Abstract
The invention relates to the technical field of cheese production, and discloses a method and a production line for producing processed cheese, wherein the production method comprises the following steps: s1, extruding cheese blocks into cheese slices; s2, cooling the cheese slices to be below 30 ℃; and S3, cutting the cooled cheese slices into strips or sections. The cheese block is extruded into cheese pieces, and then the cheese pieces can be rapidly cooled to a temperature suitable for cutting, so that the cheese pieces can rapidly enter a cutting and molding production process, and the production time of cheese products is remarkably shortened; and large internal ice crystals are not required to be formed due to long-time freezing, so that a good casein micelle network can be kept, and the cheese product is favorably ensured to have good stretchability.
Description
Technical Field
The invention relates to a cheese production technology, in particular to a method for producing processed cheese. In addition, the invention also relates to a processed cheese production line for implementing the processed cheese production method.
Background
Cheese, also called cheese or cheese, is one of the largest commercial dairy products in the world because it is rich in nutrients such as protein and calcium. Among them, mozzarella cheese, an important ingredient in foods such as pizza, is easily accepted by consumers due to its light flavor, and is increasingly demanded. Good stretchability is an important criterion for evaluating the quality of mozzarella cheese, and cheese products made using different production processes and systems vary widely in quality.
In the conventional art, cheese material is formed into cheese loaves having a relatively high temperature (e.g., 75 ℃) by melting, stirring, stretching, and the like. For storage, transport and consumption, these cheese blocks are further cut into suitable shapes, such as cheese sticks used in pizza cooking. Therefore, the cheese mass obtained in the previous production process needs to be frozen in a freezer, for example at-18 ℃ for 24 hours, in order to be sliced and shaped. In the process, the production period of the cheese is prolonged, the productivity is reduced, and the cheese forms larger internal ice crystals in the long-time freezing process, so that the casein micelle network is broken, the hydration and the stretchability of the cheese product are influenced, and the cheese product is not convenient to mechanically cut, so that the cheese products are different in size.
Disclosure of Invention
The invention aims to solve the problems of long production period and poor quality of cheese products in the prior art, and provides a method for producing processed cheese.
In order to achieve the above object, the present invention provides, in one aspect, a process for producing processed cheese, comprising: s1, extruding cheese blocks into cheese slices; s2, cooling the cheese slices to be below 30 ℃; and S3, cutting the cooled cheese slices into strips or sections.
Preferably, in step S1, the cheese pieces are cooled to 50-55℃ by passing a cooling medium into the nip rollers used to compress the cheese mass.
Preferably, the cooling medium is ice water.
Preferably, the cheese slice has a thickness of 2-8 mm.
Preferably, in step S2, the cheese pieces are snap frozen using a first liquid nitrogen snap freezer to below 30 ℃.
Preferably, in step S3, the cheese slices are cut into strips, and the strips are cut into sections.
Preferably, the cheese slices are cooled for no more than 1 hour in steps S1 and S2.

The invention provides a processed cheese production line, which comprises a roller type tablet press, a first liquid nitrogen instant freezer and a shred cutter which are sequentially arranged, wherein the roller type tablet press comprises a large compression roller and small compression rollers which are parallelly arranged at intervals on the upper side of the large compression roller so as to be capable of extruding cheese blocks into cheese pieces, the first liquid nitrogen instant freezer is arranged to be capable of quickly freezing and cooling the cheese pieces to be below 30 ℃, and the shred cutter is arranged to be capable of cutting the cooled cheese pieces into strips or sections.
Preferably, the processed cheese production line further comprises a second liquid nitrogen instant freezer for quick freezing and cooling the cheese cut into strips or sections to below-10 ℃.

The following detailed description of embodiments of the invention refers to the accompanying drawings. It should be understood that the detailed description and specific examples, while indicating the present invention, are given by way of illustration and explanation only, not limitation.
