the preparation method adopts ultrahigh pressure secondary sterilization below 100 ℃, and the principle is that after the first ultrahigh pressure sterilization, residual spores germinate into cells within about 60min, and then the second sterilization is immediately carried out, so that microorganisms can be completely killed, the product is ensured to have higher biological safety, and the product can be stored for a long time without adding any preservative;

The technical solutions in the embodiments of the present invention will be clearly and completely described below with reference to the embodiments of the present invention, and it is obvious that the described embodiments are only a part of the embodiments of the present invention, and not all of the embodiments. All other embodiments, which can be derived by a person skilled in the art from the embodiments given herein without making any creative effort, shall fall within the protection scope of the present invention.
Example 1:
referring to fig. 1-6, the present embodiment is a method for preparing a preservative-free canned food comprising dry vegetables and braised meat, comprising the following steps:
step one, raw material selection and pretreatment: selecting streaky pork with skin, cutting into meat blocks with width of 10cm, rinsing with water, decocting in white water for 60min, and taking out;
step two, coloring liquid preparation: uniformly stirring 16 parts by weight of dark soy sauce, 2 parts by weight of maltose syrup and 2 parts by weight of honey;
step three, preparation of a canning liquid: putting 4 parts by weight of dry pickled vegetables, 3 parts by weight of salt, 0.4 part by weight of five spice powder and 0.2 part by weight of monosodium glutamate into 100 parts by weight of water, boiling and filtering to obtain filtrate, namely canning liquid;
step four, coloring and frying: uniformly coating a coloring liquid on the skin of the cooked meat block while the meat block is hot, and then putting the meat block into oil with the oil temperature of 160 ℃ for frying for 3 min;
step five, preparing the can base material: cutting the fried meat into meat slices with the thickness of 1cm, uniformly mixing 50 parts by weight of meat slices, 30 parts by weight of dried pickled vegetables and 40 parts by weight of canning liquid, and boiling for 20min to obtain can base materials;
step six, preparing the preservative-free canned dry vegetable braised meat: adding a can base material into a storage chamber 142 in a storage box of can production equipment, placing a plurality of bottle caps in a bottle cap storage cylinder 126 in a direction that the openings of the bottle caps face downwards, driving a conveying belt 103 to rotate through the operation of a conveyor motor 102, placing cans made of glass materials or stainless steel materials on the conveying belt 103, when the conveying belt 103 conveys the cans to the position right below a filling pipe 130, stopping the rotation of the conveying belt 103, starting a second clamping cylinder 134, extending movable rods of the two second clamping cylinders 134 to push two second arc-shaped plates 135 to approach, clamping the cans, extending a movable rod of a limiting cylinder 131 to push a limiting sleeve 133 to descend and be sleeved on the mouth of the cans, retracting the movable rod of a feeding cylinder 138 to move a pushing block 139 to move downwards below a feeding port 141, allowing the can base material to enter the feeding chamber 143 through the feeding port 141, extending the movable rod of the feeding cylinder 138 to push the pushing block 139 to move forwards to extrude the can base material into the filling pipe 130 from a feeding pipe 144 The can base material enters the can from the bottom end of the filling pipe 130, the can is limited to be conveyed forwards by the extension of the movable rod of the second positioning cylinder 124, the can is stopped at the position close to the bottle cap storage cylinder 126, the movable rod of the upper cap cylinder 129 is started to extend to push the push plate 127 to move forwards, the bottle cap at the lowest part of the bottle cap storage cylinder 126 is pushed out and falls on the bottle mouth of the can, the can is stopped at the position under the rotary cap 115 by the extension of the movable rod of the first positioning cylinder 122, the movable rod of the stretching cylinder 119 extends to push the movable plate 116 to descend by the stretching frame 120, the rotary cap 115 is covered on the bottle cap, the rotary cap motor 121 is started, the rotary cap motor 121 operates to drive the rotary cap 115 to rotate, and the bottle cap is screwed on the can, so that the preservative-free dry vegetable meat can is obtained;
step seven, sterilization treatment: and (3) sterilization: placing the preservative-free canned food of dried vegetable and braised meat in an ultrahigh pressure sterilizer, performing high pressure sterilization for 15min at the temperature of 95 ℃ and the pressure of 650MPa, releasing pressure, cooling to 60 ℃, keeping the temperature for 90min, then heating to 90 ℃, performing secondary sterilization at the pressure of 600MPa for 20min, releasing pressure, cooling, and packaging into boxes.
Example 2:
referring to fig. 1 to 6, the can manufacturing apparatus in this embodiment includes a conveyor, a cap-screwing sealing mechanism 104, a cap-filling mechanism 105, and a feeding mechanism 106, the conveyor is provided with the cap-screwing sealing mechanism 104 and the cap-filling mechanism 105 in a penetrating manner, the feeding mechanism 106 is provided on the cap-filling mechanism 105, the conveyor includes a conveyor frame 101, a conveyor motor 102, and a conveyor belt 103, the conveyor motor 102 is provided at one side end of the conveyor frame 101, the conveyor belt 103 is provided inside the conveyor frame 101, the conveyor motor 102 is in transmission connection with the conveyor belt 103 through a roller shaft, a plurality of fixing plates 107 are provided at two sides of the conveyor frame 101, a connecting rod 108 is movably provided at the top end of the fixing plate 107 in a penetrating manner, a positioning plate 110 is provided at one end of the connecting rod 108, and a limiting rod 109 is provided on a plurality of the positioning plates 110, the limiting rods 109 are distributed right above two sides of the conveying belt 103;

