Abstract
The invention relates to the technical field of processing of modified milk, in particular to children growth milk and a preparation method thereof; the children growth milk is prepared from raw materials including casein phosphopeptides and minerals, wherein the minerals are prepared from the following components in percentage by mass (0.65-0.85): (0.09-0.16): (0.04-0.065) calcium carbonate, ferrous gluconate and zinc gluconate; the mass ratio of the casein phosphopeptide to the mineral is (1.0-1.6): (0.78-1.075). The milk for children growth can supplement daily required calcium, ferrum and zinc for children, prevent dental caries, prevent obesity, enhance immunity, and assist brain development of children.
Description
Technical Field
The invention relates to the technical field of modified milk processing, in particular to children growth milk and a preparation method thereof, and the modified milk is particularly suitable for children in a growth and development period to drink.
Background
The calcium has physiological functions of promoting the growth and development of bones and teeth, the growth, development and maturation of brain cells, maintaining the normal functions of the cells, regulating the pH value of blood, balancing electrolytes and the like. Iron is an important component of hemoglobin, is one of essential elements for brain nerve development, participates in energy metabolism and hematopoiesis in the body, provides nutrients for brain cells and influences nerve conduction. Zinc is involved in the synthesis of various enzymes and proteins in vivo, is a key nutrient for the development of the central nervous system, and has the effects of improving the immunity of the organism, promoting the metabolism of vitamin A, improving the intelligence and the like. The childhood stage is the fastest bone development stage, the most critical bone development stage and the rapid intelligence development stage, and the proper mineral supplement in the diet is crucial to the maintenance of healthy growth and development of children.
The absorption and utilization degree of minerals by human bodies depends on the inherent content of mineral components in food, and is also closely related to factors such as personal physique, dietary structure and the like. Therefore, there is a need for a child growth milk that promotes mineral absorption to meet the nutritional needs of the child in the growth stage.
In view of this, the invention is particularly proposed.
Disclosure of Invention
The invention aims to provide the children growth milk which can supplement calcium, iron and zinc required by children every day, prevent decayed teeth, prevent obesity, enhance the immunity of organisms and assist the brain development of the children; the invention also aims to provide a preparation method of the children growth milk.
Specifically, the invention provides the following technical scheme:
the invention provides children growth milk which is prepared from raw materials comprising casein phosphopeptides and minerals, wherein the minerals are prepared from the following components in percentage by mass (0.65-0.85): (0.09-0.16): (0.04-0.065) calcium carbonate, ferrous gluconate and zinc gluconate;
the mass ratio of the casein phosphopeptide to the mineral is (1.0-1.6): (0.78-1.075).
The invention discovers that casein phosphopeptide and calcium carbonate are combined to form soluble salt in a specific ratio, and the detention time of calcium in vivo is prolonged, so that the bioavailability of calcium is effectively improved; meanwhile, the casein phosphopeptide interacts with ferrous gluconate and zinc gluconate according to a specific dosage ratio to promote the absorption of iron and zinc by the body.
Furthermore, the casein phosphopeptide is a bioactive peptide obtained by hydrolyzing cow milk casein serving as a raw material with pancreatin or trypsin.
In the invention, the casein phosphopeptide has the physiological functional activities of preventing decayed teeth, improving the immunity of organisms and inducing the apoptosis of tumor cells besides the function of promoting the absorption of mineral substances.
Preferably, the casein phosphopeptide is milk-derived casein phosphopeptide; the milk product can promote the absorption of the mineral substances by the body by adopting the compounding of the milk-derived casein phosphopeptide and the mineral substances.
Preferably, the raw materials also comprise raw milk, a sweetening agent, whey protein powder, prebiotics, a stabilizing agent, lecithin and lactoferrin.
Preferably, the protein content in the raw milk is more than or equal to 3.2g/100 g; the best results are obtained when the protein content of the raw milk is within the above range.
