A production method of special-shaped nutritional coarse cereal noodles comprises the following preparation steps:
A. mixing wheat flour, sorghum flour, tartary buckwheat flour, oat flour, black bean flour, millet flour, chestnut flour and yam flour in proportion to obtain mixed flour;
B. introducing the mixed powder into a dough mixer, adding yeast and water according to a conventional amount, and stirring to prepare mixed dough;
C. guiding the mixed dough out of the dough mixer, placing the dough in a curing box with the temperature controlled between 23 ℃ and 35 ℃ for standing and curing;
D. introducing the cooked mixed dough into a sheet binding machine, and treating the mixed dough by the sheet binding machine to obtain a dough sheet with the thickness of 0.85 mm-1.25 mm;
E. introducing the dough sheet into a special-shaped coarse cereal noodle processing device for irregular punching processing;
F. guiding the perforated dough sheet into a slitter, and outputting noodles with the width of 2.5-3 mm after the treatment of the slitter;
G. the noodles are sent into a drying chamber for drying treatment, so that the water content of the noodles is 13.0-13.5%;
H. and cutting the dried noodles into pieces with the same length, weighing, packaging and warehousing.