the method comprises the following steps: adding can base materials into a storage chamber 142 in a storage box, and placing a plurality of bottle caps with downward openings in a bottle cap storage cylinder 126;
step two: the conveyor motor 102 is started, the conveyor motor 102 operates to drive the conveyor belt 103 to rotate, the canned bottles made of glass or stainless steel are placed on the conveyor belt 103, when the conveyor belt 103 conveys the canned bottles to the position right below the filling pipe 130, the conveyor belt 103 stops rotating, the second clamping cylinders 134 are started, and the movable rods of the two second clamping cylinders 134 extend to push the two second arc-shaped plates 135 to approach to clamp the canned bottles;
step three: starting the limiting cylinder 131, enabling a movable rod of the limiting cylinder 131 to extend to push the limiting sleeve 133 to descend and be sleeved on the bottle mouth of the can bottle, starting the feeding cylinder 138, enabling the movable rod of the feeding cylinder 138 to contract, moving the pushing block 139 below the feeding port 141, enabling the can base stock to enter the feeding chamber 143 through the feeding port 141, enabling the movable rod of the feeding cylinder 138 to extend to push the pushing block 139 to move forwards to extrude the can base stock into the filling pipe 130 from the feeding pipe 144, and enabling the can base stock to enter the can bottle from the bottom end of the filling pipe 130;
step four: starting the second positioning cylinder 124, wherein the movable rod of the second positioning cylinder 124 extends to limit the can bottle to be conveyed forwards and stays near the bottle cap storage cylinder 126, and when the upper cap cylinder 129 is started, the movable rod of the upper cap cylinder 129 extends to push the push plate 127 to move forwards to push out the bottle cap at the lowest part of the bottle cap storage cylinder 126 and fall onto the bottle mouth of the can bottle;
step five: and starting the first positioning cylinder 122, enabling the movable rod of the first positioning cylinder 122 to extend to enable the can to stay under the rotary cover 115, starting the stretching cylinder 119, enabling the movable rod of the stretching cylinder 119 to extend to push the movable plate 116 to descend through the stretching frame 120, enabling the rotary cover 115 to cover the can cover, starting the cap screwing motor 121, enabling the rotary cover 121 to operate to drive the rotary cover 115 to rotate, and screwing the can cover on the can to obtain the preservative-free canned dry vegetable braised meat.

Claims (5)

