Comparative example 18
The same procedure as in example 2 was conducted except that the mass of the donkey-hide gelatin particles in the sheet-like donkey-hide gelatin was 95wt.%, and the thickness of the sheet-like donkey-hide gelatin was 0.6mm.
Comparative example 19
The same procedure as in example 2 was conducted except that the mass of the donkey-hide gelatin particles in the sheet-like donkey-hide gelatin was 95wt.%, and the thickness of the sheet-like donkey-hide gelatin was 0.7mm.
The donkey-hide gelatin products obtained in examples 2 to 7 and comparative examples 1 to 19 were tasted (the tasting was completed within 3min from the preparation of the donkey-hide gelatin products), and the donkey-hide gelatin products had 4 dimensions of crispness, tooth-sticking, swallowing discomfort and gel aroma layering, and the percentage ratios of the individual indices in the overall taste were 30%, 20% and 30%, respectively, and the number of tasters was 15. The taste results are shown in table 1.

The full score of the M value single item is 10 points; l1, L2, L3 and L4 are respectively rejection screening coefficients of crisp feeling, tooth sticking feeling, swallowing comfort feeling and glue aroma layering feeling, when M is less than 5, the corresponding L value =0, and when M is more than or equal to 5, the corresponding L value =1.
The sensory evaluation criteria were: crisp feeling: 1 to 3 are not preferred; 4 to 6 are good; 7 to 10 are excellent; tooth sticking feeling: 1-3 obviously sticking teeth; 4-6 slightly sticking teeth; 7-10 has no obvious tooth-sticking feeling; swallowing comfort: 1-3 are obviously uncomfortable; 4-6 slight discomfort; 7-10 of the composition has no obvious discomfort; glue aroma layering: 1-3 layers are poor; 4-6 layers are good; the sense of layering is excellent from 7 to 10.

As can be seen from the sensory evaluation of examples 2 to 7 and comparative examples 1 to 19, the donkey-hide gelatin product prepared by the invention has the advantages of excellent crisp feeling, no obvious teeth sticking, no obvious discomfort in swallowing comfort and excellent crisp and fragrant layering. In the comparative examples 1 to 16, when the mass ratio of part of the donkey-hide gelatin powder to the donkey-hide gelatin powder or the thickness of the donkey-hide gelatin is higher than the range provided by the invention, the crisp mouthfeel can be maintained, but the mouthfeel is hard, and the donkey-hide gelatin cannot be quickly dissolved when entering the oral cavity, so that teeth are stuck, the gum fragrance cannot be effectively released, and the donkey-hide gelatin has great granular sensation during swallowing to cause throat discomfort; the mass ratio of the donkey-hide gelatin powder to the donkey-hide gelatin granules or the thickness of the donkey-hide gelatin is lower than the range provided by the invention, the dissolution speed of the donkey-hide gelatin is too high, and the crisp chewing feeling cannot be provided after the donkey-hide gelatin is eaten. Therefore, the donkey-hide gelatin product with excellent crisp feeling, no obvious teeth sticking, no obvious discomfort in swallowing comfort and excellent crisp and fragrant layering feeling can be obtained by controlling the mass of donkey-hide gelatin granules to be 80-90 wt% in the sheet donkey-hide gelatin, controlling the thickness of sheet powder to be 0.4-0.6 mm and setting other parameters.

Claims (6)

1. The donkey-hide gelatin product is characterized by comprising the following components in parts by weight: 3 to 9 parts of flaky donkey-hide gelatin and 100 to 200 parts of yoghourt; the thickness of the flaky donkey-hide gelatin is 0.4 to 0.6mm; the bulk density of the flaky donkey-hide gelatin is 0.4 to 0.9g/ml;
the water content of the flaky donkey-hide gelatin is 2-5wt.%; the sheet donkey-hide gelatin comprises donkey-hide gelatin powder and donkey-hide gelatin granules; the particle size of the donkey-hide gelatin powder is more than 30 meshes; the particle size of the donkey-hide gelatin particle is 10-30 meshes;
the mass of the donkey-hide gelatin granules in the flaky donkey-hide gelatin accounts for 80-90wt% of the mass of the flaky donkey-hide gelatin;
the flaky donkey-hide gelatin and the yoghourt are independently packaged or integrally packaged in a separated mode;
the preparation method of the donkey-hide gelatin product comprises the following steps:
mixing the flaky donkey-hide gelatin and the yoghourt according to the proportion to obtain the donkey-hide gelatin product;
the preparation method of the flaky donkey-hide gelatin comprises the following steps:
(1) Mixing colla Corii Asini material with water, and dissolving to obtain colla Corii Asini solution; the mass ratio of the donkey-hide gelatin raw material to water is 1 to 2 to 3;
(2) Drying the donkey-hide gelatin liquid to obtain a honeycomb-shaped colloid;
(3) And crushing the honeycomb-shaped colloid to obtain the flaky donkey-hide gelatin.
