrel.

The pressure-reducing regulating valve is arranged at a gas outlet of the gas bottle and is electrically connected with the control device so as to receive pressure information sent by the control device and control the pressure output by the gas outlet according to the pressure information, namely the pressure transmitted to the fermentation device 1. The safety valve is arranged in the fermentation device 1 to control the pressure in the fermentation device 1, when the pressure in the fermentation device exceeds the preset pressure, the safety valve automatically opens to exhaust and release the pressure, and when the pressure in the fermentation device is lower than the preset pressure, the safety valve closes.
In one embodiment, a refrigeration device comprises: a refrigerator and a cold quantity adjusting module. Wherein, the refrigerator is detachably connected with the fermentation device directly or indirectly; the cold quantity adjusting module is connected with the refrigerating machine and is also electrically connected with the control device so as to receive the refrigerating capacity information sent by the control device and adjust the refrigerating capacity of the refrigerating machine according to the refrigerating capacity information, thereby controlling the temperature of the fermentation device 1.
In one embodiment, the wine dispensing device comprises: one-way valves and wine heads. The wine head is connected with the fermentation device through the one-way valve, wine made in the fermentation device can be conveyed to the wine head through the one-way valve, but air outside the wine head cannot enter the fermentation device through the one-way valve.
In one embodiment, the wine making system further comprises: the formula label recognition device is arranged on the fermentation device and is also electrically connected with the control device so as to send the stored formula information to the control device. The control device can automatically identify the formula and the corresponding process requirements so as to control the fermentation process according to the corresponding process requirements.

Wherein, the wine storage device is pre-filled with wine; the refrigerating device is directly or indirectly connected with the wine storage device and is also electrically connected with the control device; the air source device is connected with the wine storage device to adjust the pressure in the wine storage device and provide the wine outlet pressure for the wine storage device; the wine outlet device is connected with the wine storage device to guide out the wine in the wine storage device to finish wine outlet.
In one embodiment, the structure of the wine storage device can be the same as the fermentation device in the above embodiments, and the description is omitted, except that directly drinkable wine is contained in the wine storage device, and fermentation is not needed.
In an embodiment, the refrigerating device, the air source device, and the wine outlet device in the wine making system may be the same as those in the wine making system in the above embodiments, and are not described herein again.
In one embodiment, there is provided an alcoholic beverage production method in which an alcoholic beverage production raw juice is pre-set in a fermentation apparatus, and fermentation can be started by adding a strain to the alcoholic beverage production raw juice, the production method including:
confirming the variety of raw material juice for making the alcoholic drinks in the fermentation device, the strain required by the fermentation and the fermentation temperature;
opening the fermentation device, adding the strain into the fermentation device, covering the fermentation device by a fermentation barrel cover connected with an air source device, and shaking the fermentation device;
starting fermentation, wherein in the fermentation process, the fermentation temperature of the fermentation device is controlled according to the fermentation temperature, and the pressure in the fermentation device is regulated through the air source device;
and (5) completing fermentation.
The following examples are made by taking the raw material juice for wine production as the wort:
the method specifically comprises the following steps: (1) firstly, selecting a wort fermentation barrel and a strain which are selected and purchased for the kind of beer to be fermented;
(2) operating a formula label identification module to enable a machine to identify the variety of wort and the required fermentation process; or manually selecting the variety of the wort and the required fermentation process, or manually inputting the variety of the wort and the required fermentation process.
(3) Unscrewing a wort fermentation barrel, adding strains into wort, and connecting a fermentation barrel cover (the fermentation barrel cover needs to be connected with an upper air pipe, and when wine needs to be discharged, a wine outlet pipe needs to be connected); screwing down the fermentation barrel cover, and shaking the wort fermentation barrel, thereby realizing oxygenation and inoculation of wort. And when the connection condition is checked and no leakage is found, connecting the wort fermentation barrel with a refrigerating device.
(4) And (3) starting fermentation, wherein the fermentation temperature is automatically controlled by a refrigerating device in the fermentation process (the temperature in the fermentation process is regulated according to the temperature requirement in the fermentation process). The safety valve automatically exhausts gas in the fermentation process to control the fermentation pressure in the fermentation barrel. Such as: taking German wheat juice as an example, the fermentation temperature is as follows: fermenting at 18 deg.C for 7 days, and refrigerating at 4 deg.C for 10 days; the safety valve automatically exhausts air in the fermentation process, and the fermentation pressure in the fermentation barrel is controlled to be maintained at 0.09 mpa.
(5) And (5) completing fermentation.