1. A preparation method of a preservative-free canned food containing dried vegetables and braised meat is characterized by comprising the following steps:
step one, raw material selection and pretreatment: selecting streaky pork with skin, cutting into pieces with width of 8-10cm, rinsing with water, decocting in white water for 50-70min, and taking out;
step two, coloring liquid preparation: uniformly stirring 12-16 parts by weight of dark soy sauce, 1-2 parts by weight of malt syrup and 1-2 parts by weight of honey;
step three, preparation of a canning liquid: putting 2-4 parts by weight of dry pickled vegetables, 2-3 parts by weight of salt, 0.2-0.4 part by weight of five spice powder, 0.1-0.2 part by weight of monosodium glutamate and 80-100 parts by weight of water, boiling and filtering to obtain filtrate, namely canning liquid;
step four, coloring and frying: uniformly coating a coloring liquid on the skin of the cooked meat block while the meat block is hot, and then putting the meat block into oil with the oil temperature of 140-;
step five, preparing the can base material: cutting the fried meat into meat slices with thickness of 1cm, mixing 40-50 weight parts of meat slices, 20-30 weight parts of dried pickled vegetables and 30-40 weight parts of canning liquid uniformly, and boiling for 10-20min to obtain can base material;
step six, preparing the preservative-free canned dry vegetable braised meat: adding a can base material into a material storage chamber (142) in a material storage box of can production equipment, placing a plurality of bottle caps in a bottle cap storage cylinder (126) in a direction that openings of the bottle caps face downwards, driving a conveying belt (103) to rotate through the operation of a conveyor motor (102), placing cans made of glass materials or stainless steel materials on the conveying belt (103), when the conveying belt (103) conveys the cans to the position right below a filling pipe (130), stopping the rotation of the conveying belt (103), starting a second clamping cylinder (134), extending movable rods of the two second clamping cylinders (134) to push two second arc-shaped plates (135) to approach, clamping the cans, extending the movable rods of a limiting cylinder (131) to push a limiting sleeve (133) to descend and be sleeved on the bottle openings of the cans, retracting the movable rods of a feeding cylinder (138), and moving a pushing block (139) below a feeding port (141), can base materials enter a feeding chamber (143) through a feeding hole (141), a movable rod of a feeding cylinder (138) extends to push a pushing block (139) to move forwards to extrude the can base materials into a filling pipe (130) from a feeding pipe (144), the can base materials enter a can from the bottom end of the filling pipe (130), the can base materials are limited by the extension of the movable rod of a second positioning cylinder (124) to be conveyed forwards and are stopped at the position close to a bottle cap storage cylinder (126), when an upper cover cylinder (129) is started, the movable rod of the upper cover cylinder (129) extends to push a pushing plate (127) to move forwards to push out a bottle cap at the lowest part of the bottle cap storage cylinder (126) and fall onto the bottle mouth of the can, the can base materials are stopped under a rotary cover (115) through the extension of the movable rod of a first positioning cylinder (122), and the movable rod of a stretching cylinder (119) extends to push a moving plate (116) to descend through a stretching frame (120), covering a rotary cover (115) on the bottle cap, starting a cover rotating motor (121), rotating the cover rotating motor (121) to drive the rotary cover (115) to rotate, and rotating the bottle cap on the can bottle to obtain the preservative-free canned dry vegetable braised meat;
step seven, sterilization treatment: and (3) sterilization: the preservative-free canned dried vegetable braised meat is placed in an ultrahigh pressure sterilization machine, high-pressure sterilization is carried out for 10-15min under the conditions that the temperature is 85-95 ℃ and the pressure is 450-650MPa, pressure is relieved, cooling is carried out to 50-60 ℃, heat preservation is carried out for 60-90min, then heating is carried out to 80-90 ℃, secondary sterilization is carried out under the conditions that the pressure is 500-600MPa, the time is 12-20min, pressure is relieved, cooling is carried out, and then the canned dried vegetable braised meat is packaged into a box.

The preparation method of the preservative-free canned dried vegetable and braised meat according to claim 1, wherein the production equipment of the canned food comprises a conveyor, a cap screwing and sealing mechanism (104), a cap filling and sealing mechanism (105) and a feeding mechanism (106), the cap screwing and sealing mechanism (104) and the cap filling and sealing mechanism (105) are installed on the conveyor in a penetrating way, the feeding mechanism (106) is installed on the cap filling and sealing mechanism (105), the conveyor comprises a conveyor frame (101), a conveyor motor (102) and a conveying belt (103), the conveyor motor (102) is installed at one side end of the conveyor frame (101), the conveying belt (103) is installed inside the conveyor frame (101), the conveyor motor (102) is in transmission connection with the conveying belt (103) through a roller shaft, a plurality of fixing plates (107) are installed on two sides of the conveyor frame (101), the top activity of fixed plate (107) is run through and is installed connecting rod (108), locating plate (110), a plurality of are installed to the one end of connecting rod (108) install gag lever post (109), a plurality of on locating plate (110) gag lever post (109) distribute in conveyer belt (103) both sides directly over.
