Abstract
本发明提供了一种用于提高牦牛肉中n‑3多不饱和脂肪酸的营养调控方法。具体为:将裂殖壶藻添加于牦牛日粮中,能够显著增加牦牛肉中多不饱和脂肪酸、ω‑3多不饱和脂肪酸的含量,降低ω‑6/ω‑3不饱和脂肪酸的比例,同时,还可提高牦牛的持水能力,降低牦牛的料重比。本发明可以改变牦牛肉中脂肪酸的组成,有助于ω‑3多不饱和脂肪酸的沉积,改善牦牛肉的品质,提高牦牛的营养价值和经济效益。

技术领域
本发明涉及畜牧业领域,具体涉及一种提高牦牛肉中ω-3多不饱和脂肪酸的营养调控方法。
背景技术
ω-3脂肪酸是多不饱和脂肪酸(PUFA),在我们的饮食中主要以α-亚麻酸(ALA,C18:3n3)、二十碳五烯酸(EPA,C20:5n3)和二十二碳六烯酸(DHA,C22:6n3)的形式存在,ALA主要由植物油和坚果提供,而EPA和DHA主要由鱼类和海鲜提供。ω-3PUFA对人类健康是有益的,可帮助预防动脉粥样硬化、胰岛素抵抗、神经功能障碍和自身免疫性疾病的发生(Calder,2001年),且是“必需的”营养物质,因为人类无法合成它们。尽管ALA可以在人体中转化为EPA和DHA,但这种转化的程度是非常有限且效率极低。因此,必须通过饮食提供ω-3PUFA。
在人类饮食中,ω-3PUFA明显减少,ω-6/ω-3PUFA之比失衡。饮食中高剂量的饱和脂肪酸来源可能会对人体产生有害影响,例如食用高比例的ω-6脂肪酸则与健康问题的发生率较高有关,例如II型糖尿病、肥胖症和冠状动脉疾病。
越来越多的科学证据表明,降低ω-6与ω-3脂肪酸的比例对健康有益,包括改善的免疫功能以及心血管、骨骼和精神健康方面的益处。研究表明,尤其是ω-6与ω-3比率小于6:1的有利于人体健康益,当大于10:1时会导致健康问题的出现。因此,各种联邦机构和科学组织都越来越重视增加饮食中的ω-3不饱和脂肪酸。然而,开发富含健康的ω-3多不饱和脂肪酸(PUFA)的食品是一项重大挑战。
微藻是重要的水生资源,也是海洋生物链中重要的DHA初始来源,作为饲料组分可为动物提供维生素、必需氨基酸、多糖和长链ω-3多不饱和脂肪酸。微藻中的ω-3PUFA在瘤胃中的生物氢化较少(Cooper等,2004年)。为了提高动物产品中ω-3PUFA的含量,向动物日粮中添加海洋类植物,使其组织中的脂肪酸因饮食改变是一种有效的策略。
牦牛肉是青藏高原牧民的重要饮食来源,在不改变牧民饮食习惯的前提下,通过向牦牛日粮中添加富含ω-3PUFA的裂殖壶藻,能增加牦牛对ω-3PUFA的摄入,提高牦牛肉中的ω-3PUFA含量,可提高牦牛肉的营养价值和经济价值。
发明内容
本发明的目的是提供一种提高牦牛肉中ω-3多不饱和脂肪酸的营养调控方法。
为了实现上述发明目的,本发明提供了如下技术方案:
优选的,所述裂殖壶藻粉ω-3PUFA含量为20%-25%。
优选地,所述裂殖壶藻粉添加量为100-200g/天·头。
进一步所选的,裂殖壶藻粉的添加方式为添加到基础日粮中混匀。
更进一步地,在上述技术方案中,所述添加裂殖壶藻粉的日粮饲喂方式为早晚各饲喂一次。
优选地,在上述技术方案中,所述添加裂殖壶藻粉的日粮饲喂时间为宰前49天。
再进一步地,在上述技术方案中,所述的牦牛为屠宰前集中饲养育肥的牦牛。
还进一步地,在上述技术方案中,所述牦牛为青海地区海拔3000以上牦牛。
本申请中所涉及百分比,如无特别说明,为重量百分比。
本发明的方法具有如下有益效果:
1.本发明的方法可有效增加多不饱和脂肪酸、ω-3多不饱和脂肪酸的含量,降低ω-6与ω-3不饱和脂肪酸的比例,这对人体健康具有有益作用。
2.本发明的方法可提高牦牛肉的持水能力,改善牦牛肉品质。
3.采用本发明方法饲喂的牦牛,饲料成本降低,增加经济效益。
具体实施方式
下面结合具体实施例对本发明做进一步阐述,但本发明并不限于以下实施例。所述方法如无特殊说明,均为常规方法。
实施例
实施例1
选取健康的、体重相近的公牦牛18头,随机分为3组,分为对照组、处理组1和处理组2,分别饲喂不同水平的裂殖壶藻,具体如表1所示。

