(4) high-pressure mixing and stirring: adding lactose and vitamin complex into the mixed aqueous solution, uniformly stirring in a stirrer, placing in a high-pressure reaction kettle, introducing carbon dioxide into the reaction kettle, boosting the pressure to 12MPa, and standing for 1.5h to obtain a mixed solution for later use;

(4) high-pressure mixing and stirring: adding lactose and vitamin complex into the mixed aqueous solution, uniformly stirring in a stirrer, placing in a high-pressure reaction kettle, introducing carbon dioxide into the reaction kettle, boosting the pressure to 16MPa, and standing for 2 hours to obtain a mixed solution for later use;
(5) concentration and freeze-drying: taking out the mixed solution, concentrating the mixed solution in vacuum to 1/8 of the original volume, and freeze-drying the mixed solution in a low-temperature environment to obtain a freeze-dried material for later use;

(4) high-pressure mixing and stirring: adding lactose and vitamin complex into the mixed aqueous solution, uniformly stirring in a stirrer, placing in a high-pressure reaction kettle, introducing carbon dioxide into the reaction kettle, boosting the pressure to 14MPa, and standing for 1.8h to obtain a mixed solution for later use;
(5) concentration and freeze-drying: taking out the mixed solution, concentrating in vacuum to 1/5-1/8 of the original volume, and freeze-drying in a low-temperature environment to obtain a freeze-dried material for later use;
(6) mixing and grinding: adding citric acid and citrus powder into the freeze-dried material, mixing, grinding in a grinder, sieving, weighing, and packaging to obtain the fixed beverage.

Example 4:
the solid beverages obtained in the above examples 1-3 and the common solid beverage of the control group were tested for their dissolution rate and presence or absence of precipitates at the water temperatures of 0 ℃, 10 ℃, 25 ℃, 45 ℃ and 80 ℃, and the brewing method was to take 25g of the solid beverage, add 200ml of clean water at the corresponding temperature, mix them and observe the dissolution by stirring clockwise with a spoon, and the results are shown in the following table:
the table shows that the solid beverage prepared by the invention has good solubility, is easy to brew in water with lower temperature, is not easy to precipitate, and has good mouthfeel.

(2) preparing micromolecule pectin: adjusting the pH of the mixed pectin solution to 2.5-3.5, rapidly stirring in a high-pressure environment for 1-2h, taking out, adjusting the pH to neutrality, and vacuum drying to obtain micromolecule pectin for later use;
(3) high-pressure micro-jet treatment: mixing the micromolecular pectin, the probiotic powder and the prebiotics, grinding in a grinding machine, adding deionized water, stirring uniformly, carrying out high-pressure micro-jet treatment, and circulating for 1-3 times to obtain a mixed aqueous solution for later use;
(4) high-pressure mixing and stirring: adding lactose and vitamin complex into the mixed water solution, stirring in a stirrer, placing in a high-pressure reaction kettle, introducing carbon dioxide into the reaction kettle, increasing the pressure to 12-16MPa, and standing for 1.5-2h to obtain a mixed solution for later use;
(5) concentration and freeze-drying: taking out the mixed solution, concentrating in vacuum to 1/5-1/8 of the original volume, and freeze-drying in a low-temperature environment to obtain a freeze-dried material for later use;
(6) mixing and grinding: adding citric acid and citrus powder into the freeze-dried material, mixing, grinding in a grinder, sieving, weighing, and packaging to obtain the fixed beverage.
2. The solid beverage of probiotics and prebiotics compounded with small molecule pectin according to claim 1, characterized in that: the addition amount of the pectinase in the step (1) is 0.2-0.3% of that of the conventional pectin.