(6) If the beer needs to be discharged, the fresh-brewed beer can be brewed through the beer discharging device, if the pressure in the fermentation barrel is insufficient and lower than the set value of the pressure reducing regulating valve, the pressure reducing valve regulating valve is automatically opened, and the gas in the gas bottle automatically enters the fermentation barrel. If no wine is produced, the process automatically enters the wine storage process.
In one embodiment, the alcoholic beverage production raw juice may be an alcoholic beverage production raw juice that can be fermented into an alcoholic beverage, such as fruit juice.
In a preferred embodiment, during the wort fermentation process, when the temperature is abnormal, alarm information prompt and/or indicator light prompt can be carried out.
In one embodiment, there is provided another method for producing alcoholic beverages, in which a fermented barrel is pre-filled with an alcoholic beverage-producing concentrated raw juice, and pure water is added to dilute the alcoholic beverage-producing concentrated raw juice before adding a strain to ferment, the method comprising:
confirming the variety of the raw material juice for making the alcoholic drinks in the fermentation device, the pure water amount required by fermentation, the strain and the fermentation temperature;
opening the fermentation device, adding purified water into the fermentation device according to the pure water amount, closing the fermentation device, and shaking the fermentation device;
opening the fermentation device, adding a strain into the fermentation device, covering the fermentation device through a fermentation barrel cover connected with an air source device, and shaking the fermentation device;
starting fermentation, wherein in the fermentation process, the fermentation temperature of the fermentation device is controlled according to the fermentation temperature, and the pressure in the fermentation device is regulated through the air source device;
and (5) completing fermentation.
The following examples are given by taking concentrated liquor as an alcoholic liquor making raw material as an example of malt extract:
the method specifically comprises the following steps: (1) firstly, selecting a wort fermentation barrel, a strain and hops (if any) selected from the types of beer to be fermented;
(2) unscrewing a malt extract fermentation barrel, adding bottled purified water to scale marks, screwing a bottle cap, shaking the wort barrel to fully mix malt extract, adding strains and hops, screwing the bottle cap again, shaking the fermentation barrel to mix uniformly, and obtaining wort for fermentation in one barrel.
(3) Operating a formula label identification module to enable a machine to identify the variety of wort and the required fermentation process; or manually selecting the variety of the wort and the required fermentation process, or manually inputting the variety of the wort and the required fermentation process.
(4) Unscrewing the fermentation barrel, and connecting the fermentation barrel cover (the fermentation barrel cover needs to be connected with an upper air pipe, and when wine needs to be discharged, a wine outlet pipe needs to be connected); screwing the fermentation barrel cover, and shaking the fermentation barrel, thereby realizing the oxygenation and inoculation of the wort. And when the connection condition is checked and no leakage is found, connecting the fermentation barrel with a refrigerating device.
(5) And (3) starting fermentation, wherein the fermentation temperature is automatically controlled by a refrigerating device in the fermentation process (the temperature in the fermentation process is regulated according to the temperature requirement in the fermentation process). The safety valve automatically exhausts gas in the fermentation process to control the fermentation pressure in the fermentation barrel.
(6) And (5) completing fermentation.
(7) If the beer needs to be discharged, the fresh-brewed beer can be brewed through the beer discharging device, if the pressure in the fermentation barrel is insufficient and lower than the set value of the pressure reducing regulating valve, the pressure reducing valve regulating valve is automatically opened, and the gas in the gas bottle automatically enters the fermentation barrel. If no wine is produced, the process automatically enters the wine storage process.
In one embodiment, the concentrated alcoholic beverage producing material may be a concentrated alcoholic beverage producing material such as concentrated fruit juice that can be fermented into an alcoholic beverage.
In one embodiment, there is provided a method for dispensing wine, in which a wine is pre-placed in a wine storage device, comprising:
opening the wine storage device, and covering the fermentation device through a fermentation barrel cover connected with a gas source device and a wine outlet device;
controlling the temperature in the wine storage device until the wine storage temperature is reached;
and under the pressure action of the air source device, the wine is ejected from the wine outlet device.

Claims (12)
1. A wine making system, comprising: the device comprises a fermentation device, a refrigeration device, a control device, an air source device and a wine outlet device; wherein,
wine making raw materials are preset in the fermentation device;
the refrigerating device is directly or indirectly connected with the fermentation device, and is also electrically connected with the control device;
the gas source device is connected with the fermentation device to adjust the pressure in the fermentation device and provide the pressure of wine for the fermentation device;
the wine outlet device is connected with the fermentation device so as to lead out the wine after the wine is made in the fermentation device, and the wine outlet is completed.
