The fruit and vegetable maturity control device comprises a fruit and vegetable accommodating device with a fruit and vegetable accommodating chamber, an ethylene slow release module and a control module, wherein the control module is used for controlling the ethylene amount released by the ethylene slow release module to the fruit and vegetable accommodating chamber. The control module is provided with an image acquisition unit for acquiring information of fruits and vegetables placed in the fruit and vegetable containing chamber and a control unit for controlling the ethylene release amount of the ethylene slow release module according to the fruit and vegetable information acquired by the image acquisition unit.
