Abstract
The invention discloses a preparation method of health-care edible oil developed and produced by adopting walnut kernels, which comprises the following steps: s1, preprocessing; s2, drying and roasting; s3, squeezing and filtering; s4, walnut cake processing: a. crushing; b. rolling a blank; c. leaching the solvent at low temperature; d. crushing; s5, walnut crude oil treatment: a. deacidifying; b. degumming; c. drying and decoloring; d. vacuum deodorization; d. winterization; f. mixing and filling. Has the advantages that: when the walnut oil is produced, after the squeezed walnut cake meal is leached at low temperature by the ethanol solvent, oil in the walnut can be fully extracted, so that full oil extraction is realized, meanwhile, the walnut cake meal after the oil is fully extracted can be ground into walnut powder for recycling, and full utilization of the walnut is realized.
Description
Technical Field
The invention relates to the technical field of walnut oil production, in particular to a preparation method of health-care edible oil developed and produced by adopting walnut kernels.
Background
The walnut has rich nutritive value and is reputed by 'Wansui', 'Changshou' and 'health preserving treasure'. 86% of fat in walnut is unsaturated fatty acid, walnut is rich in copper, magnesium, potassium, vitamin B6, folic acid and vitamin B1, and also contains fiber, phosphorus, nicotinic acid, iron, vitamin B2 and pantothenic acid. Every 50 g of walnut contains 3.6% of water and 7.2 g of protein, 31 g of fat and 9.2 g of carbohydrate.
At present, after oil is extracted from walnuts, walnut cake meal is generally sold at low price as feed after oil is extracted, but the walnut is high in nutritive value, and during oil extraction, a small part of nutritional ingredients in the walnuts are extruded along with oil, but a large amount of nutritional cost is still stored in the walnut kernels, so that the walnuts cannot be fully utilized.
Disclosure of Invention
The invention aims to solve the problems and provide a preparation method of health-care edible oil developed and produced by adopting walnut kernels.
The invention realizes the purpose through the following technical scheme:
a preparation method of health edible oil developed and produced by adopting walnut kernels comprises the following steps:
s1, preprocessing, namely selecting dry fresh walnut kernels without diseases, insect pests and mildew, and peeling by an alkaline method;
s2, drying and baking, wherein the peeled walnut kernels are sent to an electric heating constant-temperature oven to be dried at the temperature of about 80 ℃, and then sent to a baking pan to be fried at the temperature of 130 ℃ until 80% of the walnut kernels are fried;
s3, squeezing and filtering, wherein the roasted walnut kernels are uniformly and continuously fed into a squeezer, walnut oil is squeezed out under the action of pressure, the rotating speed of a screw shaft is about 10r/min, and the squeezed crude oil is filtered by an oil filter to remove solid impurities in the crude oil to obtain clean crude oil;
s4, walnut cake processing:
a. crushing, namely putting the squeezed walnut cake into a crusher for crushing;
b. blank rolling, namely pouring the crushed walnut cake particles into a blank rolling machine for pressing treatment;
c. leaching the solvent at low temperature, namely putting the rolled walnut cake into a leaching tank for low-temperature leaching operation, wherein the solvent is ethanol, filtering the walnut cake after the leaching operation is finished, and performing evaporation extraction operation on the filtered walnut cake and walnut crude oil to obtain desolventized walnut cake and walnut crude oil, wherein the walnut crude oil is poured into the walnut crude oil squeezed in the step S3;
d. crushing, namely pouring the desolventized walnut cakes into a crusher to be crushed into fine powder to obtain walnut powder, and storing for later use;
s5, walnut crude oil treatment:
a. deacidifying: deacidifying by using alkali refining, wherein the alkali adding amount is the sum of the theoretical alkali using amount and the excess alkali amount, the concentration of alkali liquor is about 11 percent, the initial temperature of the alkali refining is 40 ℃, the stirring speed is 60r/min during the alkali adding, the stirring speed is reduced when oil soap is separated, the oil temperature is increased to 60-65 ℃, and then, the centrifugal treatment is carried out at 5000r/min, thus obtaining deacidified oil;