2. The wine making system of claim 1, wherein the fermentation device comprises: the device comprises a fermentation barrel, a fermentation barrel cover, an air feeding pipe, a wine feeding pipe, a temperature sensor and a refrigeration medium module; wherein,
wine making raw materials are pre-placed in the fermentation barrel;
the fermentation barrel cover is detachably connected to the fermentation barrel so as to seal the fermentation barrel;
an upper air pipe hole and an upper wine pipe hole are formed in the fermentation barrel cover, the upper air pipe is inserted into the upper air pipe hole so as to convey the gas of the gas source device into the fermentation barrel, and the upper wine pipe is inserted into the upper wine pipe hole so as to convey the wine which is manufactured in the fermentation barrel into the wine outlet device;
the temperature sensor is used for detecting the temperature in the fermentation barrel and is electrically connected with the control device;
the refrigerating medium module is detachably connected to the fermentation barrel, and the cooling medium conveyed by the refrigerating device can circulate in the refrigerating medium module so as to cool the fermentation barrel.
3. The wine making system of claim 2, wherein the fermentation device further comprises: the heat preservation module is directly or indirectly wrapped on the outer wall of the fermentation barrel.
4. The wine making system of claim 2, wherein the fermenter is a disposable fermenter; and/or the fermentation barrel cover is a disposable fermentation barrel cover.
5. The wine making system of claim 1, wherein said air supply means comprises: the gas cylinder, the pressure reducing regulating valve and the safety valve; wherein,
the gas cylinder is connected with the fermentation device to provide the fermentation device with the pressure for wine output;
the pressure reducing regulating valve is arranged at a gas outlet of the gas cylinder and is electrically connected with the control device so as to receive pressure information sent by the control device and control the pressure output by the gas outlet according to the pressure information;
the safety valve is arranged on the fermentation device to control the pressure in the fermentation device.
6. The wine making system of claim 1, wherein the refrigeration device comprises: a refrigerator and a cold quantity adjusting module; wherein,
the refrigerator is detachably connected with the fermentation device directly or indirectly;
the refrigerating capacity adjusting module is connected with the refrigerating machine and is also electrically connected with the control device so as to receive the refrigerating capacity information sent by the control device and adjust the refrigerating capacity of the refrigerating machine according to the refrigerating capacity information.
7. The wine making system of claim 1, wherein the wine dispensing device comprises: one-way valves and wine heads; wherein,
the wine head is connected with the fermentation device through the one-way valve, and the one-way valve is configured to: the wine made in the fermentation device can pass through the one-way valve, and the air outside the wine head can not pass through the one-way valve.
8. The wine making system of claim 1, further comprising: the formula label recognition device is arranged on the fermentation device and is also electrically connected with the control device so as to send the stored formula information to the control device.
9. A wine dispensing system, comprising: the wine storage device, the refrigerating device, the control device, the air source device and the wine outlet device; wherein,
the wine storage device is pre-filled with wine;
the refrigerating device is directly or indirectly connected with the wine storage device and is also electrically connected with the control device;
the gas source device is connected with the wine storage device to adjust the pressure in the wine storage device and provide the wine outlet pressure for the wine storage device;
the wine outlet device is connected with the wine storage device to guide out the wine in the wine storage device to finish wine outlet.
10. The wine making method is characterized in that wine making raw material juice is preset in a fermentation device, and the method comprises the following steps:
confirming the variety of the raw material juice for preparing the alcoholic beverages in the fermentation device, the strain required by the fermentation and the fermentation temperature;
opening the fermentation device, adding the strain into the fermentation device, covering the fermentation device by a fermentation barrel cover connected with an air source device, and shaking the fermentation device;
starting fermentation, wherein in the fermentation process, the fermentation temperature of the fermentation device is controlled according to the fermentation temperature, and the pressure in the fermentation device is regulated through the air source device;
and (5) completing fermentation.
11. The wine making process features that concentrated wine material juice set inside the fermenting barrel includes the following steps:
confirming the variety of the raw material juice for making the alcoholic drinks in the fermentation device, the pure water amount required by fermentation, the strain and the fermentation temperature;
opening the fermentation device, adding purified water into the fermentation device according to the pure water amount, closing the fermentation device, and shaking the fermentation device;
opening the fermentation device, adding a strain into the fermentation device, covering the fermentation device through a fermentation barrel cover connected with an air source device, and shaking the fermentation device;
starting fermentation, wherein in the fermentation process, the fermentation temperature of the fermentation device is controlled according to the fermentation temperature, and the pressure in the fermentation device is regulated through the air source device;
and (5) completing fermentation.
12. A wine beating method is characterized in that a wine is preset in a wine storage device, and the wine beating method comprises the following steps:
opening the wine storage device, and covering the fermentation device through a fermentation barrel cover connected with a gas source device and a wine outlet device;
controlling the temperature in the wine storage device until the wine storage temperature is reached;
and under the pressure action of the air source device, the wine is ejected from the wine outlet device.
