The invention discloses a food-grade white pigment with high safety, which comprises calcium carbonate, plant protein and cellulose, wherein the calcium carbonate is used as a substrate, the plant protein is used as a first wrapping layer, and the cellulose is used as a second wrapping layer. The invention also provides a preparation method of the food-grade white pigment with higher safety. According to the invention, the vegetable protein is used for wrapping the calcium carbonate particles, so that the dispersibility of the calcium carbonate in food is greatly improved; the calcium carbonate particles are wrapped by cellulose, so that the calcium carbonate does not react with gastric acid in the stomach to achieve the same property of titanium dioxide.

Food-grade titanium dioxide (also called white pigment) is mainly used as a coloring agent, a whitening agent and a filling agent of food, has high safety and no toxic or side effect through toxicological evaluation, but titanium dioxide with the grain diameter less than 100nm has the risk of carcinogenesis, and is listed as two types of carcinogenic substances internationally, so that the titanium dioxide is rarely used or not used in food factories; at present, various countries around the world are working on the substitute of titanium dioxide.

A preparation method of food-grade white pigment with high safety comprises the following steps:
(1) taking plant protein, cellulose and calcium carbonate, wherein the weight ratio of the plant protein to the cellulose to the calcium carbonate is (5-25): 1-10): 100;
(2) adding water into plant protein and cellulose respectively, boiling until swelling, respectively obtaining a plant protein solution and a cellulose solution, adding calcium carbonate into the plant protein solution, fully and uniformly stirring to obtain a premixed solution, drying the premixed solution, and crushing to obtain a premix;

Further, the drying in the steps (2) and (3) is drying under reduced pressure. The temperature during drying can be reduced, and organic matters in the finished product are prevented from being carbonized.
Further, the pulverization method in the steps (2) and (3) is mechanical pulverization and then airflow pulverization. The particle size is smaller and the dispersibility is better after the jet milling.

The plant protein is used as a first wrapping layer, the plant protein glue is obtained from a plurality of plant essences, has certain elasticity and tensile force, namely, is delicate and has high viscosity across the interface, and the brittleness of a film layer can be improved after the cellulose is added into the plant protein glue, so that the film body is neutralized, and has hardness and toughness. 5. The food grade white pigment according to claim 1, wherein the vegetable protein is one or a mixture of rice protein and wheat protein.
6. A method for preparing food-grade white pigment with high safety is characterized by comprising the following steps:
(1) taking plant protein, cellulose and calcium carbonate, wherein the weight ratio of the plant protein to the cellulose to the calcium carbonate is (5-25): 1-10): 100;
(2) adding water into plant protein and cellulose respectively, boiling until swelling, respectively obtaining a plant protein solution and a cellulose solution, adding calcium carbonate into the plant protein solution, fully and uniformly stirring to obtain a premixed solution, drying the premixed solution, and crushing to obtain a premix;