A process for producing processed cheese according to a preferred embodiment of the present invention includes: s1, extruding cheese blocks into cheese slices; s2, cooling the cheese slices to be below 30 ℃; and S3, cutting the cooled cheese slices into strips or sections. Therefore, the cheese block is extruded into the cheese piece, so that the cheese piece is conveniently and quickly cooled to the temperature suitable for cutting, the cheese piece can quickly enter the production process of cutting and modeling, and the production time of cheese products is obviously shortened; and large internal ice crystals are not required to be formed due to long-time freezing, so that a good casein micelle network can be kept, and the cheese product is favorably ensured to have good stretchability.
To facilitate a better understanding of the process for producing processed cheese provided by the present invention, a process line for producing processed cheese of the present invention that can be used to practice the process will first be described with reference to fig. 1 to 6.
As previously mentioned, the cheese material is formed into relatively high temperature cheese blocks by melting, blending, stretching, etc. processes, which blocks need to be further cut into appropriate shapes for storage and consumption. Therefore, in order to rapidly cool the cheese blocks to a temperature suitable for cutting, the stretched cheese blocks can be extruded into cheese sheets, so that the cooling efficiency is effectively improved.
A roller sheeter 10 for compressing cheese loaves is shown in fig. 1 and 2. The roller sheeter 10 comprises a large compression roller 12 and a small compression roller 11 arranged in parallel at a distance above the large compression roller 12, both of which can be driven in rotation about their own axis to continuously compress cheese mass into cheese pieces. The large and small rolls 12 and 11 described herein mean that the radial dimension of the small roll 11 is small relative to the radial dimension of the large roll 12, for example, the large roll 12 may be selected to have an outer diameter of 200cm, and the small roll 11 may have an outer diameter of 12cm, thereby not only facilitating the use of the large roll 12 to support the cheese mass from, for example, the distributor 50 and facilitate the pressing of the cheese mass, but also controlling the thickness of the cheese piece obtained by the pressing by adjusting the distance between the small roll 11 and the large roll 12. For this, a nip roller adjusting device 19 for adjusting the small nip roller 11 may be provided to be able to change the interval between the small nip roller 11 and the large nip roller 12. Wherein the thickness of the cheese slices obtained after compression can be 2-8mm, and the cheese slices with the thickness are easy to cool quickly and convenient for subsequent shredding and shaping.
The large pressure roller 12 and the small pressure roller 11 may be installed on a frame so as to be driven to rotate. In particular, the roller press 10 may have a frame base 13 placed on the ground and a gate frame 14 connected to the frame base 13. In this case, the large pressure roller 12 may be mounted on the frame base 13 through a bearing 15 and drivingly connected to a power device 18, such as a motor, so as to be capable of being driven to rotate about its axis. The large pressure roll 12 may be formed with an interlayer for introducing a refrigerant (e.g., ice water), and a refrigerant inlet 16a and a refrigerant outlet 16b for inputting and outputting the refrigerant, so that the cheese sheet can be cooled while being pressed by introducing a cooling medium into the large pressure roll 12. In other embodiments, an interlayer may be provided in the pocket roll 11, and the cheese pieces may be cooled by passing a cooling medium through the same.
The frame base 13 is provided with a portal frame 14 so that the small rolls 11 can be pivotally mounted above the large rolls 12 and can be adjusted in height by a roll adjustment device 19 to vary the thickness of the cheese sheet.
The surface of the press roll needs to be cleaned before use. For this reason, the outer surfaces of the large and small pressing rolls 12 and 11, etc. may be washed with clean water, and the generated sewage may be collected by the sewage tank 17 disposed under the large pressing roll 12, so as not to adversely affect the working environment during the cleaning process.
Figure 3 shows a first liquid nitrogen flash freezer 20 in a processed cheese production line according to a preferred embodiment of the present invention that can be used to rapidly cool cheese pieces to below 30 c. Therefore, the purpose of quick freezing and cooling can be achieved within 1 minute, so that the production process of cutting and shaping can be rapidly carried out, and large ice crystals cannot be generated in the cheese, so that a good casein micelle network is maintained. In other embodiments, the cheese slices obtained by pressing may be cooled by placing them in a freezer or the like. Compared with the mode of directly putting the cheese into a refrigeration house for freezing in the prior art, the production method can shorten the cooling time of the cheese slices in the extrusion and cooling steps to be not more than 1 hour.