试验前对牛舍进行清扫和消毒处理,预试期主要对试验牛进行驱虫、打耳标及适应试验饲粮。采取单栏饲养,试验期间每日早晚各饲喂一次。按照处理将裂殖壶藻与基础日粮混匀后饲喂牦牛。饲喂时精料与粗料分开饲喂,先喂精料再喂粗料,自由饮水。燕麦草和苜蓿干草为粗料,其余为精料补充料,精粗比为4:6。基础日粮组成和营养水平见下表。
基础日粮营养成分
所有余料在第2天晨饲前收集,并记录每天牦牛的采食量,计算干物质采食量和料重比。试验期持续49天,于试验结束后称重。
在禁食禁水12h后,进行屠宰试验。电击后放血,采集牦牛的背最长肌样品,用于测定牦牛肉的持水能力指标和不饱和脂肪酸指标。

由表3可以看出,对照组、处理1组和处理2组之间的末重、平均日增重和干物质采食量无显著差异。与对照组相比,处理1组和处理2组的料重比显著降低,这说明裂殖壶藻可促进牦牛的饲料转化率。
持水能力由持水力和解冻损失表示。采用应变式控制式无侧限压力仪测定持水力。

表4结果显示,与对照组相比,处理1组和处理2组的持水力显著增加,解冻损失显著降低。处理1组与处理2组间的持水力和解冻损失无显著差异。这说明,添加裂殖壶藻可提高牦牛肉的持水能力。

ω-3多不饱和脂肪酸=C18:3n3(ALA)+C20:3n3+C20:5n3(EPA)+C22:6n3(DHA)同行数据肩标不同小写字母表示差异显著。
由表5可知,与对照组相比,处理1组和处理2组的多不饱和脂肪酸含量显著和极显著增加14.95%和29.49%,处理1组和处理2组的ω-3多不饱和脂肪酸含量分别显著和极显著增加1.89倍和2.34倍,处理1组和处理2组的ω-6/ω-3比值分别显著和极显著降低51.95%和59.09%。与处理1组相比,处理2组的多不饱和脂肪酸和ω-3多不饱和脂肪酸含量显著增加了12.65%和23.69%,ω-6/ω-3比值显著下降14.86%。这说明添加裂殖壶藻能显著改善脂肪酸的组成,促进ω-3多不饱和脂肪酸的沉积,且呈现剂量依赖效应。
因此,综合试验结果,日粮中添加裂殖壶藻100-200g/天·头,可促进牦牛的饲料转化率,增强牦牛肉的持水能力,提高牦牛肉中ω-3多不饱和脂肪酸的沉积,保证人类的健康。

1.一种提高牦牛肉中ω-3多不饱和脂肪酸的营养调控方法,其特征在于:在牦牛基础日粮中添加裂殖壶藻粉。
2.根据权利要求1所述的营养调控方法,其特征在于,所述的裂殖壶藻粉中ω-3PUFA含量为以重量计20%-25%。
3.根据权利要求1所述的营养调控方法,其特征在于,所述的牦牛为屠宰前集中饲养育肥的牦牛。
4.根据权利要求1任一项所述的营养调控方法,其特征在于,将裂殖壶藻粉添加到基础日粮中混匀。
5.根据权利要求1-5任一项所述的营养调控方法,其特征在于,所述裂殖壶藻粉的添加比例为100-200g/天·头。
6.根据权利要求1-5任一项所述的营养调控方法,其特征在于,所述裂殖壶藻粉的饲喂时期为屠宰前49天。
7.根据权利要求6或7任一项所述的营养调控方法,其特征在于,所述添加裂殖壶藻粉的基础日粮的饲喂方式为每天早晚各饲喂一次。
8.根据权利要求1-7任一项所述的营养调控方法,其特征在于,所述营养调控方法用于生活在青海地区海拔3000以上的牦牛。
9.根据权利要求8所述的应用,其特征在于,所述裂殖壶藻粉ω-3PUFA含量为20%-25%,所述裂殖壶藻粉的添加量为100-200g/天·头,所述裂殖壶藻粉的饲喂时期为屠宰前49天,饲喂方式为与日粮混匀后,早晚饲喂一次。