Preferably, the raw material system of the invention is compounded with a sweetening agent according to the mass ratio of (10-30): (10-30) xylitol and erythritol; the compound sweetening agent not only can endow children with better sweetness for growing up milk, but also can not generate adverse effect on the texture characteristics of a system and can not reduce the function of the milk; in addition, the compound sweetening agent can improve the flavor of milk and prevent the occurrence of obesity and decayed teeth of children.
Preferably, for the raw material system of the invention, the prebiotics compounded with the raw material system is fructo-oligosaccharide; besides providing sweet taste and increasing flavor, the product also has the functions of promoting intestinal probiotic proliferation, reducing blood lipid and cholesterol levels, preventing dental caries, improving immunity, promoting mineral absorption, etc.
Preferably, the stabilizer is one or more selected from microcrystalline cellulose, gellan gum, carrageenan and sodium carboxymethylcellulose.
Preferably, the invention provides the following raw material formula of the children growth milk, which specifically comprises the following components in parts by weight: 905-960 parts of raw milk, 10-30 parts of xylitol, 10-30 parts of erythritol, 10-20 parts of whey protein powder, 2-4 parts of fructo-oligosaccharide, 1.5-4 parts of a stabilizer, 1-2 parts of lecithin, 1.0-1.6 parts of casein phosphopeptide, 0.5-1 part of lactoferrin, 0.65-0.85 part of calcium carbonate, 0.09-0.16 part of ferrous gluconate and 0.04-0.065 part of zinc gluconate.
The children growth milk prepared by the raw material formula has the effect of promoting the body to absorb mineral substances, also has the effects of preventing decayed teeth, preventing obesity, enhancing the body immunity, assisting the brain development and the like, and meets the nutritional requirements of children in a growth period; in addition, the children growth milk has savory and mellow taste; the comprehensive performance of the milk product for the growth of children is excellent.
Preferably, the raw material system of the invention is compounded with the stabilizer in a mass ratio of (1-2): (0.5-0.6): (0.2-0.5): (0.1-0.3) microcrystalline cellulose, gellan gum, carrageenan and sodium carboxymethylcellulose; the stabilizer can realize good texture of milk for children growth, has good stability in normal storage and transportation processes, is not easy to separate out water and layer, avoids the problem of fat floating, and better ensures the taste of the product.
As a better technical scheme of the invention, the raw materials of the children growth milk comprise the following components in parts by weight: 930-935 parts of raw milk, 10-20 parts of xylitol, 20-30 parts of erythritol, 10-20 parts of whey protein powder, 2-4 parts of fructo-oligosaccharide, 1-2 parts of microcrystalline cellulose, 0.5-0.6 part of gellan gum, 0.2-0.5 part of carrageenan, 0.1-0.3 part of sodium carboxymethylcellulose, 1-2 parts of lecithin, 1.0-1.6 parts of casein phosphopeptide, 0.5-1 part of lactoferrin, 0.65-0.8 part of calcium carbonate, 0.09-0.16 part of ferrous gluconate and 0.04-0.065 part of zinc gluconate.
In the raw material formula, the lecithin not only has the nutrition function, but also has the effects of strengthening brain function, enhancing memory, improving learning efficiency, regulating organism metabolism and reducing cholesterol level; the lactoferrin not only provides nutrition, but also has physiological functions of enhancing the immunity of the organism, improving the bioavailability of iron, resisting virus, tumor and oxidation.
In conclusion, the raw material formula of the children growth milk provided by the invention takes xylitol and erythritol as sweetening agents, meets the requirements of children on taste, is added with specific mineral substances, prebiotics, lecithin and functional factors with bioactivity of lactoferrin, and is particularly added with casein phosphopeptides, so that the bioavailability of mineral elements is improved, and the milk has the functions of preventing decayed teeth, obesity and regulating the immunity of organisms while meeting the nutritional requirements of children on body development and intelligence development in the growth stage.
The invention also provides a preparation method of the children growth milk, which comprises the following steps:
(1) uniformly mixing xylitol, erythritol, whey protein powder, fructo-oligosaccharide, a stabilizer, lecithin, casein phosphopeptide, lactoferrin, calcium carbonate, ferrous gluconate and zinc gluconate to obtain a premix;
(2) mixing the raw milk and the premix, stirring until the raw milk and the premix are completely dissolved, degassing, homogenizing, pasteurizing and filling.