Referring to fig. 4 and 5, a shredder 30 for cutting cheese slices in a processed cheese manufacturing line according to a preferred embodiment of the present invention includes a slitting device 31 and a segmenting device 32. Wherein the slitting device 31 can slit cheese pieces into strips and the slitting device 32 can slit the strips into sections for storage and consumption. Through the extrusion and quick-freezing cooling processes, the cutting adaptability of the cheese can be improved, and the prepared cheese product is uniform in size.
In particular, the knife for cutting the cheese is mounted on a frame 33 with adjustable legs 34 and constitutes the aforesaid slitting device 31 and the slitting device 32 at different height positions, so that the slitting device 32 is located below the slitting device 31. The adjustable legs 34 allow the height of the tool to be adjusted to a height position suitable for operation. A guide plate 35 may be disposed between the slitting device 31 and the cutting device 32 for guiding the cheese sticks cut by the slitting device 31 to fall to the cutting position of the cutting device 32.
Fig. 6 shows a second liquid nitrogen freezer 40 for freezing and cooling the cut cheese to-10 c or below (e.g., -20 c), which second liquid nitrogen freezer 40 may have the same principle and basic configuration as the first liquid nitrogen freezer 20 described above. The cheese needs to be lowered more in temperature while passing through the second liquid nitrogen freezer 40, and thus can be set to have a longer length than the first liquid nitrogen freezer 20.
The roller type tablet press 10, the first liquid nitrogen instant freezer 20, the filament cutter 30 and the second liquid nitrogen instant freezer 40 are used as main components of the processed cheese production line, so that the production time of cheese products can be remarkably shortened, and the prepared cheese products have good stretchability.
Referring to fig. 7, the processed cheese production process can be completed by the following steps by using the processed cheese production line:
s1, extruding cheese blocks into cheese pieces with the thickness of 2-8mm by using a roller type tablet press 10, and introducing a cooling medium into a large compression roller 12 simultaneously in the extruding process to cool the cheese pieces to 50-55 ℃;
s2, enabling the extruded cheese slices to pass through a first liquid nitrogen instant freezer 20 so as to enable the cheese slices to be rapidly cooled to be below 30 ℃;
s3, cutting the cheese slices into strips by using a shredder 30, and then cutting the cheese slices into sections;
and S4, enabling the cut section-shaped cheese to pass through a second liquid nitrogen instant freezer 40, so that the cheese is subjected to quick freezing and cooling to-20 ℃, and then storing.
By utilizing the production device and the production method of the preferred embodiment of the invention, the freezing time of the processed cheese can be shortened to about 30 minutes from 24 hours in the traditional technology, the whole processing process is shortened to about 100 minutes, the labor cost and the energy consumption of a refrigeration house are greatly saved, and the stretchability of the cheese product is effectively improved.
The preferred embodiments of the present invention have been described in detail above with reference to the accompanying drawings, but the present invention is not limited thereto. Within the scope of the technical idea of the invention, numerous simple modifications can be made to the technical solution of the invention, including combinations of the individual specific technical features in any suitable way. The invention is not described in detail in order to avoid unnecessary repetition. Such simple modifications and combinations should be considered within the scope of the present disclosure as well.
Claims (10)
1. A process for producing processed cheese comprising:
s1, extruding cheese blocks into cheese slices;
s2, cooling the cheese slices to be below 30 ℃;
and S3, cutting the cooled cheese slices into strips or sections.
2. The process for producing processed cheese of claim 1, wherein the cheese pieces are cooled to 50-55 ℃ by passing a cooling medium into a compression roller used to compress the cheese mass in step S1.
3. The process for producing processed cheese of claim 2, wherein the cooling medium is ice water.
4. A process for producing processed cheese according to claim 1, wherein the cheese slices have a thickness of 2-8 mm.
