Essentially the same as example 2 except that there is no ice water soaking step.
Example 4 comparative test
1. Sensory test
The samples of examples 1 to 3 and comparative examples 1 to 3 were placed in a crystallized white porcelain plate, and the results were shown in table 1, with visual observation, nasal smell, and hand-pinching in a bright natural light place.

As can be seen from Table 1: in the embodiments 1 to 3 of the invention, the regulator and the liquid medicine are used, and the step of soaking ice water is included, so that the sensory evaluation on the color, the tissue form and the smell of the small cuttlefish is superior to that of the comparative examples 1 to 4 which do not use the regulator and the liquid medicine and do not include the step of soaking ice water.
2. Weight gain test
The average weights of the small cuttlefish before and after processing in examples 1 to 3 and comparative examples 1 to 3 were respectively weighed, and the results are shown in table 2.

As can be seen from Table 2: example 2 is the most preferred example.
Compared with the example 2, on the basis of the same other conditions, the regulator is not used in the comparative example 1, and the average weight gain of the small cuttlefishes is reduced by 2.0 g; comparative example 2 has no liquid medicine, the average weight gain of the small cuttlefishes is reduced by 1.7g, and comparative example 3 does not comprise the step of soaking ice water, and the average weight gain of the small cuttlefishes is reduced by 1.2 g; comparative example 4 when the regulator, the liquid medicine and the ice water were used together, the increase in the average weight of the small cuttlefishes was reduced by 5.5 g.
Therefore, when the processing technology comprises the steps of using the regulator, the liquid medicine and soaking ice water, the average weight gain of the small cuttlefishes can be synergistically improved, the tissue form and the smell of the small cuttlefishes can be kept, and the color and luster can be improved.
Therefore, the step of using the regulator, the liquid medicine and the step of soaking ice water not only contributes to the water retention of the small cuttlefishes to a certain extent, but also plays a certain promoting role in brightening and refreshing effects.

Claims (10)
1. A processing method of small cuttlefishes is characterized by comprising the following steps:
s1: shaping: removing the skin, mouth, eyes and viscera of the small cuttlefish, cleaning, putting into a setting machine, adding a regulator, salt and ice water, and rotating in a clockwise or anticlockwise single direction for setting for 30-40 min;
s2: soaking the liquid medicine: emptying the shaped turbid ice water, washing with clean ice water until the flowing ice water becomes clear, and adding clean ice water with the weight 1-2 times that of the small cuttlefishes for later use; dissolving the liquid medicine in water, adding crushed ice for cooling, pouring the cooled liquid medicine into the small cuttlefishes, stirring to enable the liquid medicine to be uniformly dispersed, and then soaking for 10-12 hours; stirring once every 1 hour in the soaking process;
s3: bleaching water: emptying the soaked liquid medicine, adding clean ice water while stirring, continuing to add the ice water until the ice water overflows for 50-70 seconds after the ice water is full, then emptying the ice water, and carrying out water rinsing, wherein stirring is carried out in the water rinsing process, and the water rinsing time is 3-6 hours;
s4: soaking ice water: and after the rinsing is finished, adding clean ice water with the weight 1-2 times that of the small cuttlefishes, and soaking for 3-6 hours to obtain the black cuttlefish.
2. The method of processing a small cuttlefish as claimed in claim 1, wherein: in the step S1, the regulator comprises sodium carbonate, sodium bicarbonate, citric acid and citric acid, wherein the mass ratio of the sodium carbonate to the sodium bicarbonate to the citric acid is 3-5: 5-7: 1-3: 1-2.
3. The method for processing young cuttlefishes according to claim 1 or 2, characterized in that: the addition amount of the regulator is 2-4% of the weight of the small cuttlefish.
4. The method of processing a small cuttlefish as claimed in claim 1, wherein: in the step S1, the temperature is kept at 5-8 ℃ in the shaping process.

6. The method of processing a small cuttlefish as claimed in claim 1, wherein: in the step S1, the rotating speed of the rotary shaping is 20-30 r/min.
7. The method of processing a small cuttlefish as claimed in claim 1, wherein: in step S1, the amount of ice water added is equal to the weight of the baby cuttlefish.
8. The method of processing a small cuttlefish as claimed in claim 1, wherein: in the step S2, the liquid medicine comprises pyrophosphate, tripolyphosphate and hexametaphosphate, wherein the mass ratio of the pyrophosphate to the tripolyphosphate to the hexametaphosphate is 1-2: 2-3.
9. The method for processing a small cuttlefish according to claim 1 or 8, characterized in that: the addition amount of the liquid medicine is 1-2% of the weight of the small cuttlefish.
10. The method of processing a small cuttlefish as claimed in claim 1, wherein: in the step S2, crushed ice is added and cooled to 1-3 ℃.