Preferably, the raw milk is preheated to 50-55 ℃.
Preferably, the homogenizing pressure is 15-20 MPa, and the temperature is 55-65 ℃; the homogenization is carried out under the conditions, which is beneficial to improving the stability of the product.
And/or the pasteurization is carried out for 15-30 s at the temperature of 72-85 ℃.
The invention has the beneficial effects that:
the invention provides the children growth milk capable of promoting mineral substance absorption, which has good texture characteristics and stability, is not easy to separate water and layer in the normal storage and transportation process, and avoids fat floating; meanwhile, the children growth milk is smooth in taste and free of granular sensation when being eaten, and can prevent decayed teeth, prevent obesity, enhance organism immunity and assist brain development of children on the basis of promoting the children organism to absorb mineral substances.
Detailed Description
The following examples are intended to illustrate the invention but are not intended to limit the scope of the invention.
The protein content of raw milk used in the following examples is not less than 3.2g/100g, and casein phosphopeptide is milk-derived casein phosphopeptide.
Example 1
The embodiment provides children growth milk which comprises the following raw materials:
930g of raw milk, 10g of xylitol, 30g of erythritol, 20g of whey protein powder, 3g of fructo-oligosaccharide, 1g of microcrystalline cellulose, 0.5g of gellan gum, 0.5g of carrageenan, 0.3g of sodium carboxymethylcellulose, 1.0g of lecithin, 1.0g of casein phosphopeptide, 1g of lactoferrin, 0.7g of calcium carbonate, 0.16g of ferrous gluconate and 0.065g of zinc gluconate.
The embodiment also provides a preparation method of the children growth milk, which comprises the following steps:
(1) uniformly mixing xylitol, erythritol, whey protein powder, fructo-oligosaccharide, microcrystalline cellulose, gellan gum, carrageenan, sodium carboxymethylcellulose, lecithin, casein phosphopeptide, lactoferrin, calcium carbonate, ferrous gluconate and zinc gluconate to obtain a premix;
(2) heating raw milk to 50 deg.C by plate heat exchange equipment, mixing with the premix, stirring to dissolve completely, degassing, homogenizing (15MPa, 60 deg.C), pasteurizing (85 deg.C, 15s), and packaging.
Example 2
The embodiment provides children growth milk which comprises the following raw materials:
raw milk 935g, xylitol 20g, erythritol 20g, whey protein powder 15g, fructo-oligosaccharide 4g, microcrystalline cellulose 2g, gellan gum 0.5g, carrageenan 0.3g, sodium carboxymethylcellulose 0.1g, lecithin 2g, casein phosphopeptide 1.5g, lactoferrin 0.5g, calcium carbonate 0.8g, ferrous gluconate 0.1g, and zinc gluconate 0.05 g.
The embodiment also provides a preparation method of the children growth milk, which comprises the following steps:
(1) uniformly mixing xylitol, erythritol, whey protein powder, fructo-oligosaccharide, microcrystalline cellulose, gellan gum, carrageenan, sodium carboxymethylcellulose, lecithin, casein phosphopeptide, lactoferrin, calcium carbonate, ferrous gluconate and zinc gluconate to obtain a premix;
(2) heating raw milk to 55 deg.C by plate heat exchange equipment, mixing with the premix, stirring to dissolve completely, degassing, homogenizing (20Mpa, 65 deg.C), pasteurizing (75 deg.C, 30s), and packaging.
Example 3
The embodiment provides children growth milk which comprises the following raw materials:
930g of raw milk, 20g of xylitol, 30g of erythritol, 10g of whey protein powder, 2g of fructo-oligosaccharide, 1.2g of microcrystalline cellulose, 0.6g of gellan gum, 0.2g of carrageenan, 0.1g of sodium carboxymethylcellulose, 1.5g of lecithin, 1.4g of casein phosphopeptide, 0.7g of lactoferrin, 0.65g of calcium carbonate, 0.15g of ferrous gluconate and 0.04g of zinc gluconate.
