A method for preparing dehydrated frozen vegetables comprises: the method comprises the following steps:
s1, selecting and pre-cleaning raw materials: selecting the cucurbit with uniform shape, orange red color and smooth epidermis as a raw material, soaking and cleaning the selected cucurbit in saline water, soaking for five minutes in the saline water, then removing spots on the surface of the cucurbit, sludge, root hairs, outer skins, green tops and yellow cores in stems of the cucurbit, and finally washing the cucurbit with flowing water;
