Claims (8)
1. A preparation method of special dendrobium officinale ultra-fine powder for meal replacement powder is characterized by comprising the following steps:
(1) preparing raw materials: selecting fresh dendrobium officinale, cleaning, placing in a drying box, and drying at constant temperature until the water content is 22% -25% for later use;
(2) crushing raw materials: grinding and crushing the dried raw materials in a grinder to obtain grinding slurry for later use;
(3) slurry enzymolysis: adding compound protease and pectinase into the ground slurry, mixing and stirring uniformly, and performing enzyme treatment for 5-8h to obtain enzymatic hydrolysis slurry for later use;
(4) and (3) heat preservation fermentation: adding yeast into the enzymolysis slurry, stirring, and fermenting in 30 deg.C water bath environment for 6-8 hr to obtain fermentation slurry;
(5) curing the slurry: placing the fermented slurry in a high-pressure reaction kettle, and curing at high temperature and high pressure to obtain cured slurry for later use;
(6) freeze-drying and crushing: freeze-drying the cured slurry in a low-temperature environment, taking out, grinding, crushing and sieving with a 120-mesh sieve to obtain freeze-dried powder for later use;
(7) breaking the wall of an electric field: adding deionized water into the freeze-dried powder, mixing, homogenizing in an ultrasonic homogenizer, taking out, placing in a high-voltage pulse electric field, and breaking the wall of the electric field to obtain wall-broken slurry for later use;
(8) drying and crushing: drying the wall-broken slurry at a constant temperature of 40 ℃, and then placing the dried wall-broken slurry into an ultrafine pulverizer to pulverize to obtain ultrafine powder.
2. The preparation method of the dendrobium officinale ultra-fine powder special for meal replacement powder according to claim 1, which is characterized by comprising the following steps: the temperature for constant temperature drying in the step (1) is 60-65 ℃.

The preparation method of the dendrobium officinale ultra-fine powder special for meal replacement powder according to claim 1, which is characterized by comprising the following steps: in the step (7), the liquid-material ratio of the mixture of the freeze-dried powder and the deionized water is 1: 1, the power of ultrasonic homogenization is 320W, the frequency is 25KHz, and the homogenization time is 5 min.