The embodiment also provides a preparation method of the children growth milk, which comprises the following steps:
(1) uniformly mixing xylitol, erythritol, whey protein powder, fructo-oligosaccharide, microcrystalline cellulose, gellan gum, carrageenan, sodium carboxymethylcellulose, lecithin, casein phosphopeptide, lactoferrin, calcium carbonate, ferrous gluconate and zinc gluconate to obtain a premix;
(2) heating raw milk to 50 deg.C by plate heat exchange equipment, mixing with the premix, stirring to dissolve completely, degassing, homogenizing (17MPa, 55 deg.C), pasteurizing (80 deg.C, 20s), and packaging.
Example 4
The embodiment provides children growth milk which comprises the following raw materials:
930g of raw milk, 15g of xylitol, 25g of erythritol, 17g of whey protein powder, 3.5g of fructo-oligosaccharide, 1.4g of microcrystalline cellulose, 0.6g of gellan gum, 0.4g of carrageenan, 0.2g of sodium carboxymethylcellulose, 1.8g of lecithin, 1.6g of casein phosphopeptide, 0.9g of lactoferrin, 0.75g of calcium carbonate, 0.09g of ferrous gluconate, and 0.06g of zinc gluconate.
The embodiment also provides a preparation method of the children growth milk, which comprises the following steps:
(1) uniformly mixing xylitol, erythritol, whey protein powder, fructo-oligosaccharide, microcrystalline cellulose, gellan gum, carrageenan, sodium carboxymethylcellulose, lecithin, casein phosphopeptide, lactoferrin, calcium carbonate, ferrous gluconate and zinc gluconate to obtain a premix;
(2) heating raw milk to 55 deg.C by plate heat exchange equipment, mixing with the premix, stirring to dissolve completely, degassing, homogenizing (16MPa, 60 deg.C), pasteurizing (85 deg.C, 20s), and packaging.
Comparative example 1:
this comparative example provides a child growth milk, differing from example 1 only in that: replacing casein phosphopeptide with vitamin D; wherein the addition amount of vitamin D is 10 mg.
Comparative example 2:
this comparative example provides a child growth milk, differing from example 1 only in that: the preparation raw materials do not contain casein phosphopeptide.
Test example 1:
in the experimental example, the efficacy of promoting mineral absorption was verified for the children growth milk prepared in example 1 and comparative examples 1 to 2, specifically as follows:
SD rats are fed with the mineral absorption promoting children growth milk prepared in example 1 and comparative examples 1-2, and the apparent absorption rates of the rats on calcium, iron and zinc and the contents of calcium, iron and zinc in serum are measured during normal diet and drinking water of the SD rats during feeding. The results are shown in tables 1 and 2;

As can be seen from table 1, compared to comparative example 2, example 1 can simultaneously promote the absorption of calcium, iron and zinc in SD rats, while comparative example 1 can only promote the absorption of calcium element.

As can be seen from Table 2, the serum calcium content of SD rats fed with the growth milk of children of example 1 and comparative example 1 was higher than that of SD rats fed with the growth milk of children of comparative example 2, and the serum iron and zinc contents of SD rats fed with the growth milk of children of example 1 were higher than those of SD rats fed with the growth milk of children of comparative example 1 and comparative example 2.
In conclusion, the children growth milk has better effect of promoting mineral absorption.
Test example 2:
in the present test example, sensory evaluation analysis was performed on the children's growing-up milk of examples 1 to 4, specifically as follows:
40 children (half of all the men and women) aged 8-16 are selected to perform sensory evaluation on the children growth milk of the embodiments 1-4, and specific evaluation indexes include flavor (whether the milk is strong and peculiar smell exists), taste (whether the milk is smooth and fine), sweetness (whether the sweetness is proper) and overall characteristics. The evaluation criteria are divided into three grades of like, general and dislike. The results are shown in Table 3;

As can be seen from Table 3, the children growth milk provided by the invention has the advantages that the flavor, the taste, the sweetness and the overall characteristics are more in line with the dietary preference of children, and the preference degree of children is higher.
