Abstract
The invention discloses a food-grade white pigment with high safety, which comprises calcium carbonate, plant protein and cellulose, wherein the calcium carbonate is used as a substrate, the plant protein is used as a first wrapping layer, and the cellulose is used as a second wrapping layer. The invention also provides a preparation method of the food-grade white pigment with higher safety. According to the invention, the vegetable protein is used for wrapping the calcium carbonate particles, so that the dispersibility of the calcium carbonate in food is greatly improved; the calcium carbonate particles are wrapped by cellulose, so that the calcium carbonate does not react with gastric acid in the stomach to achieve the same property of titanium dioxide.

A preparation method of food-grade white pigment with high safety comprises the following steps:
(1) taking plant protein, cellulose and calcium carbonate, wherein the weight ratio of the plant protein to the cellulose to the calcium carbonate is (5-25): 1-10): 100;
(2) adding water into plant protein and cellulose respectively, boiling until swelling, respectively obtaining a plant protein solution and a cellulose solution, adding calcium carbonate into the plant protein solution, fully and uniformly stirring to obtain a premixed solution, drying the premixed solution, and crushing to obtain a premix;
(3) and adding the premix into the cellulose solution, uniformly stirring again to obtain a mixed solution, drying the mixed solution, and crushing to obtain a finished product.
Further, the drying in the steps (2) and (3) is drying under reduced pressure. The temperature during drying can be reduced, and organic matters in the finished product are prevented from being carbonized.
