Description
Technical Field
The present invention relates to a method for prolonging the preservation time of quail eggs in summer.
Background
The information in this background section is disclosed only to enhance an understanding of the general background of the disclosure and is not necessarily to be construed as an admission or any form of suggestion that this information forms the prior art that is already known to a person of ordinary skill in the art.
Quail eggs are common edible eggs, have a large proportion of edible parts, are rich in nutrients such as protein, cephalin, lecithin, lysine, cystine, vitamin A, vitamin B, iron, phosphorus, calcium, selenium and the like, and contain 13 g of protein and 11 g of fat per hundred g of edible parts. The quail eggs are complete in amino acid types, rich in content, contain various phospholipids and very high in nutritive value, so that the quail eggs are a good choice for various weak patients, postoperative rehabilitation people, children to grow and develop and pregnant women to nourish bodies. However, the delay in the storage and transportation of eggs has become a factor limiting the development of eggs, and as the storage time increases, the moisture in the eggs gradually evaporates, the air chambers increase, the quality of the eggs deteriorates, and particularly, the quail eggs are easily deteriorated by the high temperature in summer.
Disclosure of Invention
Aiming at the background technology, the method for prolonging the preservation time of the quail eggs in summer is provided, and the method can better prolong the preservation time of the quail eggs.
Specifically, the following technical scheme is adopted in the disclosure:
the present disclosure provides a method for prolonging the preservation time of quail eggs in summer, which comprises the following steps:
(1) collecting quail eggs: collecting quail eggs by adopting manual or automatic egg collecting equipment;
(2) temporarily placing the collected quail eggs into a refrigerator of a farm, wherein the temperature of the refrigerator is set to be 20-25 ℃, and reducing the temperature of the quail eggs to be 25 ℃ or below;
(3) transferring the refrigerated quail eggs to a refrigerator car for transportation, wherein the temperature of the refrigerator car is set to be 15-20 ℃, so that the temperature of the quail eggs is reduced to be 20 ℃ or below;
(4) processing and packaging: at least comprises the steps of washing and drying; setting the temperature to be 15-20 ℃;
(5) pre-cooling the packaged quail eggs, wherein the pre-cooling temperature is set to be 10-15 ℃;
(6) and (4) transporting the precooled quail eggs to a destination by adopting a refrigerator truck, wherein the temperature of the refrigerator truck is set to be 4-8 ℃.
In the step (1), even if cold air equipment is arranged in the breeding room, the temperature in the breeding room is 25 ℃ or above due to high temperature in summer, and the quail eggs are gathered together, so that the local temperature is too high, the respiration effect is strong, and the subsequent fresh-keeping transportation treatment is not facilitated; therefore, after the quail eggs are collected, the residence time on site is not more than half an hour.
In the step (2), in order to collect a certain amount of quail eggs, the collected quail eggs are transported to a refrigerator of a farm for temporary storage, and the temporary storage time is 0.5-1 h, so that the temperature of the quail eggs is reduced to 25 ℃ or below, the respiration of the quail eggs is reduced, and the preservation time is prolonged.
And (3) transporting the collected quail eggs to a processing center, and transporting the quail eggs in the middle for 1-3 h to reduce the temperature of the quail eggs to 20 ℃ or below.
In the step (4), the temperature of the processing center is set to be 15-20 ℃, the processing temperature has great influence on the freshness of the quail eggs, and the lower temperature is favorable for prolonging the preservation time of the quail eggs. The processing time is controlled to be 3-4 h.
Preferably, the cleaning preservative is self-made by the inventor, and the quail egg cleaning preservative is prepared from the following raw materials in percentage by mass:
1-3% of nano eggshell powder, 5-10% of vegetable oil, 0.1-0.5% of sophorolipid, 0.01-0.05% of rubber for roller mill and the balance of water. The cleaning and fresh-keeping agent disclosed by the invention has dual functions of cleaning and fresh keeping, and is very suitable for cleaning and fresh keeping of the quail eggs with thinner eggshells.
The preparation method of the quail egg cleaning and fresh-keeping agent comprises the following steps:
dispersing the nano eggshell powder into the vegetable oil, stirring, and uniformly dispersing to form a suspension;
dispersing sophorolipid and welan gum into water, and stirring uniformly to form a mixed solution;
and mixing the suspension and the mixed solution, and stirring continuously until the suspension and the mixed solution are uniformly dispersed to form stable emulsion.
Preferably, the cleaning method comprises the following steps:
1) soaking the quail eggs in clear water to wash floating dust on the quail eggs and dirt which is easy to wash off;
2) placing the soaked quail eggs in a quail egg cleaning preservative for standing for 10-30 min, then cleaning for 2-15 min (preferably 5min) by adopting ultrasonic waves, wherein the power of ultrasonic wave radiation is 100-500W, the frequency range is 25 KHz-40 KHz, and cleaning the dirt adhered to the quail eggs;
3) after ultrasonic cleaning, the quail eggs are settled and separated.
In the step (5), the precooling time is controlled within 1 h.
Compared with the related technology known by the inventor, one technical scheme of the present disclosure has the following beneficial effects:
this openly sets up cooling gradient for the respiratory of quail egg has the gradient to slow down, can also make the inside moisture loss of quail egg have the gradient to slow down, and is minimum to the destructiveness of the inside nutrition structure of quail egg like this, has kept the new freshness and the high quality of quail egg as far as possible. Improper cooling steps can result in the degradation of quail egg quality. The method can ensure that the quail eggs are packaged and delivered within 10 hours.
The preservation time of the quail eggs obtained by the method is prolonged by 10-15 days compared with that of the conventional method, and the storage and transportation process is very energy-saving. The method is suitable for small quail farms without processing plants.
Aiming at the characteristics that the eggshells of quail eggs are thin and easy to break, the invention discloses a mild and environment-friendly cleaning and fresh-keeping agent and a cleaning and fresh-keeping method, which have double functions of cleaning and fresh keeping, have excellent cleaning and fresh-keeping effects and can be repeatedly used.