Although the invention has been described in detail hereinabove by way of general description, specific embodiments and experiments, it will be apparent to those skilled in the art that many modifications and improvements can be made thereto based on the invention. Accordingly, such modifications and improvements are intended to be within the scope of the invention as claimed.
Claims (10)
1. The children growth milk is characterized by being prepared from raw materials comprising casein phosphopeptides and minerals, wherein the minerals are prepared from the following components in percentage by mass (0.65-0.85): (0.09-0.16): (0.04-0.065) calcium carbonate, ferrous gluconate and zinc gluconate;
the mass ratio of the casein phosphopeptide to the mineral is (1.0-1.6): (0.78-1.075).
2. The children's growing up milk of claim 1, wherein the casein phosphopeptide is a milk-derived casein phosphopeptide.
3. The children's growth milk according to claim 1 or 2, wherein the raw materials further comprise raw milk, a sweetener, whey protein powder, prebiotics, a stabilizer, lecithin and lactoferrin.
4. The children's growing up milk of claim 3, wherein the protein content in the raw milk is not less than 3.2g/100 g;
and/or the sweetener is prepared from the following components in percentage by mass (10-30): (10-30) xylitol and erythritol;
and/or the prebiotics are fructooligosaccharides;
and/or the stabilizer is one or more selected from microcrystalline cellulose, gellan gum, carrageenan and sodium carboxymethylcellulose.

The children growth milk according to claim 4, wherein the raw materials comprise the following components in parts by weight: 905-960 parts of raw milk, 10-30 parts of xylitol, 10-30 parts of erythritol, 10-20 parts of whey protein powder, 2-4 parts of fructo-oligosaccharide, 1.5-4 parts of a stabilizer, 1-2 parts of lecithin, 1.0-1.6 parts of casein phosphopeptide, 0.5-1 part of lactoferrin, 0.65-0.85 part of calcium carbonate, 0.09-0.16 part of ferrous gluconate and 0.04-0.065 part of zinc gluconate.
6. The children growth milk according to claim 5, wherein the stabilizer is prepared from (1-2) by mass: (0.5-0.6): (0.2-0.5): (0.1-0.3) microcrystalline cellulose, gellan gum, carrageenan and sodium carboxymethylcellulose.

The children growth milk according to claim 5 or 6, wherein the raw materials comprise the following components in parts by weight: 930-935 parts of raw milk, 10-20 parts of xylitol, 20-30 parts of erythritol, 10-20 parts of whey protein powder, 2-4 parts of fructo-oligosaccharide, 1-2 parts of microcrystalline cellulose, 0.5-0.6 part of gellan gum, 0.2-0.5 part of carrageenan, 0.1-0.3 part of sodium carboxymethylcellulose, 1-2 parts of lecithin, 1.0-1.6 parts of casein phosphopeptide, 0.5-1 part of lactoferrin, 0.65-0.8 part of calcium carbonate, 0.09-0.16 part of ferrous gluconate and 0.04-0.065 part of zinc gluconate.
8. The method for preparing children's growth milk according to any one of claims 1 to 7, comprising:
(1) uniformly mixing xylitol, erythritol, whey protein powder, fructo-oligosaccharide, a stabilizer, lecithin, casein phosphopeptide, lactoferrin, calcium carbonate, ferrous gluconate and zinc gluconate to obtain a premix;
(2) mixing the raw milk and the premix, stirring until the raw milk and the premix are completely dissolved, degassing, homogenizing, pasteurizing and filling.
9. The method according to claim 8, wherein the raw milk is preheated to 50-55 ℃.
10. The method according to claim 8 or 9, wherein the homogenizing pressure is 15 to 20MPa and the temperature is 55 to 65 ℃;
and/or the pasteurization is carried out for 15-30 s at the temperature of 72-85 ℃.
