I型卡拉胶/K型卡拉胶共混物的最佳卡拉胶比率为0.88:2.62。

泡沫高度
泡沫高度测试是客观量化发泡性能的一种有价值的方法。其由翻滚仪器执行以确保再现性。该方法涉及用90g水和10g产品将滚筒倒置达32个循环。在2、4、8、16和32个循环之后收集数据。
更多的泡沫是优选的。
快速发泡是重要的。

实施例
脱水收缩实验方法
1.形成批量并倾倒(2)半球形样品，使其完全冷却。
2.一旦冷却，便记录质量。
a.如果是露天测试，则继续步骤3-11。
b.如果是封闭测试，则转到步骤12。
3.取一个标准压舌板并记录其质量。
4.将压舌板刺穿其中一个胶状物，使得棒状物与半球的平坦侧平行。

6.将压舌板放在400mL烧杯的整个口中，因此胶状物悬浮在空气中。
